Hot Chocolate Cookies are Next Level Good

These hot chocolate cookies are so good they’ll blow your mind. What’s even better is that they are so simple to prepare. The total cooking time is around 20 minutes and you’ll get 24 cookies. It’s safe to say that this recipe will satisfy your cravings and warm you up during winter months.

Ingredients:

  • 1/2 cup hot chocolate mix
  • 1 cup marshmallow bits
  • 1/2 teaspoon salt
  • 1 cup light brown sugar
  • 1 teaspoon baking soda
  • 2 3/4 cup flour
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup chopped milk chocolate
  • 1 cup butter at room temperature

It’s cold enough right now for hot coco everything- so here we are, with some hot coco cookies ✨ Ingredients:1/2 cup vegan butter (I used @earthbalance) 3/4 cup coconut sugar (can sub regular) 1 Flax egg 1 Tbsp vanilla extract 2 cups gluten-free flour (can sub regular) 1/4 cup organic cacao 1 tsp baking soda 1/2 tsp salt 2-3 Tbsp almond milk 1/4 cup vegan marshmallows 1/3 cup @lilys_sweets dark chocolate Directions- Start by preheating your oven to 350. Prepare flax egg by mixing 1 Tbsp of flaxseed meal with 3 Tbsp hot water. Mix and set aside. In a mixer, combine butter and coconut sugar until well combined. About 3-4 minutes. Add in flax egg and combine once more. Next, add in gluten-free flour, cacao, baking soda and salt. Mix until well combined. Then, add in almond milk. Mix once more. You may need 3 Tbsp depending on dryness of the mixture. If it’s too dry add the third Tbsp. Add in marshmallows and mix for an additional minutes until mixture is well combined. Fold in dark chocolate chunks to the batter. Then with a cookie scooper, scoop 1 Tbsp worth of batter onto a cookie sheet. Bake for 15 minutes at 350! Enjoy!! #LovelydeLITES

Instructions:

  1. Set the oven to 350 F degrees and prepare a baking sheet with paper or cooking spray.
  2. Mix the brown sugar and butter together at medium speed for about a minute.
  3. Next, include the hot chocolate mix and mix everything together for half a minute.
  4. Add the vanilla and eggs. Mix once again to combine the ingredients.
  5. Set the speed to low then pour in the flour, baking soda, and salt. Mix once again.
  6. To finish off, include the marshmallow bits and milk chocolate and then mix everything together.
  7. Use a tablespoon to make the hot chocolate cookies on the baking sheet. Make sure that they are 2 inches apart.
  8. Bake the cookies for 9 to 11 minutes, then take them out to cool down a little.
