A scrumptious Italian classic, focaccia bread is not only a delicious bread but versatile, complementing a diverse range of dishes. The only problem is that those who are gluten intolerant may not be able to eat regular focaccia bread like everyone else. Here is how you can make gluten-free focaccia for everybody to enjoy.

Ingredients:

  • 1 package quick-rise yeast
  • 1 1/2 cups warm water (105°F to 110°F)
  • 2 1/4 cups gluten free baking flour with xanthan gum
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 5 tablespoons olive oil

Instructions:

  1. In a large bowl, stir together the yeast, sugar, and water until the yeast and sugar are fully dissolved. Then add the flour, baking powder, salt, and 3 tablespoons of olive oil. Stir well before covering the bowl with plastic wrap. Allow it to rise in a warm place for 30 minutes.
  2. Preheat your oven to 400°F. Spread one teaspoon of olive oil across the surface of a baking tray and then add the dough to the pan. Stretch the dough so that it covers the whole pan.
  3. Bake for about 20 to 25 minutes, until the dough is golden brown. Allow it to cool for 10-15 minutes before enjoying.

  • 2 cups of plain gluten free flour
  • 1 1/2 cups of milk
  • 2 eggs

Ethiopia is a rising star of the international food scene. A trending sight in many cities is the opening of Ethiopian restaurants, as more and more diners come to love and appreciate the uniqueness and wide variety of flavors that this cuisine offers.

If there is one word that you must know before trying Ethiopian food, it’s injera.

Any visitor to Ethiopia or diner at an Ethiopian restaurant will undoubtedly come into contact with this special bread, which is the centerpiece of any Ethiopian meal. What makes it so special, and why is it such a central piece of this country’s gastronomy?

Teff is a grain that grows in the Ethiopian Highlands and it’s the base for this delicious bread. The small grains of this plant, which are high in fiber and many minerals while being gluten-free, are mashed into flour and then added to water.

Fermentation is then triggered, and the dough sits for 2-3 days to create a slightly sour taste. Then, the injera is ready to be prepared.

Spread over a flat, circular griddle, injera is cooked and made into a bread with a spongy, absorbent texture.

Ethiopian stews, known as wat, are the most common thing to be eaten with injera. Made with lentils, chicken, or beef, they are spread on top of the bread and then eaten together with diners’ hands. 

It’s a unique way to enjoy a meal and something that makes Ethiopian food truly unique.

Instructions

  1. Grate the sweet potatoes and some onions and put them in a towel or cheesecloth. Ring out the excess water from them and then place them in a bowl.
  2. Combine the sweet potato onion mixture with eggs, gluten-free flour like rice flour, and pepper.
  3. Take a bit of the mixture and roll them into a bowl and smash them into patties.

Egg rolls are such a yummy treat to get for a takeaway, but they’re not usually the healthiest things.

But if you make them at home, you can load them with veggies and oven bake them instead of frying! They make for amazing appetizers or even a main course if you make enough, so try them tonight!

Filling

For the filling, you can use either cooked or raw vegetables. Some good options are carrots, cabbage, sweet potatoes, or anything you have in your pantry!

Whether you cook it or not, make sure to toss it in some soy sauce or tamari before you put it into the egg rolls.

Recipe

  1. Fill up a cup of water so you can constantly replenish your plate.
  2. Pour a little water onto a plate and take a rice paper sheet and wet it so you can manipulate it.
  3. Take the filling and put a little in the middle towards the top of the sheet.
  4. Fold it like a burrito, the sides in first, and then the top over the filling and roll it up as tightly as you can.
  5. Place the rolls on a baking sheet and once you’re done, drizzle over some oil and bake it at 350 F until they turn golden brown.

When you hear chickpeas and brownies, surely your mind doesn’t automatically go to something delicious and sweet. However, these chickpea brownies are surprisingly delicious and a lot healthier than regular brownies! They are also gluten-free, and can be made vegan if you use dark chocolate chips. So let’s get started!

Ingredients

For this recipe, you will need:
15 oz can of chickpeas
half a cup of peanut butter
2 tablespoons of maple syrup
2 tablespoons of honey (or agave if you want to make it vegan)
1 tablespoon of vanilla extract
½ teaspoon of salt
¼ teaspoon of baking soda and powder each
as many chocolate chips you want

Instructions

First, preheat your oven to 350 F.

Then, drain and rinse the canned chickpeas. Alternatively, you can use homemade chickpeas if you want to make it even healthier!

Pour all the ingredients into a food processor except for the chocolate chips and blend until smooth.

Pour the mixture from the food processor into a baking dish that has been greased by butter or coconut oil, and spread it out evenly.

Finally, place the chocolate chips all over the top.

Not only are these muffins delicious, they are really healthy! Because of the greek yogurt and eggs, you’ll kickstart your stay with some protein. These muffins are also flour-free, so if you find or make gluten-free muesli, you can make them totally gluten-free!

Method

  1. Crack eggs into a large bowl and whisk them together.
  2. Then, add applesauce, greek yogurt, the milk of your choice, maple syrup, and vanilla extract. Mix all the wet ingredients together well.
  3. Pour in the muesli along with a pinch of salt and some baking powder, which will make the muffins rise.
  4. Combine all the ingredients well until everything is incorporated.
  5. Pour the batter into muffin tins and top with a little extra muesli.

If there is one word that you must know before trying Ethiopian food, it’s injera.

Any visitor to Ethiopia or diner at an Ethiopian restaurant will undoubtedly come into contact with this special bread, which is the centerpiece of any Ethiopian meal. What makes it so special, and why is it such a central piece of this country’s gastronomy?

Teff is a grain that grows in the Ethiopian Highlands and it’s the base for this delicious bread. The small grains of this plant, which are high in fiber and many minerals while being gluten-free, are mashed into flour and then added to water.

Fermentation is then triggered, and the dough sits for 2-3 days to create a slightly sour taste. Then, the injera is ready to be prepared.

Spread over a flat, circular griddle, injera is cooked and made into a bread with a spongy, absorbent texture.

Ethiopian stews, known as wat, are the most common thing to be eaten with injera. Made with lentils, chicken, or beef, they are spread on top of the bread and then eaten together with diners’ hands. 

It’s a unique way to enjoy a meal and something that makes Ethiopian food truly unique.

Ingredients

The main ingredient for this recipe is sweet potato. Although you could use a regular potato, this boosts the health benefits of the pancake, and also gives it a unique flavor profile.

Instructions

  1. Grate the sweet potatoes and some onions and put them in a towel or cheesecloth. Ring out the excess water from them and then place them in a bowl.
  2. Combine the sweet potato onion mixture with eggs, gluten-free flour like rice flour, and pepper.
  3. Take a bit of the mixture and roll them into a bowl and smash them into patties.
  4. Fry in an oil that has a high smoke point, or bake them in the oven until crispy.

Egg rolls are such a yummy treat to get for a takeaway, but they’re not usually the healthiest things.

But if you make them at home, you can load them with veggies and oven bake them instead of frying! They make for amazing appetizers or even a main course if you make enough, so try them tonight!

Filling

For the filling, you can use either cooked or raw vegetables. Some good options are carrots, cabbage, sweet potatoes, or anything you have in your pantry!

Whether you cook it or not, make sure to toss it in some soy sauce or tamari before you put it into the egg rolls.

Recipe

  1. Fill up a cup of water so you can constantly replenish your plate.
  2. Pour a little water onto a plate and take a rice paper sheet and wet it so you can manipulate it.
  3. Take the filling and put a little in the middle towards the top of the sheet.
  4. Fold it like a burrito, the sides in first, and then the top over the filling and roll it up as tightly as you can.
  5. Place the rolls on a baking sheet and once you’re done, drizzle over some oil and bake it at 350 F until they turn golden brown.

When you hear chickpeas and brownies, surely your mind doesn’t automatically go to something delicious and sweet. However, these chickpea brownies are surprisingly delicious and a lot healthier than regular brownies! They are also gluten-free, and can be made vegan if you use dark chocolate chips. So let’s get started!

Ingredients

For this recipe, you will need:
15 oz can of chickpeas
half a cup of peanut butter
2 tablespoons of maple syrup
2 tablespoons of honey (or agave if you want to make it vegan)
1 tablespoon of vanilla extract
½ teaspoon of salt
¼ teaspoon of baking soda and powder each
as many chocolate chips you want

Instructions

First, preheat your oven to 350 F.

Then, drain and rinse the canned chickpeas. Alternatively, you can use homemade chickpeas if you want to make it even healthier!

Pour all the ingredients into a food processor except for the chocolate chips and blend until smooth.

Pour the mixture from the food processor into a baking dish that has been greased by butter or coconut oil, and spread it out evenly.

Finally, place the chocolate chips all over the top.

Bake in the oven for exactly 18 minutes and let the brownies cool before slicing into them and enjoying!

Not only are these muffins delicious, they are really healthy! Because of the greek yogurt and eggs, you’ll kickstart your stay with some protein. These muffins are also flour-free, so if you find or make gluten-free muesli, you can make them totally gluten-free!

Method

  1. Crack eggs into a large bowl and whisk them together.
  2. Then, add applesauce, greek yogurt, the milk of your choice, maple syrup, and vanilla extract. Mix all the wet ingredients together well.
  3. Pour in the muesli along with a pinch of salt and some baking powder, which will make the muffins rise.
  4. Combine all the ingredients well until everything is incorporated.
  5. Pour the batter into muffin tins and top with a little extra muesli.
  6. Bake for 20-25 minutes and enjoy now and later!
