  • 12 large mushrooms, cleaned with stems removed
  • 1/2 cup of cream cheese, softened
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • Salt and pepper to taste

We’ve all heard of avocado toast, but we’re here to introduce you to the wonder of mushroom toast. Super easy, just (if not more) as flavorful, and ideal for any time of day? Yes, please!

Ingredients:

  • 1 pound of mushrooms of your choice
  • 4 slices of bread (sourdough/ciabatta)
  • 1 cup cream cheese
  • 3-4 garlic cloves, crushed
  • 1 teaspoon chili flakes
  • 1 teaspoon dried oregano
  • 1 handful parsley, chopped
  • 2 tablespoons butter
  • 1-2 tablespoons olive oil
  • 1 lemon
  • Salt and pepper

Instructions:

  1. Heat a large frying pan over high heat and add the olive oil. 
  2. Fry the mushrooms in batches, until well-browned all over. 
  3. Add all the mushrooms back into the pan with their resting juices and add the garlic, herbs, and chilli flakes. Cook for 1-2 minutes. 
  4. While the mushrooms are cooking, toast the bread. 
  5. Add the butter and juice of half a lemon into the mushrooms, and stir well while the butter is melting. Once creamy, remove the pan from the heat and season to taste. 
  6. Spread the cream cheese on the toast and top with the mushrooms. Squeeze some lemon to taste before serving.

Ingredients:

  • 2 cups dried orzo pasta
  • 12 oz sliced mushrooms
  • 1/3 cup grated parmesan cheese
  • 3 tablespoons butter
  • 3/4 cup chopped shallots or onion
  • 1/2 cup dry sherry
  • chopped parsley
  • 3 cups chicken broth
  • salt

Instructions:

  1. Get a frying pan and set the stove to high heat. Add 1 tablespoon butter and wait for it to melt.
  2. Next, add the sliced mushrooms and 3/4 cup chopped shallots or onion.
  3. Wait for the ingredients to cook for 9 to 12 minutes, while also mixing them several times.
  4. Lower the heat to medium and include 2 cups dried orzo pasta, 2 tablespoons butter and cook for 2 minutes. Mix the ingredients several times.
  5. Pour 3 cups chicken broth and add 1/2 cup dry sherry.
  6. Wait for the mixture to start boiling, and lower the heat. Let the mushroom orzo simmer for 9 to 12 minutes until the liquid is gone.
  7. Finally, include the 1/3 cup grated parmesan, pepper and salt. Serve the orzo right away, topped with parmesan and chopped parsley.

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, olive oil, salt, and pepper. Mix until well combined.
  3. Take each mushroom cap and spoon a generous amount of the stuffing mixture into the cavity, pressing gently to pack it in.
  4. Place the stuffed mushrooms on the prepared baking sheet, spacing them apart. If desired, sprinkle additional grated Parmesan cheese over the tops of the stuffed mushrooms for extra flavor.
  5. Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly. Remove the stuffed mushrooms from the oven and let them cool slightly before serving. Transfer the stuffed mushrooms to a serving platter and garnish with fresh parsley for a pop of color.

Ingredients:

  • 9 lasagna sheets
  • 2 cups of sliced mushrooms (such as cremini or button)
  • 1 onion, finely chopped
  • 5 cloves of garlic, minced
  • 1 cup of chopped walnuts
  • 2 cups of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cups béchamel sauce (store-bought or homemade)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.

We’ve all heard of avocado toast, but we’re here to introduce you to the wonder of mushroom toast. Super easy, just (if not more) as flavorful, and ideal for any time of day? Yes, please!

Ingredients:

  • 1 pound of mushrooms of your choice
  • 4 slices of bread (sourdough/ciabatta)
  • 1 cup cream cheese
  • 3-4 garlic cloves, crushed
  • 1 teaspoon chili flakes
  • 1 teaspoon dried oregano
  • 1 handful parsley, chopped
  • 2 tablespoons butter
  • 1-2 tablespoons olive oil
  • 1 lemon
  • Salt and pepper

Instructions:

  1. Heat a large frying pan over high heat and add the olive oil. 
  2. Fry the mushrooms in batches, until well-browned all over. 
  3. Add all the mushrooms back into the pan with their resting juices and add the garlic, herbs, and chilli flakes. Cook for 1-2 minutes. 
  4. While the mushrooms are cooking, toast the bread. 
  5. Add the butter and juice of half a lemon into the mushrooms, and stir well while the butter is melting. Once creamy, remove the pan from the heat and season to taste. 
  6. Spread the cream cheese on the toast and top with the mushrooms. Squeeze some lemon to taste before serving.

Enough Room

Ingredients:

  • 2 cups dried orzo pasta
  • 12 oz sliced mushrooms
  • 1/3 cup grated parmesan cheese
  • 3 tablespoons butter
  • 3/4 cup chopped shallots or onion
  • 1/2 cup dry sherry
  • chopped parsley
  • 3 cups chicken broth
  • salt

Instructions:

  1. Get a frying pan and set the stove to high heat. Add 1 tablespoon butter and wait for it to melt.
  2. Next, add the sliced mushrooms and 3/4 cup chopped shallots or onion.
  3. Wait for the ingredients to cook for 9 to 12 minutes, while also mixing them several times.
  4. Lower the heat to medium and include 2 cups dried orzo pasta, 2 tablespoons butter and cook for 2 minutes. Mix the ingredients several times.
  5. Pour 3 cups chicken broth and add 1/2 cup dry sherry.
  6. Wait for the mixture to start boiling, and lower the heat. Let the mushroom orzo simmer for 9 to 12 minutes until the liquid is gone.
  7. Finally, include the 1/3 cup grated parmesan, pepper and salt. Serve the orzo right away, topped with parmesan and chopped parsley.
