24 hours for per 4 pounds. This will give you ample time to ensure it Is thoroughly thawed.

Brining

Brining is a step many people skip because it seems pointless. However, this will keep
your bird moist when cooking in the oven for several hours. Some simple research will give you
the proper ingredients and measurements for your brine. Do not use your brine for cooking your
turkey!

Thermometer

Get yourself a meat thermometer. Although it seems like an extra thing to buy for the
holiday, it is relatively inexpensive and can be helpful while cooking in the future.

Basting

Basting is another crucial step to ensure a beautifully crispy brown skin. Baste your turkey

One thing that is as certain as turkey when it comes to Thanksgiving, is that there will be leftovers. No matter how much your guests enjoyed your cooking (or how much you sent home with them!), there will always be food left over due to the sheer magnitude of food that was prepared. So what do you do with all those leftovers? Make this sandwich.

Ingredients:

  • 8 slices of bread of your choice, toasted if desired
  • 1 cup turkey breast, sliced
  • 1 cup dark-meat turkey, shredded
  • 2 cups assorted Thanksgiving leftovers (green beans, sweet potatoes, mashed potatoes or other sides), warmed
  • 4 leaves lettuce 
  • 4 cups stuffing
  • ½ cup mayonnaise
  • ½ cup cranberry sauce
  • ½ cup leftover gravy
  • 2 tablespoons unsalted butter
  • 4 teaspoons olive oil
  • Kosher salt
  • Freshly ground black pepper

Instructions:

  1. In a small bowl, whisk together the mayonnaise and cranberry sauce. Set aside.
  2. Place the shredded dark-meat turkey and gravy in a saucepan and gently heat over medium-low, stirring occasionally, until warmed through. 
  3. Cook the stuffing in a non-stick skillet until browned and crisp.
  4. In the same skillet, melt the butter over medium-low heat until foamy. Add the sliced turkey breast, flipping occasionally until warmed through, and season with salt and pepper.
  5. Spread 2 tablespoons of the cranberry mayonnaise onto a slice of bread and layer your toppings. Spread more cranberry mayonnaise on the other slice of bread before closing the sandwich and cutting it in half.

Number of Guests

The size of the bird you’re buying depends on the number of guests that you’re going to host. One to two pounds of turkey per person should do just fine, and you should keep this in mind when trying to determine how much meat you need for your family dinner.

Big or Small

Big turkeys may look better on paper, but smaller ones come with a long list of advantages. They’re usually naturally grown because the bigger ones tend to be pumped with chemicals, and they also tend to cook much faster and more consistently than bigger ones. If one isn’t enough for your whole family, buying two is also an option.

Right Fit

Another advantage of smaller birds is that you’ll have a much easier time fitting them inside your oven. Bigger turkeys may not always fit inside and you’ll have to cut them into smaller pieces before roasting them. You’ll also struggle to find a roasting pan that’s big enough to fit an entire turkey.

Turkey

Everyone is always concerned about being able to thaw the turkey in time, but really, it’s not so hard! All you have to do is plan to thaw it in the fridge for 24 hours for every 4-5 pounds you buy. So if your turkey is 10 pounds, you just have to get it into the fridge by Tuesday and you’ll be set for Thursday!

Stuffing

Stuffing is a very forgiving dish and it can even be made 1-2 days in advance. All you have to do is follow your favorite recipe through where it says to cover in tin foil and bake. Then, instead of taking off the foil and baking so it gets crispy, put it into the fridge and save that part for the day of so it can be extra crispy.

It's National Stuffing Day! YOU GUYS! We are ONE WEEK out from the most delicious holiday of the year! Try this classic recipe at your Friendsgiving or family get together: 1 loaf crusty white bread (french bread, ciabatta, etc) ½ cup (1 stick) unsalted butter 4 celery stalks, finely chopped 2 garlic cloves, finely chopped 2 onions, finely chopped Salt and pepper 2 Tbsp. finely chopped sage 1 Tbsp. finely chopped rosemary 2 large eggs 2½ cups chicken broth Tear the bread into large bite-sized pieces (crust and all) and place on a baking sheet. Let it sit out at least 6 hours, preferably overnight (if you don't have time for this, don't panic: just throw bread in a 325° oven, and toss occasionally until croutons feel pretty dry but are not toasted, about 30 minutes). It's important that the bread is dry so that it will absorb the liquid without falling apart. So, once your bread is ready: Melt the butter in a large skillet over medium heat and add the celery, garlic, and onions. Season with salt and pepper and stir to coat. Cook, stirring pretty frequently until the vegetables are softened, about 5 minutes. Add the sage and rosemary and cook another few minutes, until everything in the skillet gets to know each other. Crack the eggs into a bowl and pour the stock into another bowl. Whisk a little bit of the broth into the eggs. Then pour the egg mixture into the bowl with the stock. Season with salt and pepper. Transfer the bread to a large bowl and add your celery-onion mixture and your egg-broth mixture. Using your hands, spatula or spoon, mix everything together. You want to be gentle yet firm — you don't want to mush the bread, but you also want to make sure the bread is absorbing all the wonderful things (for a perfect stuffing experience in every bite). Preheat the oven to 425°. Transfer the stuffing mixture to a 9- by 13-inch baking dish (or any 2 ½-3 quart oven-safe vessel) and cover with foil. Bake the stuffing for 25-30 minutes then remove the foil and return to oven for another 10-15 minutes to get the top all golden brown and crunchy (obviously the best part of the stuffing).

You can’t have Thanksgiving without casseroles, and luckily, many can also be made ahead of time. You really can do this with any casserole you love, whether it’s a green bean or a classic sweet potato, both can be made several days in advance and all you have to do is reheat them the day of!

Did you know that mayonnaise can help you make the most perfect mashed potatoes for the upcoming Thanksgiving dinner and all the other occasions? Adding mayo to your mashed potatoes enables you to make the dish upfront without worrying about its texture.

No Thanksgiving feast is complete without a bowl of mashed potatoes. However, you’re probably used to making them last minute, because you want them to stay warm and fluffy for dinner time. That’s probably the only problem we have with them — that we’re not able to make them upfront.

This year, we learned a trick from Justin Chapple who adds just a bit of mayo to mashed potatoes.

The secret behind this tip is that mayo won’t harden once you leave the mashed potatoes in the fridge. You still need butter, but you will replace a part of it with mayonnaise you probably have in the fridge anyway. We have a feeling this is going to be the most delicious Thanksgiving ever!

Thanksgiving dinner is all about a traditional Thanksgiving menu. There are certain staples that you simply shouldn’t skip, including turkey, cranberry sauce, and gravy. When it comes to stuffing, Carla Music has the perfect recipe for you.

“I think in general with the stuffing, simple is best,” Music says in the video published by Bon Appétit. She explains that the recipe she shares with us was developed by food stylist Victoria Granof, “who, in her own right, is a legend, a living legend, look her up.” 

Music starts by cutting a day-old bread in two, but instead of dicing it into cubes, she tears it into uneven pieces. Even though we call the dish stuffing, she explains, it’s actually a dressing because we don’t actually use it to stuff the bird. 

After drying the bread in the oven for an hour, she proceeds with the recipe.

No matter how much your guests enjoyed your cooking (or how much you sent home with them!), there will always be food left over due to the sheer magnitude of food that was prepared. So what do you do with all those leftovers? Make this sandwich.

Ingredients:

  • 8 slices of bread of your choice, toasted if desired
  • 1 cup turkey breast, sliced
  • 1 cup dark-meat turkey, shredded
  • 2 cups assorted Thanksgiving leftovers (green beans, sweet potatoes, mashed potatoes or other sides), warmed
  • 4 leaves lettuce 
  • 4 cups stuffing
  • ½ cup mayonnaise
  • ½ cup cranberry sauce
  • ½ cup leftover gravy
  • 2 tablespoons unsalted butter
  • 4 teaspoons olive oil
  • Kosher salt
  • Freshly ground black pepper

Instructions:

  1. In a small bowl, whisk together the mayonnaise and cranberry sauce. Set aside.
  2. Place the shredded dark-meat turkey and gravy in a saucepan and gently heat over medium-low, stirring occasionally, until warmed through. 
  3. Cook the stuffing in a non-stick skillet until browned and crisp.
  4. In the same skillet, melt the butter over medium-low heat until foamy. Add the sliced turkey breast, flipping occasionally until warmed through, and season with salt and pepper.
  5. Spread 2 tablespoons of the cranberry mayonnaise onto a slice of bread and layer your toppings. Spread more cranberry mayonnaise on the other slice of bread before closing the sandwich and cutting it in half.

Thanksgiving dinner wouldn’t be the same without the delicious roasted turkey and finding the right one can be quite an adventure. Size is the first factor you’ll use to determine if the turkey that you’re buying is the right fit, and these three useful tips will help you make the best choice.

Number of Guests

The size of the bird you’re buying depends on the number of guests that you’re going to host. One to two pounds of turkey per person should do just fine, and you should keep this in mind when trying to determine how much meat you need for your family dinner.

Big or Small

Big turkeys may look better on paper, but smaller ones come with a long list of advantages. They’re usually naturally grown because the bigger ones tend to be pumped with chemicals, and they also tend to cook much faster and more consistently than bigger ones. If one isn’t enough for your whole family, buying two is also an option.

Right Fit

Another advantage of smaller birds is that you’ll have a much easier time fitting them inside your oven. Bigger turkeys may not always fit inside and you’ll have to cut them into smaller pieces before roasting them. You’ll also struggle to find a roasting pan that’s big enough to fit an entire turkey.

Turkey

Everyone is always concerned about being able to thaw the turkey in time, but really, it’s not so hard! All you have to do is plan to thaw it in the fridge for 24 hours for every 4-5 pounds you buy. So if your turkey is 10 pounds, you just have to get it into the fridge by Tuesday and you’ll be set for Thursday!

Stuffing

Stuffing is a very forgiving dish and it can even be made 1-2 days in advance. All you have to do is follow your favorite recipe through where it says to cover in tin foil and bake. Then, instead of taking off the foil and baking so it gets crispy, put it into the fridge and save that part for the day of so it can be extra crispy.

It's National Stuffing Day! YOU GUYS! We are ONE WEEK out from the most delicious holiday of the year! Try this classic recipe at your Friendsgiving or family get together: 1 loaf crusty white bread (french bread, ciabatta, etc) ½ cup (1 stick) unsalted butter 4 celery stalks, finely chopped 2 garlic cloves, finely chopped 2 onions, finely chopped Salt and pepper 2 Tbsp. finely chopped sage 1 Tbsp. finely chopped rosemary 2 large eggs 2½ cups chicken broth Tear the bread into large bite-sized pieces (crust and all) and place on a baking sheet. Let it sit out at least 6 hours, preferably overnight (if you don't have time for this, don't panic: just throw bread in a 325° oven, and toss occasionally until croutons feel pretty dry but are not toasted, about 30 minutes). It's important that the bread is dry so that it will absorb the liquid without falling apart. So, once your bread is ready: Melt the butter in a large skillet over medium heat and add the celery, garlic, and onions. Season with salt and pepper and stir to coat. Cook, stirring pretty frequently until the vegetables are softened, about 5 minutes. Add the sage and rosemary and cook another few minutes, until everything in the skillet gets to know each other. Crack the eggs into a bowl and pour the stock into another bowl. Whisk a little bit of the broth into the eggs. Then pour the egg mixture into the bowl with the stock. Season with salt and pepper. Transfer the bread to a large bowl and add your celery-onion mixture and your egg-broth mixture. Using your hands, spatula or spoon, mix everything together. You want to be gentle yet firm — you don't want to mush the bread, but you also want to make sure the bread is absorbing all the wonderful things (for a perfect stuffing experience in every bite). Preheat the oven to 425°. Transfer the stuffing mixture to a 9- by 13-inch baking dish (or any 2 ½-3 quart oven-safe vessel) and cover with foil. Bake the stuffing for 25-30 minutes then remove the foil and return to oven for another 10-15 minutes to get the top all golden brown and crunchy (obviously the best part of the stuffing).

Casseroles

You can’t have Thanksgiving without casseroles, and luckily, many can also be made ahead of time. You really can do this with any casserole you love, whether it’s a green bean or a classic sweet potato, both can be made several days in advance and all you have to do is reheat them the day of!

Any casserole can be made in advance, so make sure to use that to your advantage. Whether you make one a week ahead to freeze and bake on Thanksgiving day or make one from scratch the day before, know that it will reheat well and basically stay delicious no matter what you do.

Desserts

Although we don’t recommend making the desserts several days ahead, your totally fine making them the day before. Not only your cakes and pies will stay delicious for a few days, we doubt they will last that long anyway — because everybody loves dessert!

Did you know that mayonnaise can help you make the most perfect mashed potatoes for the upcoming Thanksgiving dinner and all the other occasions? Adding mayo to your mashed potatoes enables you to make the dish upfront without worrying about its texture.

No Thanksgiving feast is complete without a bowl of mashed potatoes. However, you’re probably used to making them last minute, because you want them to stay warm and fluffy for dinner time. That’s probably the only problem we have with them — that we’re not able to make them upfront.

This year, we learned a trick from Justin Chapple who adds just a bit of mayo to mashed potatoes.

The secret behind this tip is that mayo won’t harden once you leave the mashed potatoes in the fridge. You still need butter, but you will replace a part of it with mayonnaise you probably have in the fridge anyway. We have a feeling this is going to be the most delicious Thanksgiving ever!

Thanksgiving dinner is all about a traditional Thanksgiving menu. There are certain staples that you simply shouldn’t skip, including turkey, cranberry sauce, and gravy. We’re not saying you shouldn’t be creative with your Thanksgiving meal, as it’s always a good idea to make the traditional dishes with a twist. When it comes to stuffing, Carla Music has the perfect recipe for you.

“I think in general with the stuffing, simple is best,” Music says in the video published by Bon Appétit. She explains that the recipe she shares with us was developed by food stylist Victoria Granof, “who, in her own right, is a legend, a living legend, look her up.” 

Music starts by cutting a day-old bread in two, but instead of dicing it into cubes, she tears it into uneven pieces. Even though we call the dish stuffing, she explains, it’s actually a dressing because we don’t actually use it to stuff the bird. 

After drying the bread in the oven for an hour, she proceeds with the recipe.
