This Feta Salsa Is Mouthwateringly Tart, Sweet, And Easy To Make

Not only is this recipe completely scrumptious, it is easy to make and extremely versatile. Add it to toasted bread for a quick and healthy lunch, throw in some pasta for a light dinner, or even grab a spoon and eat it straight from the bowl.

What You’ll Need

8 ounces feta cheese (crumbled)
1/2 cup seeded fresh tomatoes (chopped)
1/4 cup pitted kalamata olives (chopped)
2 medium scallions (sliced thinly)
2 tablespoons fresh basil leaves (coarsely chopped)
1 tablespoon fresh dill (coarsely chopped)
1 tablespoon olive oil
2 teaspoons red wine vinegar
Freshly ground black pepper

Mix It Up

Put the 8 ounces of feta cheese in a bowl. Chop the 1/4 cup of pitted olives, 1/2 cup of tomatoes, 2 tablespoons basil, and 1 tablespoon fresh dill and place in a separate, medium bowl. Thinly slice the 2 medium scallions and place in the medium bowl with the dill, basil, olives, and tomatoes. Toss the chopped ingredients gently to combine. Add in the feta cheese and mix again.

Give It A Toss 

Dribble the 1 tablespoon of olive oil and the 2 teaspoons of red wine vinegar into the assorted mixture. Add a few lavish grinds of the black pepper over the top of the mixture. Lightly toss the mixture again to disperse the new ingredients.
