Salsa Verde is a Burst of Flavor, and it’s Vegan!



Salsa verde can be used as enchilada sauce, simply served with chips at a party, or heated up and turn into chilaquiles with the addition of tortillas. The possibilities are endless with salsa verde, and it’s really easy to make! The flavors are bold, and since it’s made with all vegetables and herbs, you can feel good that you’re eating a lot of nutritious ingredients.

Ingredients

For this salsa verde, you will need 1/4 pound of tomatillos, 1 onion, 4 garlic cloves, 4 jalapeno peppers or Serrano peppers depending on your level of spice, salt, and lime juice and cilantro to taste.

Instructions

  1. Start by peeling and rinsing the tomatillos and cutting them in half or quarters if they’re big. You will find that under the husk is very sticky, so you really need to wash them first.
  2. Keep the garlic cloves in their skin, the peppers whole, but split the onion in quarters.
  3. Put all the ingredients on a sheet tray and broil them until they start to char.
  4. Take out the ingredients and put them in a blender or food processor and mix until smooth.
  5. Add in salt to taste, at least the juice of half a lime, and serve with cilantro on top.
