Eating more vegetables can be hard, especially when you just want to snack on some dips. Luckily, it’s much easier to do when you make these two important swaps that keep you healthy yet still eating delicious food, so sub in these tips and see the difference.

Guacamole

Everyone loves to enjoy guacamole as a snack, and even the guacamole itself can be a great way to add in more vegetables to your diet if you load it up with onions and tomatoes. However, even if you opt for the store-bought stuff, you can still add more veggies to your diet by dipping vegetables into it instead of chips! Use celery, endives, peppers, radishes, and any other hard vegetables that be used to scoop that delicious guac.

Salsa

Store-bought salsa isn’t terrible for you, but it’s definitely not as good as the homemade stuff. With homemade salsa, you can add in a ton of vegetables into your meal without even realizing it! All you have to do is get tomatoes, garlic, onion, cilantro, and any other vegetables you want, roast them for a while, and then whiz it up in a food processor or blender with salt, pepper, and lime juice.

How many times have you hosted cocktail hour and been so stressed about having a signature cocktail, while also finding the time to make something for everyone to munch on?

Put your fears aside because now you have the ultimate recipe that ticks both boxes. This spin on a Bloody Mary is the perfect balance of sweet, savory, and spicy, and the best part is it’s a lot healthier and tastier than buying store-bought Bloody Mary mix. All you need is a strainer and a blender and you can make this amazing duo!

Recipe

In a blender, put in some cherry tomatoes, fresh pineapple, a little bit of sauce from a can of chipotle peppers in adobo sauce, cilantro, lime juice, agave nectar, and some salt.

If you want to beef it up a little because you have a big crowd to feed, you can also add in some other types of tomatoes or tomato juice.

Then, blend it until it’s smooth, and strain the liquid through a mesh sieve into a pitcher.

With the pulp that’s left over, put it into a bowl and use it as a salsa, which is essentially what you have made.

To the juice, add in vodka and make your regular Bloody Mary mix!

Salsa verde can be used as enchilada sauce, simply served with chips at a party, or heated up and turn into chilaquiles with the addition of tortillas. The possibilities are endless with salsa verde, and it’s really easy to make! The flavors are bold, and since it’s made with all vegetables and herbs, you can feel good that you’re eating a lot of nutritious ingredients.

Ingredients

For this salsa verde, you will need 1/4 pound of tomatillos, 1 onion, 4 garlic cloves, 4 jalapeno peppers or Serrano peppers depending on your level of spice, salt, and lime juice and cilantro to taste.

Instructions

  1. Start by peeling and rinsing the tomatillos and cutting them in half or quarters if they’re big. You will find that under the husk is very sticky, so you really need to wash them first.
  2. Keep the garlic cloves in their skin, the peppers whole, but split the onion in quarters.
  3. Put all the ingredients on a sheet tray and broil them until they start to char.
  4. Take out the ingredients and put them in a blender or food processor and mix until smooth.
  5. Add in salt to taste, at least the juice of half a lime, and serve with cilantro on top.

Corn is a great base for so many dishes, especially Latin American inspired ones since that is where corn originated. You can really make corn salsa anyway you want, but this recipe is straightforward, simple, but really delicious. If you can’t find fresh corn on the cob for this recipe, you can easily substitute it for frozen corn. Frozen corn is actually better than canned corn since the canned version usually has a lot of salt and other additives that you don’t want to eat.

Instructions

  1. If you are using frozen corn, defrost it either in the microwave or on the stove.
  2. If you are using ears of corn, boil them for about 10 minutes, allow them to cool, and then cut the kernels off of the cob.
  3. Add the corn to a bowl.
  4. Chop up some fresh cilantro and add that to the bowl.
  5. Dice red onion along with a jalapeno pepper or more if you like it spicy and add both ingredients to the bowl.
  6. Finally, squeeze in the juice of one lime and season with salt, pepper, and a touch of chili powder.
  7. Mix together and top your favorite kinds of tacos, or serve as a dip at a party.

If you’re looking for addicting, well, you’ve got it here. This feta salsa will blow your mind and, after one small bite, will become your go-to recipe for any gatherings from here on in. Not only is this recipe completely scrumptious, it is easy to make and extremely versatile. Add it to toasted bread for a quick and healthy lunch, throw in some pasta for a light dinner, or even grab a spoon and eat it straight from the bowl.

This salsa can be added to a salad for a little extra splash of flavor or used to liven up a piece of grilled chicken or fish. No matter how you choose to eat this salsa, you’re bound to enjoy every last yummy bite. Thankfully, it’s a quick and easy recipe, so you can keep coming back for more.

What You’ll Need

8 ounces feta cheese (crumbled)
1/2 cup seeded fresh tomatoes (chopped)
1/4 cup pitted kalamata olives (chopped)
2 medium scallions (sliced thinly)
2 tablespoons fresh basil leaves (coarsely chopped)
1 tablespoon fresh dill (coarsely chopped)
1 tablespoon olive oil
2 teaspoons red wine vinegar
Freshly ground black pepper

Mix It Up

Put the 8 ounces of feta cheese in a bowl. Chop the 1/4 cup of pitted olives, 1/2 cup of tomatoes, 2 tablespoons basil, and 1 tablespoon fresh dill and place in a separate, medium bowl. Thinly slice the 2 medium scallions and place in the medium bowl with the dill, basil, olives, and tomatoes. Toss the chopped ingredients gently to combine. Add in the feta cheese and mix again.

Give It A Toss

Dribble the 1 tablespoon of olive oil and the 2 teaspoons of red wine vinegar into the assorted mixture. Add a few lavish grinds of the black pepper over the top of the mixture. Lightly toss the mixture again to disperse the new ingredients.

Serve It How You Want It

The great thing about this easy recipe is the ability to serve it how you want it. You can serve it with pita chips, crostini, or light crackers for a dipping snack or appetizer. When lumped on a piece of toasted bread, it makes for a delicious and simple lunch. Adding cooked grains to the mixture, such as orzo, rice, farro, or couscous, creates an effortless, light dinner. For a touch of elegance, pile this feta salsa atop grilled chicken or a slice of fish.

Regardless of how you serve this feta salsa, you’ll find it gives a touch of class to any meal or event. Whether a birthday party, bridal or baby shower, reception, or retirement party, the feta salsa gives an air of sophistication and fine dining while being easy enough to throw together on your way out the door just before the event.

One of the best features of this meal is its storability. Leftovers (should you actually have any) can be stored in an airtight container in the refrigerator for up to 3 days.
