This Corn Salsa is Chock Full Of Goodness

Corn is a great base for so many dishes, especially Latin American inspired ones since that is where corn originated. You can really make corn salsa anyway you want, but this recipe is straightforward, simple, but really delicious. If you can’t find fresh corn on the cob for this recipe, you can easily substitute it for frozen corn. Frozen corn is actually better than canned corn since the canned version usually has a lot of salt and other additives that you don’t want to eat.

Instructions

  1. If you are using frozen corn, defrost it either in the microwave or on the stove.
  2. If you are using ears of corn, boil them for about 10 minutes, allow them to cool, and then cut the kernels off of the cob.
  3. Add the corn to a bowl.
  4. Chop up some fresh cilantro and add that to the bowl.
  5. Dice red onion along with a jalapeno pepper or more if you like it spicy and add both ingredients to the bowl.
  6. Finally, squeeze in the juice of one lime and season with salt, pepper, and a touch of chili powder.
  7. Mix together and top your favorite kinds of tacos, or serve as a dip at a party.
