Roasted potatoes are a classic side dish. However, achieving that perfect crunch can sometimes be elusive. The secret ingredient to attaining this culinary delight? Baking soda. This might sound surprising, but a pinch of baking soda can transform your roasted potatoes from just good to irresistible. Let’s jump in.
Ingredients:
- 4 large potatoes
- 8 cups of water
- 2 tablespoons of salt
- 1/2 teaspoon of baking soda
- Olive oil for coating
- Additional salt to taste
- Optional: Fresh herbs or garlic for extra flavor
Instructions:
- Start by peeling and cutting the potatoes into cubes.
- Bring the water to a rapid boil. Add salt and baking soda.
- Add the cubed potatoes to the boiling water. Cook them until they are tender (about 10 min).
- After the potatoes are tender, strain them and let them air dry on a tray for a few minutes.
- Once slightly dried, drizzle them with olive oil and sprinkle with a bit more salt. Add additional seasonings if you’d like.
- Preheat your oven to 400°F. Spread the potatoes out in a single layer on a baking sheet.
- Roast the potatoes for about 45-60 minutes, or until they are golden and crispy. Halfway through the roasting time, flip the potatoes to ensure they brown evenly on all sides.
