Try this healthy and flavorful twist on a classic Italian favorite—a walnut and mushroom lasagna. Layers of velvety béchamel sauce, savory mushrooms, crunchy walnuts, and gooey melted cheese come together in a symphony of flavors and textures. Here’s how you can make your own.

Ingredients:

  • 9 lasagna sheets
  • 2 cups of sliced mushrooms (such as cremini or button)
  • 1 onion, finely chopped
  • 5 cloves of garlic, minced
  • 1 cup of chopped walnuts
  • 2 cups of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cups béchamel sauce (store-bought or homemade)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
  3. Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-7 minutes. Season with salt and pepper to taste.
  4. Stir in the chopped walnuts and cook for an additional 2-3 minutes, until the walnuts are toasted and fragrant. Remove from heat and set aside.
  5. To assemble the lasagna, spread a thin layer of béchamel sauce on the bottom of the prepared baking dish. Arrange a layer of cooked lasagna noodles on top, followed by a layer of the mushroom and walnut mixture. Sprinkle a handful of shredded mozzarella cheese over the mushroom and walnut layer, then spoon some béchamel sauce on top.
  6. Repeat the layers until all the ingredients are used up, finishing with a layer of béchamel sauce and a generous sprinkle of grated Parmesan cheese. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the lasagna is hot and bubbly.
  7. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden and melted. Let the lasagna cool for a few minutes before slicing. Garnish with chopped fresh parsley and serve hot.

Lasagna is a classic dish that always hits the spot. If you want a meat-free alternative that is super healthy and delicious, try this vegan lasagna recipe that has butternut squash at its heart!

Ingredients

  • 1 large butternut squash
  • 1 tin of green lentils
  • 1 white onion
  • 4 cloves of garlic
  • 1 heaped tablespoon of tomato puree
  • 1 heaped tablespoon of plain flour
  • 2 tablespoons of olive oil
  • 12 ounces of lasagna sheets
  • 1 handful of fresh sage
  • 3 ounces of nutritional yeast
  • 2 cups of oat milk

Instructions

  1. Peel your butternut squash and cut it up into small chunks. Put into a deep baking dish and add half of your olive oil and a pinch of salt.
  2. Roast for about 30 minutes.
  3. Add your garlic about 10 minutes before you remove your butternut squash from the oven. Chop up your onions into small chunks and fry in a saucepan with the other half of your olive oil. Once they have turned translucent, add your roasted squash and garlic.
  4. Stir in your lentils and add your tomato puree and cook for about 15 minutes, adding water if it begins to dry up. You can blend if you want a smoother flavor, but leave unblended if you want more texture and if your squash is small enough.
  5. Meanwhile, you can make your bechamel sauce. Heat some oil in a separate pan and add your flour. Cook for a couple of minutes, before adding your oat milk and stirring well. Cook on a low heat and keep stirring, before adding your nutritional yeast. Taste for flavor and add more salt or nutritional yeast if you want more of a cheesy flavor.
  6. Once your butternut squash sauce and bechamel sauce are cooked, remove them from the heat. In a deep baking dish, add a layer of your squash sauce and spread out to cover the dish. Do the same with your bechamel, before adding a layer of lasagna pasta sheets. Repeat this at least once, until you have run out of squash and bechamel sauces.
  7. Once you have constructed your lasagna, cook in the oven for about 30 minutes, and enjoy!

🌱 Vegan Lasagna Roll Ups! 📷 by @elavegan 🌿🌿Recipe: 1/2 tbsp oil 1 onion diced 3 garlic cloves minced One small can mushrooms sliced 1/2 tbsp soy sauce (gluten-free if needed) 100 g (3.5 oz) fresh spinach 360 g (1 1/2 cups) marinara sauce 6-8 lasagna noodles (regular or gluten-free) 400 g (1 2/3 cups) hummus 1/2 tsp cumin (optional) 1/2 tsp paprika (optional) A few tbsp lemon juice (optional) Salt and black pepper to taste 200 g (7 oz) vegan cheese Instructions Cook the lasagna noodles in a large pot (filled with boiling water and salt) according to package directions or until al dente. Ladle about 1/2 cup marinara sauce (or your favorite tomato sauce) in the bottom of a 9×6 (23×15 cm) baking dish (you can use a larger pan). Set aside. While the lasagna noodles cook, heat oil in a pan over medium heat and add the diced onion, garlic, and mushrooms. Saute for about 4 minutes. Then add soy sauce and spinach. Instructions:

  1. Set the oven to 350 F degrees and prepare a baking pan or any kind of oven-proof casserole dish.

This zucchini lasagna is even better than regular lasagna. It’s cheesy, without meat, and done in 70 minutes.

Ingredients:

  • 14.5 oz diced tomato
  • 1/2 teaspoon garlic salt
  • 3 small zucchini
  • 1/2 teaspoon garlic powder
  • 10 oz ricotta
  • 8 oz mozzarella
  • 8 oz tomato sauce
  • 1/2 cup parmesan
  • 1/3 chopped onion
  • 1 egg
  • 1 tablespoon fresh thyme
  • 2 tablespoons fresh basil
  • 2 tablespoons fresh oregano

Instructions:

  • Wash and cut the zucchini into thick strips. Dry the strips out on pieces of paper and add salt.
  • Get a saute pan and heat the olive oil. Cook the onion for 5 minutes.
  • Next, include the tomato sauce, garlic salt, diced tomatoes, and garlic powder.
  • Mix all the ingredients together and let them simmer for 2 to 3 minutes. Add the basil, thyme, and oregano and take the saute pan away from the heat.
  • Set the oven to 375 F degrees and prepare a baking pan.
  • Combine the ricotta, parmesan, and egg in a bowl.
  • Add some of the sauce on the bottom of the pan. Top it off with a layer of zucchini.
  • The next layer is 1/3 of the ricotta mix. Next, add 1/4 of mozzarella.
  • Continue doing the same steps all over again.
  • Cover the baking pan and leave it in the oven for 35 minutes. When the time is up let it bake uncovered for 15 to 20 minutes.
  • Serve the zucchini lasagna right away.

Sometimes, beef lasagnas get boring, so we decided to find a delicious recipe you must check out. This turkey lasagna will have you obsessed.

Ingredients:

Get ready to do some shopping!

1lb. ground turkey
2 tablespoons tomato paste
1 lb. lasagna noodles
2 cloves minced garlic
2 tablespoons extra-virgin olive oil
1 can crushed tomatoes
1 finely chopped onion
1 container ricotta
2 tablespoons chopped parsley
1 egg, 1/4 c. torn basil
1 lb. sliced mozzarella
1/2 c. grated parmesan.

Instructions:

The first step is to cook the noodles according to the instructions on the box. When they are done, remove the water and set them on a baking sheet.

Get a large pot and fill it with oil and onion. Cook it on medium heat for five minutes.

Add the ground turkey and the tomato paste. Constantly stir with a wooden spoon for six minutes.

Then, include the basil and tomatoes as well. Add salt and pepper to your liking. Leave the sauce to simmer for twenty minutes.

In another bowl, mix the parmesan, egg, ricotta, parsley, and garlic. Add salt and pepper.

Once this is done, you can start preparing the turkey lasagna. After each layer of noodles add a layer of sauce and ricotta mixture.

You do this until you’re out of ingredients. Bake everything for 35 minutes.

Lasagna is such a great way to enjoy a tasty and easy lunch. The ravioli lasagna recipe below will take you less than an hour, both prep and cooking.

Ingredients:

To prepare the ravioli lasagna you will need to get 2 30-oz packages of cheese ravioli, 1 1/2 cup grated Parmesan cheese, 1/3 cup chopped basil, 2 25-oz jars marinara pasta sauce, 1 1/2 cups shredded mozzarella cheese. You can also use another type of ravioli that also include cheese.

Instructions:

Start by getting a baking dish, and cover it with cooking spray. Add one half of a jar of the marinara sauce on the bottom of the dish. Set the oven to preheat on 400 F degrees. Include one pack of the ravioli on top of the marinara sauce. Cover it with the other half of the marinara sauce from the first jar. You can now add 3/4 cup of the mozzarella cheese and 1/4 cup of the Parmesan cheese. Continue by adding another layer of the marinara sauce. Top it with ravioli, sauce again and the two types of cheese.

Try this healthy and flavorful twist on a classic Italian favorite—a walnut and mushroom lasagna. Layers of velvety béchamel sauce, savory mushrooms, crunchy walnuts, and gooey melted cheese come together in a symphony of flavors and textures. Here’s how you can make your own.

Ingredients:

  • 9 lasagna sheets
  • 2 cups of sliced mushrooms (such as cremini or button)
  • 1 onion, finely chopped
  • 5 cloves of garlic, minced
  • 1 cup of chopped walnuts
  • 2 cups of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cups béchamel sauce (store-bought or homemade)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Lasagna is a classic dish that always hits the spot. If you want a meat-free alternative that is super healthy and delicious, try this vegan lasagna recipe that has butternut squash at its heart!

Ingredients

  • 1 large butternut squash
  • 1 tin of green lentils
  • 1 white onion
  • 4 cloves of garlic
  • 1 heaped tablespoon of tomato puree
  • 1 heaped tablespoon of plain flour
  • 2 tablespoons of olive oil
  • 12 ounces of lasagna sheets
  • 1 handful of fresh sage
  • 3 ounces of nutritional yeast
  • 2 cups of oat milk

Instructions

  1. Peel your butternut squash and cut it up into small chunks. Put into a deep baking dish and add half of your olive oil and a pinch of salt.
  2. Roast for about 30 minutes.
  3. Add your garlic about 10 minutes before you remove your butternut squash from the oven. Chop up your onions into small chunks and fry in a saucepan with the other half of your olive oil. Once they have turned translucent, add your roasted squash and garlic.
  4. Stir in your lentils and add your tomato puree and cook for about 15 minutes, adding water if it begins to dry up. You can blend if you want a smoother flavor, but leave unblended if you want more texture and if your squash is small enough.
  5. Meanwhile, you can make your bechamel sauce. Heat some oil in a separate pan and add your flour. Cook for a couple of minutes, before adding your oat milk and stirring well. Cook on a low heat and keep stirring, before adding your nutritional yeast. Taste for flavor and add more salt or nutritional yeast if you want more of a cheesy flavor.
  6. Once your butternut squash sauce and bechamel sauce are cooked, remove them from the heat. In a deep baking dish, add a layer of your squash sauce and spread out to cover the dish. Do the same with your bechamel, before adding a layer of lasagna pasta sheets. Repeat this at least once, until you have run out of squash and bechamel sauces.
  7. Once you have constructed your lasagna, cook in the oven for about 30 minutes, and enjoy!

🌱 Vegan Lasagna Roll Ups! 📷 by @elavegan 🌿🌿Recipe: 1/2 tbsp oil 1 onion diced 3 garlic cloves minced One small can mushrooms sliced 1/2 tbsp soy sauce (gluten-free if needed) 100 g (3.5 oz) fresh spinach 360 g (1 1/2 cups) marinara sauce 6-8 lasagna noodles (regular or gluten-free) 400 g (1 2/3 cups) hummus 1/2 tsp cumin (optional) 1/2 tsp paprika (optional) A few tbsp lemon juice (optional) Salt and black pepper to taste 200 g (7 oz) vegan cheese Instructions Cook the lasagna noodles in a large pot (filled with boiling water and salt) according to package directions or until al dente. Ladle about 1/2 cup marinara sauce (or your favorite tomato sauce) in the bottom of a 9×6 (23×15 cm) baking dish (you can use a larger pan). Set aside. While the lasagna noodles cook, heat oil in a pan over medium heat and add the diced onion, garlic, and mushrooms. Saute for about 4 minutes. Then add soy sauce and spinach. Instructions:

  1. Set the oven to 350 F degrees and prepare a baking pan or any kind of oven-proof casserole dish.

This zucchini lasagna is even better than regular lasagna. It’s cheesy, without meat, and done in 70 minutes.

Ingredients:

  • 14.5 oz diced tomato
  • 1/2 teaspoon garlic salt
  • 3 small zucchini
  • 1/2 teaspoon garlic powder
  • 10 oz ricotta
  • 8 oz mozzarella
  • 8 oz tomato sauce
  • 1/2 cup parmesan
  • 1/3 chopped onion
  • 1 egg
  • 1 tablespoon fresh thyme
  • 2 tablespoons fresh basil
  • 2 tablespoons fresh oregano

Instructions:

  • Wash and cut the zucchini into thick strips. Dry the strips out on pieces of paper and add salt.
  • Get a saute pan and heat the olive oil. Cook the onion for 5 minutes.
  • Next, include the tomato sauce, garlic salt, diced tomatoes, and garlic powder.
  • Mix all the ingredients together and let them simmer for 2 to 3 minutes. Add the basil, thyme, and oregano and take the saute pan away from the heat.
  • Set the oven to 375 F degrees and prepare a baking pan.
  • Combine the ricotta, parmesan, and egg in a bowl.
  • Add some of the sauce on the bottom of the pan. Top it off with a layer of zucchini.
  • The next layer is 1/3 of the ricotta mix. Next, add 1/4 of mozzarella.
  • Continue doing the same steps all over again.
  • Cover the baking pan and leave it in the oven for 35 minutes. When the time is up let it bake uncovered for 15 to 20 minutes.
  • Serve the zucchini lasagna right away.

Ingredients:

Get ready to do some shopping!

1lb. ground turkey
2 tablespoons tomato paste
1 lb. lasagna noodles
2 cloves minced garlic
2 tablespoons extra-virgin olive oil
1 can crushed tomatoes
1 finely chopped onion
1 container ricotta
2 tablespoons chopped parsley
1 egg, 1/4 c. torn basil
1 lb. sliced mozzarella
1/2 c. grated parmesan.

Instructions:

The first step is to cook the noodles according to the instructions on the box. When they are done, remove the water and set them on a baking sheet.

Get a large pot and fill it with oil and onion. Cook it on medium heat for five minutes.

Add the ground turkey and the tomato paste. Constantly stir with a wooden spoon for six minutes.

Then, include the basil and tomatoes as well. Add salt and pepper to your liking. Leave the sauce to simmer for twenty minutes.

In another bowl, mix the parmesan, egg, ricotta, parsley, and garlic. Add salt and pepper.

Once this is done, you can start preparing the turkey lasagna. After each layer of noodles add a layer of sauce and ricotta mixture.

You do this until you’re out of ingredients. Bake everything for 35 minutes.

Start by getting a baking dish, and cover it with cooking spray. Add one half of a jar of the marinara sauce on the bottom of the dish. Set the oven to preheat on 400 F degrees. Include one pack of the ravioli on top of the marinara sauce. Cover it with the other half of the marinara sauce from the first jar. You can now add 3/4 cup of the mozzarella cheese and 1/4 cup of the Parmesan cheese. Continue by adding another layer of the marinara sauce. Top it with ravioli, sauce again and the two types of cheese.

This is pretty much it. Now, you only need to cover the baking dish with aluminum foil and leave it in the oven for half an hour. You can now remove the foil and let the ravioli lasagna cook for 15 more minutes. Top them off with basil and the lasagna is ready to be served.
