Cookies are universally popular, with their sweet taste and soft, chewy texture. Check out this cookie recipe, and then the three ways to adapt it to suit any taste.

Cookie Recipe

Ingredients (to make 12):

  • 1 cup of plain flour
  • 1 teaspoon of baking powder
  • 2 eggs
  • ½ cup of unsalted butter
  • ¼ cup of dark chocolate chips
  • ¾ cup of dark brown sugar
  • ½ teaspoon of vanilla essence

Instructions:

  1. Sift all of the dry ingredients together, apart from the chocolate chips.
  2. Stir in the butter, when it is well mixed add in the eggs and whisk.
  3. Stir the vanilla essence through the dough.
  4. Wrap the dough in greaseproof paper or clingfilm, and then chill in the fridge for one hour.
  5. Remove from the fridge, roll out and cut the cookies into circles about 2 inches across.
  6. Bake in an oven heated to 320◦F for about 15 minutes.
  7. Leave the cookies to cool on a wire rack for at least half an hour.

Passion Fruit Cookies

To infuse these cookies with a passion fruit twist, follow the recipe above but add ½ cup of passion fruit pulp to the mix at the same time you add the egg. This will make the mix wetter, so you may need to sift in a little extra flour to balance.

Raspberry Ripple

To deliver some delicious raspberry flavor, add ½ cup of fresh or frozen raspberries to the mix at the same time that you add the eggs.

Oat Cookies

To give these cookies extra texture and crumble, swap out half of the flour for oats, instead. You may need to add a little more butter to help the dough bind.

Ingredients:

  • 1/2 cup hot chocolate mix
  • 1 cup marshmallow bits
  • 1/2 teaspoon salt
  • 1 cup light brown sugar
  • 1 teaspoon baking soda
  • 2 3/4 cup flour
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup chopped milk chocolate
  • 1 cup butter at room temperature

Instructions:

  1. Set the oven to 350 F degrees and prepare a baking sheet with paper or cooking spray.
  2. Mix the brown sugar and butter together at medium speed for about a minute.
  3. Next, include the hot chocolate mix and mix everything together for half a minute.
  4. Add the vanilla and eggs. Mix once again to combine the ingredients.
  5. Set the speed to low then pour in the flour, baking soda, and salt. Mix once again.
  6. To finish off, include the marshmallow bits and milk chocolate and then mix everything together.
  7. Use a tablespoon to make the hot chocolate cookies on the baking sheet. Make sure that they are 2 inches apart.
  8. Bake the cookies for 9 to 11 minutes, then take them out to cool down a little.

What’s better than peanut butter cookies? Well, how about peanut butter cookies with chocolate? These peanut butter blossoms are not just the prettiest cookies you’ve ever had, but they’re so delicious.

Ingredients:

  • 1 large egg
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar for rolling
  • 1 teaspoon baking soda
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon kosher salt
  • 1/2 cup softened unsalted butter
  • 36-48 chocolate kisses

Instructions:

  1. Combine the softened butter, 1/2 cup granulated sugar, peanut butter, and brown sugar together.
  2. Get a hand or stand mixer and use medium speed to get a fluffy mixture.
  3. Start adding the vanilla and egg, then mix again. Include the baking soda, salt, flour and use low speed to mix all the ingredients together. Make sure to remove all the lumps you can.
  4. Add a lid to the bowl and place it in the fridge for half an hour.
  5. In the meantime place the unwrapped chocolate kisses in the fridge too.
  6. Take out the batter from the fridge and prepare a baking sheet. Set the oven to 375 F degrees.
  7. You will need 1.5 tablespoon batter for each cookie. Start placing the peanut butter blossoms on the baking sheet after rolling them in sugar and bake for 10 minutes.
  8. When the cookies are done, put one chocolate kiss on each cookie.

These easy pecan shortbread cookies take just 35 minutes and are so divine. You can prepare them during any time of the year and still not get bored.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cups coarsely chopped pecans
  • 1/2 teaspoon pure vanilla extract
  • 1 1/4 sticks unsalted butter at room temperature
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon allspice
  • 1/2 cup confectioners’ sugar
  • 1/2 teaspoon cinnamon
  • pinch cloves
  • pinch nutmeg

Instructions:

  1. Start by setting the oven to 350 F degrees. Prepare a baking sheet and cook the pecans until they get a light brown color.
  2. Combine the confectioners’ sugar, vanilla, salt, and butter together. Start mixing with an electric mixer to achieve a soft, fluffy consistency.
  3. Mix the nutmeg, allspice, cinnamon, and cloves in a bowl. Add the flour and mix again.
  4. Start pouring the flour mix in the butter mix slowly while also beating with the mixer.
  5. Next, include the pecans as well. This is when your dough is done.
  6. Use a roller to get a 1 1/2-inch thick dough and use parchment paper to wrap it.
  7. Place it in the freezer for 1 hour and when it’s done cut the dough into round shapes.
  8. Place the pecan shortbread cookies on a baking sheet and bake them for 10 minutes.

Baklava is such a delicious Mediterranean and Middle Eastern treat, but making it from scratch can be really hard. Instead, opt for these baklava cookies and you can have the best of both worlds!

Ingredients:

  • 1/4 cup of unsalted butter
  • 1/3 cup of powdered sugar
  • Three tablespoons of honey
  • 3/4 cup of chopped walnuts
  • 1/2 teaspoon of cinnamon
  • One package of sugar cookie dough or homemade sugar cookie dough

Instructions:

  1. Over low heat, melt the butter in a small pot.
  2. Once the butter has melted completely, add in the powdered sugar as well as the honey and stir it all together to combine. Once the mixture starts to boil slightly, turn off the heat.
  3. Pour in the chopped walnuts and cinnamon and mix everything well and quickly before the mixture hardens.
  4. Leave the nuts for 30-45 minutes to set.
  5. Cut the cookie dough, either homemade or store-bought, into 24 pieces.
  6. Roll each piece into a ball and put them onto parchment-lined baking sheets.
  7. Bake at 350 F for 9 minutes, and then take them out of the oven. Spoon a bit of the nut mixture in the center of each cookie, and then bake for an additional 2-3 minutes to incorporate the filling.
  8. Cool on a wire rack and enjoy!

Sable cookies are a type of shortbread that originated in France, and they’re super easy to put together yet still very bold in their flavor!

Ingredients 

  • 2 1/4 cups of flour
  • 3/4 teaspoon of cardamom 
  • 3/4 teaspoon of kosher salt
  • 1/2 cup of sugar
  • 2 vanilla beans
  • 1 cup of room temperature unsalted butter
  • 1 egg
  • 1/4 cup of honey 

Instructions

  1. In a medium-sized bowl, whisk the flour, cardamom, and salt. 
  2. Put the sugar into a separate bowl, scrape the seeds out of the vanilla beans and add them to the sugar. Mix the sugar and vanilla with your fingers and then add in the butter and mix on medium until smooth. 
  3. Separate the egg and add the yolk and honey to the butter-sugar mixture. Beat, and then lower the speed to low and add in half the dry ingredients. Mix, and add the other half of the ingredients. 
  4. To make sure everything is incorporated, knead the dough for a couple of minutes. 
  5. Cut the dough in half, make two 9 inch logs and wrap in parchment paper then in plastic wrap. 
  6. Chill for 2 hours, cut the dough into circles, and put them onto a parchment-lined baking tray and bake at 350 F for 13-18, rotating halfway through. 
  7. Cool for 5, transfer to wire racks, and enjoy!

Lavender is such a wonderful aroma to have in your home, but it’s also very delicious! Make these floral cookies and you’ll see for yourself how delightful lavender really is.

Ingredients

  • 2 teaspoons of dried lavender
  • 3/4 pound of room temperature unsalted butter
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 17.5 oz of all-purpose flour
  • 1/2 teaspoon of salt

Recipe

  1. First, grind up the lavender with a spice grinder or in a mortar and pestle.
  2. Then, put the butter, sugar, and lavender into the bowl of a stand mixer and mix it on medium speed with the paddle attachment until well combined.
  3. Add in the vanilla and beat just for a few seconds, and then pour in the flour and mix only until it’s just incorporated and formed a ball.
  4. Take the dough out of the bowl, roll it out on a floured surface so it’s about 1/2 inch thick, and use a cookie cutter or just a cup to stamp out the cookies.
  5. Put the cookies onto a parchment-lined baking sheet and chill in the fridge for 1-2 hours.
  6. Bake the cookies at 350 F for 20-25 minutes or until they’re a darker pale but not golden, and then cool the cookies on a cooling rack and enjoy!

Ingredients:

  • 1/2 cup hot chocolate mix
  • 1 cup marshmallow bits
  • 1/2 teaspoon salt
  • 1 cup light brown sugar
  • 1 teaspoon baking soda
  • 2 3/4 cup flour
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup chopped milk chocolate
  • 1 cup butter at room temperature

Instructions:

  1. Set the oven to 350 F degrees and prepare a baking sheet with paper or cooking spray.
  2. Mix the brown sugar and butter together at medium speed for about a minute.
  3. Next, include the hot chocolate mix and mix everything together for half a minute.
  4. Add the vanilla and eggs. Mix once again to combine the ingredients.
  5. Set the speed to low then pour in the flour, baking soda, and salt. Mix once again.
  6. To finish off, include the marshmallow bits and milk chocolate and then mix everything together.
  7. Use a tablespoon to make the hot chocolate cookies on the baking sheet. Make sure that they are 2 inches apart.
  8. Bake the cookies for 9 to 11 minutes, then take them out to cool down a little.

What’s better than peanut butter cookies? Well, how about peanut butter cookies with chocolate? These peanut butter blossoms are not just the prettiest cookies you’ve ever had, but they’re so delicious.

Ingredients:

  • 1 large egg
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar for rolling
  • 1 teaspoon baking soda
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon kosher salt
  • 1/2 cup softened unsalted butter
  • 36-48 chocolate kisses

Instructions:

  1. Combine the softened butter, 1/2 cup granulated sugar, peanut butter, and brown sugar together.
  2. Get a hand or stand mixer and use medium speed to get a fluffy mixture.
  3. Start adding the vanilla and egg, then mix again. Include the baking soda, salt, flour and use low speed to mix all the ingredients together. Make sure to remove all the lumps you can.
  4. Add a lid to the bowl and place it in the fridge for half an hour.
  5. In the meantime place the unwrapped chocolate kisses in the fridge too.
  6. Take out the batter from the fridge and prepare a baking sheet. Set the oven to 375 F degrees.
  7. You will need 1.5 tablespoon batter for each cookie. Start placing the peanut butter blossoms on the baking sheet after rolling them in sugar and bake for 10 minutes.
  8. When the cookies are done, put one chocolate kiss on each cookie.

These easy pecan shortbread cookies take just 35 minutes and are so divine. You can prepare them during any time of the year and still not get bored.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cups coarsely chopped pecans
  • 1/2 teaspoon pure vanilla extract
  • 1 1/4 sticks unsalted butter at room temperature
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon allspice
  • 1/2 cup confectioners’ sugar
  • 1/2 teaspoon cinnamon
  • pinch cloves
  • pinch nutmeg

Instructions:

  1. Start by setting the oven to 350 F degrees. Prepare a baking sheet and cook the pecans until they get a light brown color.
  2. Combine the confectioners’ sugar, vanilla, salt, and butter together. Start mixing with an electric mixer to achieve a soft, fluffy consistency.
  3. Mix the nutmeg, allspice, cinnamon, and cloves in a bowl. Add the flour and mix again.
  4. Start pouring the flour mix in the butter mix slowly while also beating with the mixer.
  5. Next, include the pecans as well. This is when your dough is done.
  6. Use a roller to get a 1 1/2-inch thick dough and use parchment paper to wrap it.
  7. Place it in the freezer for 1 hour and when it’s done cut the dough into round shapes.
  8. Place the pecan shortbread cookies on a baking sheet and bake them for 10 minutes.

Baklava is such a delicious Mediterranean and Middle Eastern treat, but making it from scratch can be really hard. Instead, opt for these baklava cookies and you can have the best of both worlds!

Ingredients:

  • 1/4 cup of unsalted butter
  • 1/3 cup of powdered sugar
  • Three tablespoons of honey
  • 3/4 cup of chopped walnuts
  • 1/2 teaspoon of cinnamon
  • One package of sugar cookie dough or homemade sugar cookie dough

Instructions:

  1. Over low heat, melt the butter in a small pot.
  2. Once the butter has melted completely, add in the powdered sugar as well as the honey and stir it all together to combine. Once the mixture starts to boil slightly, turn off the heat.
  3. Pour in the chopped walnuts and cinnamon and mix everything well and quickly before the mixture hardens.
  4. Leave the nuts for 30-45 minutes to set.
  5. Cut the cookie dough, either homemade or store-bought, into 24 pieces.
  6. Roll each piece into a ball and put them onto parchment-lined baking sheets.
  7. Bake at 350 F for 9 minutes, and then take them out of the oven. Spoon a bit of the nut mixture in the center of each cookie, and then bake for an additional 2-3 minutes to incorporate the filling.
  8. Cool on a wire rack and enjoy!

Sable cookies are a type of shortbread that originated in France, and they’re super easy to put together yet still very bold in their flavor!

Ingredients 

  • 2 1/4 cups of flour
  • 3/4 teaspoon of cardamom 
  • 3/4 teaspoon of kosher salt
  • 1/2 cup of sugar
  • 2 vanilla beans
  • 1 cup of room temperature unsalted butter
  • 1 egg
  • 1/4 cup of honey 

Instructions

  1. In a medium-sized bowl, whisk the flour, cardamom, and salt. 
  2. Put the sugar into a separate bowl, scrape the seeds out of the vanilla beans and add them to the sugar. Mix the sugar and vanilla with your fingers and then add in the butter and mix on medium until smooth. 
  3. Separate the egg and add the yolk and honey to the butter-sugar mixture. Beat, and then lower the speed to low and add in half the dry ingredients. Mix, and add the other half of the ingredients. 
  4. To make sure everything is incorporated, knead the dough for a couple of minutes. 
  5. Cut the dough in half, make two 9 inch logs and wrap in parchment paper then in plastic wrap. 
  6. Chill for 2 hours, cut the dough into circles, and put them onto a parchment-lined baking tray and bake at 350 F for 13-18, rotating halfway through. 
  7. Cool for 5, transfer to wire racks, and enjoy!

Lavender is such a wonderful aroma to have in your home, but it’s also very delicious! Make these floral cookies and you’ll see for yourself how delightful lavender really is.

Ingredients

  • 2 teaspoons of dried lavender
  • 3/4 pound of room temperature unsalted butter
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 17.5 oz of all-purpose flour
  • 1/2 teaspoon of salt

Recipe

  1. First, grind up the lavender with a spice grinder or in a mortar and pestle.
  2. Then, put the butter, sugar, and lavender into the bowl of a stand mixer and mix it on medium speed with the paddle attachment until well combined.
  3. Add in the vanilla and beat just for a few seconds, and then pour in the flour and mix only until it’s just incorporated and formed a ball.
  4. Take the dough out of the bowl, roll it out on a floured surface so it’s about 1/2 inch thick, and use a cookie cutter or just a cup to stamp out the cookies.
  5. Put the cookies onto a parchment-lined baking sheet and chill in the fridge for 1-2 hours.
  6. Bake the cookies at 350 F for 20-25 minutes or until they’re a darker pale but not golden, and then cool the cookies on a cooling rack and enjoy!
