There are a few things that, if you ask us, make a recipe worthy of entering your weekly weeknight rotation as a vegan. It has to be:

  • Easy to make
  • Tasty enough to eat week after week
  • Plant-based (duh)
  • Have protein (our bodies will thank us!)
  • Use simple ingredients that you usually have around the house or can get any time of year

And this tofu mushroom pasta recipe is a perfect candidate. Keep reading to learn how to make it.

Ingredients:

  • Olive oil
  • Onion
  • Firm tofu
  • Mushrooms
  • Cherry tomatoes
  • Pasta
  • Water
  • Salt
  • Pepper
  • Garlic salt
  • Nutritional yeast

Directions:

  1. Cook your pasta according to package instructions, making sure to salt the water generously. We recommend tube or bow tie-shaped pasta.
  2. Chop up your veggies and tofu into bite-sized pieces.
  3. Heat olive oil over medium heat, adding the onions when the oil is shimmering and cooking until they are translucent and fragrant.
  4. Add the tofu, cooking for an additional 10 minutes.
  5. Then you can add the chopped mushrooms, cooking for 5-10 more minutes.
  6. Season with salt, pepper, and garlic salt to taste.
  7. Remove the mixture from the heat.
  8. Add cherry tomatoes and drained pasta and mix to combine.
  9. Add a splash of olive oil, mixing to thoroughly coat everything.
  10. Serve sprinkled with nutritional yeast.

Here’s the thing about guacamole. It’s pretty much a perfect food. Everybody loves it. You can eat it alone or at a party. You can dip things in it, put it in your burrito, smear it on toast, or just eat it with a spoon. And, if you use this recipe, you can make a version of guacamole that tastes fantastic but is also incredibly easy to whip up without any stress. Sound good? Keep reading to learn how.

Ingredients

  • Avocado – Because duh
  • Lime or lemon juice – Are limes hard to come by in your area? No worries. Lemon juice will work too.
  • Garlic powder – Ain’t nobody got time to mince fresh garlic. Use garlic powder. Nobody will know the difference.
  • Salt
  • Pepper

If you’re one of those cilantro people, you can also add that, too. No need, though. It’ll taste just as delicious without it.

Directions

Cut the avocado in half. Carefully remove the pit. Use a knife to dice the avocado while it’s still in the skin. Then take a big spoon and scoop out the diced avocado flesh into a big bowl.

Add lime juice (or lemon!) and mash with a fork until you get your desired, partially chunky texture. Season with salt, pepper, and garlic powder. Taste. Add more garlic powder because you probably didn’t add enough before. And enjoy!

If you’re not from Australia, the idea of fairy bread might shock you. Yet this simple, sugary childhood treat is, indeed, enjoyed by Australians both young and old. It may not exactly be impressive, fancy, or (definitely not) good for you, but it can certainly hit the spot when you’re looking for something comforting and sweet as a snack. So, without further ado, here is perhaps the world’s easiest dessert recipe: fairy bread. It’s so simple a child could do it… Though that seems to be the point.

Ingredients

  • White bread
  • Butter
  • Sprinkles

Directions

Start by removing the crust from each slice of your white bread. After all, we’re embracing our inner child, remember?

Now, spread each slice of bread with a thin and even layer of butter. Place the bread in a container (to help catch the excess sprinkles) and sprinkle generously with your sprinkles of choice, making sure you cover the bread completely. Gently pat the sprinkles down into the bread so they don’t fall off.

Now, the most important step of all: slice the fairy bread diagonally. We all know it tastes better that way. And enjoy!

Overcook Your Chickpeas

Most of the time, when you cook beans, you want to avoid cooking them too long in order to preserve their structure. But with hummus, you want to cook your chickpeas until they’re super tender, soft, and creamy. This will help you get the best consistency.

Use (Good) Tahini

A lot of (Western) hummus recipes call blending the chickpeas with olive oil, but the traditional way is to blend with tahini, a toasted sesame seed paste, which has just as much fat and flavor as olive oil, if not more. Considered by many to be the unofficial national dish of Canada, poutine is one of those foods that is deeply beloved in one specific place and nearly unknown in the rest of the world. But this french fry cheese curd brown gravy treat is the ultimate comfort food that can be enjoyed even if you don’t live in Canada. Plus, it’s fairly easy to make at home, so you don’t have to go without trying it just because you’re not located in the Great North. So in honor of Canada, here is how you can make your own poutine.

Ingredients

  • Cornstarch
  • Water
  • Butter
  • All-purpose flour
  • Beef broth
  • Chicken broth
  • Pepper
  • Russet potatoes
  • Frying oil
  • Cheese curds

Directions

In a small bowl, dissolve cornstarch in water. In a large saucepan, melt butter. Add flour, whisking regularly for about five minutes until golden brown.

Add beef and chicken broth and bring to a boil, stirring. Add the cornstarch mixture and simmer. Season with salt and pepper to taste.

Heat frying oil in a deep-fryer or wide, large pot to 300 degrees. While it’s heating, cut your potatoes into relatively thick french fry shapes. Cook fries for five to eight minutes at a time, being sure not to overcrowd the pan. This is just the first fry, which will cook the potatoes internally. Remove the cooked fries, raise the oil to 375 degrees, and cook the french fries again to crisp them up. Let them cool on a wire rack over paper towels.

To assemble the poutine, add your fries to a bowl, seasoning with salt. Add the gravy and cheese curds over top. Serve while hot.

Have you ever made sushi at home and felt tempted to fill it with something random from your kitchen? Well, why not follow that impulse and do some fun sushi experiments? These three rolls actually work way better than you’d expect.

Bacon and Egg Sushi

Okay, we’ll start with a banger. Breakfast sushi. Crisp up some bacon and make a tamago, or a Japanese folded egg omelet (they’re already common in sushi!). Roll them both up in your rice and seaweed, optionally sprinkling with some cheddar cheese on top.

Hamburger Sushi

Now for a lunch roll: hamburger sushi, which is comprised of cooked hamburger meat, lettuce, and tomato rolled up in sushi. Drizzle some ketchup and mustard over top. It might look weird but it’s really dang delicious.

S’mores Sushi

And we’ll finish it off with a dessert sushi. That’s right, who said sushi can’t be sweet? It’s as easy as rolling up marshmallows (or a layer of marshmallow fluff) with crushed graham crackers and drizzling chocolate syrup over top. (Pro tip: skip the seaweed.)

If you’re the type of person who doesn’t love vegetables, it’s probably because you haven’t been roasting them. That’s right, we highly recommend roasting your vegetables. The result is so delicious, plus it requires minimal effort and you can do it with pretty much any vegetable. Just follow these tips and you’ll get the best results.

Wash and Dry

Of course, you’ll want to thoroughly rinse your veggies before cooking them to get off any dirt, but you’ll also want to make sure you dry them completely afterward. If you don’t, the leftover moisture could end up steaming the veggies in the oven instead of roasting them.

Embrace Sameness

In order to make sure that all of your veggies come out the same level of perfect, fork-soft done, you’ll want to make sure you chop them up into uniform pieces.

Don’t Overcrowd

Another way to avoid accidentally steaming your veggies in the oven instead of roasting them is to be careful not to overcrowd your vegetables on your baking sheet. Start by removing the crust from each slice of your white bread. After all, we’re embracing our inner child, remember?

Now, spread each slice of bread with a thin and even layer of butter. Place the bread in a container (to help catch the excess sprinkles) and sprinkle generously with your sprinkles of choice, making sure you cover the bread completely. Gently pat the sprinkles down into the bread so they don’t fall off.

Now, the most important step of all: slice the fairy bread diagonally. We all know it tastes better that way. And enjoy!

Considered by many to be the unofficial national dish of Canada, poutine is one of those foods that is deeply beloved in one specific place and nearly unknown in the rest of the world. But this french fry cheese curd brown gravy treat is the ultimate comfort food that can be enjoyed even if you don’t live in Canada. Plus, it’s fairly easy to make at home, so you don’t have to go without trying it just because you’re not located in the Great North. So in honor of Canada, here is how you can make your own poutine.

Ingredients

  • Cornstarch
  • Water
  • Butter
  • All-purpose flour
  • Beef broth
  • Chicken broth
  • Pepper
  • Russet potatoes
  • Frying oil
  • Cheese curds

Directions

In a small bowl, dissolve cornstarch in water. In a large saucepan, melt butter. Add flour, whisking regularly for about five minutes until golden brown.

Add beef and chicken broth and bring to a boil, stirring. Add the cornstarch mixture and simmer. Season with salt and pepper to taste.

Heat frying oil in a deep-fryer or wide, large pot to 300 degrees. While it’s heating, cut your potatoes into relatively thick french fry shapes. Cook fries for five to eight minutes at a time, being sure not to overcrowd the pan. This is just the first fry, which will cook the potatoes internally. Remove the cooked fries, raise the oil to 375 degrees, and cook the french fries again to crisp them up. Let them cool on a wire rack over paper towels.

To assemble the poutine, add your fries to a bowl, seasoning with salt. Add the gravy and cheese curds over top. Serve while hot.

Have you ever made sushi at home and felt tempted to fill it with something random from your kitchen? Well, why not follow that impulse and do some fun sushi experiments? These three rolls actually work way better than you’d expect.

Bacon and Egg Sushi

Okay, we’ll start with a banger. Breakfast sushi. Crisp up some bacon and make a tamago, or a Japanese folded egg omelet (they’re already common in sushi!). Roll them both up in your rice and seaweed, optionally sprinkling with some cheddar cheese on top.

Hamburger Sushi

Now for a lunch roll: hamburger sushi, which is comprised of cooked hamburger meat, lettuce, and tomato rolled up in sushi. Drizzle some ketchup and mustard over top. It might look weird but it’s really dang delicious.

S’mores Sushi

And we’ll finish it off with a dessert sushi. That’s right, who said sushi can’t be sweet? It’s as easy as rolling up marshmallows (or a layer of marshmallow fluff) with crushed graham crackers and drizzling chocolate syrup over top. (Pro tip: skip the seaweed.)
