Iceland is regarded as one of the happiest countries in the world. The nation often ranks first in global reports of happy and peaceful countries as a result of its high quality of life and natural beauty. And now, you could get to soak it all up thanks to a yogurt company.

If you’re not familiar with skyr, it’s an Icelandic dairy product that lies somewhere between yogurt and cheese, depending on who you ask. It has a thick consistency and sour taste, making it totally different from traditional yogurts on the shelves. In fact, that is how Siggi’s began.

Back in 2005, Icelandic native, Siggi Hilmarsson, found yogurts in the US too sweet for his taste and missed the skyr he grew up with. After receiving a recipe from his mother, he decided to make his own and that boomed into a full-time skyr dairy.

Siggi’s now wants to hire someone to enjoy the “more simple life” in Iceland and document it all.

“This freelancing gig of Chief Simplicity Offi-skyr will allow someone to spend time in Iceland living and documenting a simple life during the country’s new, successful 4-day work week,” reads the advert. As part of the job, the “offi-skyr” will use photography, writing, and other means to document the experience of chasing the Northern Lights, waterfalls, glaciers, and all that Iceland’s nature has to offer.

And if that didn’t sound fun enough—the chosen candidate will help come up with new skyr flavors based on Icelandic cuisine. All of this will be compensated up to $50,000 for work commissioned by Siggi’s as part of the gig. So why not?

Pancakes are a delicious way to start your day, but they aren’t the healthiest of breakfasts. There’s a lot of carbs and not much by way of nutrients and protein. Luckily, there are some good ways to add some nutrients. One way of doing this is to use yogurt instead of milk. Many people use buttermilk to add some tanginess and extra fluff to their pancakes. Yogurt is very similar, but with more protein and with probiotics to boot. Here’s how to make yogurt pancakes.

In general, you can use your favorite pancake recipe and replace the milk or buttermilk with yogurt. You may want to add a bit of baking soda as well to complement the acidity of the yogurt in the cooking process. Yogurt will make your pancakes extra fluffy.

You’ll notice that the batter is thicker and smoother than regular pancake batter, and it may not bubble up when you cook the pancake, depending on the recipe. So when deciding whether to flip the pancakes, be sure to keep an eye on how cooked the edges are rather than waiting around for bubbles.

In addition to extra fluff, your pancakes will take on the taste of whatever yogurt you use. So a more acidic yogurt or a thick yogurt will add more tang, more density, or more acidity. This will still be delicious, and it still pairs great with maple syrup, fruit, or other pancake toppings. You may want to add a bit of extra sugar to the batter so that the sweetness can help temper the acidity of the yogurt.

Cutting down on fat in the kitchen can seem like a daunting proposition. Sometimes, recipes call for ingredients that seem like they simply cannot be replaced by a low-fat ingredient. While this may be true sometimes, there are some strategies that you can implement to make smart substitutions. Check these out.

Olive Oil For Butter

Often times, we opt for butter to moisten up a frying pan or as the main fat ingredient in a recipe. There are many situations where this high-fat, unhealthy ingredient can be replaced with olive oil, which is much better for you and lower in saturated fats.

Yogurt For Cream

Are you looking to prepare a recipe that calls from a heavy cream as part of its ingredients, perhaps in a sauce? Don’t be afraid to try using yogurt instead of cream for a lower-fat, healthier alternative.

Cottage Cheese For Cream Cheese

That’s right: cottage cheese, a less dense and fatty ingredient, can be substituted for cream cheese in a wide variety of recipes. The tangy, slightly creamy flavor that cream cheese provides can often be picked up by using cottage cheese instead.

Up until recently, we believed that pretty much any supermarket yogurt is a good choice. You pick it up and eat it when you feel like it or when you don’t have time to prepare anything else. But it turns out that most yogurts are packed with sugar and not as healthy as we thought.

As people started realizing this, the yogurt manufacturers started coming up with more and more kinds to offer to consumers, and now there’s an impossible choice in front of us every time we go to the grocery store. Nutrition labels on the packaging reveal that some yogurt, even the organic ones, have more sugar than a can of Coca-Cola.

According to a study published in the British Medical Journal, most yogurts (out of 900 products included in the research) contain more than 10 percent sugar. This means they have at least 4 teaspoons in 5oz yogurt packaging!

How did this happen? While natural yogurt contains nothing but fermented milk, the companies making it wanted to increase sales so they basically made what people wanted. Yogurts today come with many different flavors and are way less healthy than we typically believe. Keep that in mind the next time you’re in a grocery store.

Skyr is a traditional cultured dairy product from Iceland that recently got our attention as a healthy alternative to yogurt. It’s made from only two ingredients: skimmed milk and cultures, while most yogurts you can buy today come loaded with sugar. That’s right, your favorite go-to healthy food might not be so healthy after all, but you can easily replace it with skyr and stop worrying about it.

Skyr is not exactly a type of yogurt. In fact, it’s much closer to fresh sour milk cheese, but the way you consume it makes it a great alternative for yogurt. It’s not a new thing; it’s been a big part of Icelandic cuisine for hundreds of years.

Skyr is smooth and creamy, with high protein content, which is why it’s a perfect replacement for yogurt. One of the biggest differences between the two is the pasteurization process.

How can you use skyr? In so many different ways! Add it to savory dishes, dips, salad dressings, or mix with fruits for a healthy sweet snack between two meals.

Yogurt is such a versatile ingredient that you can use for so many different kinds of dishes, there is always an occasion to use yogurt. Even if you’re lactose intolerant or vegan, keeping a non-dairy yogurt is super easy to do as well.

Frozen Yogurt

Making yogurt into frozen yogurt is a really simple process! All you need is a flavoring if you want to make it taste beyond yogurt, some honey, and a food processor! Blend everything together, freeze, and you have rich, creamy, healthy, frozen yogurt.

Sauces

There are so many different sauces you can make with yogurt, and the possibility is really endless. You can use it to replace mayo it in existing sauces or make traditional sauces like tzatziki, raita, and more! The easiest thing to do is just combine it with some citrus juice like lemon or lime, salt, pepper, and you have a nicely complex sauce that goes with many different cuisines!

Breakfast

There’s nothing like sitting down to have a proper breakfast, and if you’re someone on the go, yogurt is your best bet. All you have to do is add some toppings like granola, nuts, fruit, or seeds, and you have a complete meal that will keep you going throughout the day.

Yogurt is a versatile, sweet treat that is a fantastic source of vitamins.

From a base of plain yogurt, one can make a large variety of different ways to enjoy yogurt and its health benefits.

So, here are four suggestions for turning a bowl of plain yogurt into a tasty delight.

Berries

One of the most popular ways to eat yogurt is with berries, and it´s easy to see why. Berries add a combination of sweetness and tartness to yogurt that contrasts the dairy backbone of the food.

Try your yogurt with blueberries, blackberries, raspberries, or a combination of all three!

Cinnamon and Brown Sugar

This is one of the best ways to jazz up yogurt and turn it into something savory and unique.

Cinnamon and brown sugar go together as a classic combination, and furthermore, this flavor is perfect for a fall or winter treat.

Granola and Nuts

If you are looking for a heartier option, adding granola and nuts to your yogurt is a great option for making a filling snack.

Choose whichever nuts you prefer, from cashews to almonds.

Crumbled Oreos

Finally, if you´re after a dessert option, this is a perfect way to enjoy a sweet yogurt treat.

If you’re someone who has a sweet tooth and like to take pride in making treats yourself, this is the perfect recipe for you.

Frozen yogurt dots are not only one of the most simple desserts to make, they can be totally customized to fit whatever type of mood you’re in. Whether it’s just you needing a sweet after dinner, or you having friends over for a movie night, these frozen yogurt dots are the way to go.

Ingredients

For this recipe, you only need yogurt! However, you can make it a little more fancy by adding in things like chocolate chips, cocoa powder, honey, chopped nuts, or whatever you fancy. You can also keep them plain and add some rainbow sprinkles on top, which is super fun!

Recipe

  1. Line a baking sheet with parchment paper so the dots come off easily.
  2. Take a small container of yogurt, about 8 oz, and empty it into a bowl. Add in whatever ingredients you like, and if you want to keep it plain, skip this step entirely and go straight to number 3.
  3. Pour the yogurt into a piping bag or a Ziploc bag to make a makeshift piping bag.
  4. Snip off the corner and dot the paper with the yogurt.
  5. Freeze for 4 hours and you have your treats!
