]]>Everyone loves to enjoy guacamole as a snack, and even the guacamole itself can be a great way to add in more vegetables to your diet if you load it up with onions and tomatoes. However, even if you opt for the store-bought stuff, you can still add more veggies to your diet by dipping vegetables into it instead of chips! Use celery, endives, peppers, radishes, and any other hard vegetables that be used to scoop that delicious guac.
Store-bought salsa isn’t terrible for you, but it’s definitely not as good as the homemade stuff. With homemade salsa, you can add in a ton of vegetables into your meal without even realizing it! All you have to do is get tomatoes, garlic, onion, cilantro, and any other vegetables you want, roast them for a while, and then whiz it up in a food processor or blender with salt, pepper, and lime juice.

]]>Put your fears aside because now you have the ultimate recipe that ticks both boxes. This spin on a Bloody Mary is the perfect balance of sweet, savory, and spicy, and the best part is it’s a lot healthier and tastier than buying store-bought Bloody Mary mix. All you need is a strainer and a blender and you can make this amazing duo!
In a blender, put in some cherry tomatoes, fresh pineapple, a little bit of sauce from a can of chipotle peppers in adobo sauce, cilantro, lime juice, agave nectar, and some salt.
If you want to beef it up a little because you have a big crowd to feed, you can also add in some other types of tomatoes or tomato juice.
Then, blend it until it’s smooth, and strain the liquid through a mesh sieve into a pitcher.
With the pulp that’s left over, put it into a bowl and use it as a salsa, which is essentially what you have made.
To the juice, add in vodka and make your regular Bloody Mary mix!

8 ounces feta cheese (crumbled)
1/2 cup seeded fresh tomatoes (chopped)
1/4 cup pitted kalamata olives (chopped)
2 medium scallions (sliced thinly)
2 tablespoons fresh basil leaves (coarsely chopped)
1 tablespoon fresh dill (coarsely chopped)
1 tablespoon olive oil
2 teaspoons red wine vinegar
Freshly ground black pepper
Put the 8 ounces of feta cheese in a bowl. Chop the 1/4 cup of pitted olives, 1/2 cup of tomatoes, 2 tablespoons basil, and 1 tablespoon fresh dill and place in a separate, medium bowl. Thinly slice the 2 medium scallions and place in the medium bowl with the dill, basil, olives, and tomatoes. Toss the chopped ingredients gently to combine. Add in the feta cheese and mix again.
Dribble the 1 tablespoon of olive oil and the 2 teaspoons of red wine vinegar into the assorted mixture. Add a few lavish grinds of the black pepper over the top of the mixture. Lightly toss the mixture again to disperse the new ingredients.
The great thing about this easy recipe is the ability to serve it how you want it. You can serve it with pita chips, crostini, or light crackers for a dipping snack or appetizer. When lumped on a piece of toasted bread, it makes for a delicious and simple lunch. Adding cooked grains to the mixture, such as orzo, rice, farro, or couscous, creates an effortless, light dinner. For a touch of elegance, pile this feta salsa atop grilled chicken or a slice of fish.
Regardless of how you serve this feta salsa, you’ll find it gives a touch of class to any meal or event. Whether a birthday party, bridal or baby shower, reception, or retirement party, the feta salsa gives an air of sophistication and fine dining while being easy enough to throw together on your way out the door just before the event.
One of the best features of this meal is its storability. Leftovers (should you actually have any) can be stored in an airtight container in the refrigerator for up to 3 days.
