Roasted potatoes are a classic side dish. However, achieving that perfect crunch can sometimes be elusive. The secret ingredient to attaining this culinary delight? Baking soda. This might sound surprising, but a pinch of baking soda can transform your roasted potatoes from just good to irresistible. Let’s jump in.

Ingredients:

  • 4 large potatoes
  • 8 cups of water
  • 2 tablespoons of salt
  • 1/2 teaspoon of baking soda
  • Olive oil for coating
  • Additional salt to taste
  • Optional: Fresh herbs or garlic for extra flavor

Instructions:

  1. Start by peeling and cutting the potatoes into cubes. 
  2. Bring the water to a rapid boil. Add salt and baking soda. 
  3. Add the cubed potatoes to the boiling water. Cook them until they are tender (about 10 min). 
  4. After the potatoes are tender, strain them and let them air dry on a tray for a few minutes.
