One-pot meals are the perfect solution for busy weeknights when you want to cook something tasty and filling but don’t have the energy to deal with a lot of dishes. They’re also great for anyone who wants to meal prep or save time in the kitchen. The best part is that there are so many different one-pot meal recipes out there to suit any taste. Enjoy this recipe for the perfect one-pot chicken and rice.

Ingredients:

  • 1 tbsp olive oil
  • 4 boneless, skinless chicken thighs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1/2 cup frozen peas
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
  2. Add the onion to the same skillet and cook until softened, about 3-4 minutes. Add the garlic and cook for an additional minute.
  3. Add the rice to the skillet and stir to coat with the onion and garlic. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer, covered, for 18-20 minutes or until the rice is tender and the liquid has been absorbed.

In the mood for a quick sweet and salty snack? Then look no further than these deliciously simple Chocolate Crunchy Sweet and Salty Peanut Bars. They don’t have the catchiest name, but when you’re in the mood for a quick treat that tastes like it took hours to make, these hit the spot every time.

You don’t have to be a professional chef to have these in your fridge whenever you’d like. All the ingredients are super easy to find and you can even play around with the measurements or add any other little treats you’d like. We recommend marshmallows, M&Ms or Rice Krispies, but they’re also delicious just the way they’re intended.

Ingredients:

  • 7 ounces dark chocolate
  • 3.5 ounces milk chocolate
  • 8.8 ounces salted peanuts
  • 4.4 ounces unsalted butter
  • 3 Tablespoons golden syrup
  • 8 x 40-gram Crunchie bars (or any honeycomb chocolate)

Instructions:

  1. Break the chocolate pieces into a medium pot and add the golden syrup and butter. Melt everything together gently on a low heat.
  2. Crush the Crunchie or honeycomb chocolate into smaller chunks and add to a large bowl with the peanuts.
  3. Once the chocolate mixture is fully melted, take it off the heat and pour all over the peanut mixture, stirring until it’s all combined.
  4. Pour the mixture into a lined baking sheet, smoothing the mixture into all four corners.
  5. Sprinkle some extra peanuts and honeycomb over the top, if you’d like, and set in the fridge for at least two hours, or until it’s set.
  6. Cut into as many pieces as you’d like. It’s pretty sweet and dense, so we’d recommend smaller pieces.
  7. Share with friends—or keep all for yourself. Enjoy!

Dried fruit is one of our favorite on-the-go snack foods. Not only is it incredibly portable and easy to take to work or on a Saturday morning run, but dried fruit is also healthy, retaining most of the nutritional properties of fresh fruit.

Nearly any type of fruit can be dried, meaning that you can choose to make whichever dried fruit you like the most. And contrary to popular belief, you don’t need a hot, sunny day or a commercial food dehydrator in order to make it!

Here is your guide to making dried fruit at home using only a conventional oven.

Instructions:

  1. Start off by preheating your oven to a very low temperature, around 170 or 175 degrees. 
  2. Next, you’ll want to slice the fruit that you want to try, assuming that it comes from a larger fruit like a peach or an apple. If it’s a berry or a small fruit like blueberries or grapes, you can leave it whole.
  3. Arrange the slices or fruits on a baking sheet, without allowing them to touch each other. Place the sheet in the oven and leave your oven’s door open, ever so slightly.
  4. Flip the fruit every 30 minutes, and monitor its drying process. This can take anywhere between 3 to 8 hours depending on how thick the slices are and how much water is contained in the fruit.
  5. Once finished, allow the fruit to “rest” overnight before packaging or eating it. Enjoy!

Instructions

Start off by draining your can of tuna and placing it into a medium-sized bowl. After you’ve done that, go ahead and add the mayonnaise and stir the two ingredients together thoroughly.

Next, take a dill pickle slice and cut it into very small pieces, about 0.5 by 0.5 inches. Add these to the mayonnaise and tuna mixture.

The next step is to take two teaspoons of the dill pickle juice from the inside of your jar of pickles and add it.

Finally, finely chop half of a small white onion and add it into the bowl with the rest of the ingredients. Stir thoroughly, being sure to blend everything together evenly.

Your tuna salad is now ready. Enjoy!

  1. Preheat oven to 225 degreed F (107 C).

Ingredients:

  • 2 slices of fresh bread
  • 1 tomato
  • 1.5 teaspoons olive oil
  • 1 garlic clove
  • Salt, to taste

Instructions:

  1. Start off by preparing the tomato which will be the base of this tasty toast. Wash it, cut it in half, and then use a grater to liquefy and separate the body of the tomato from its skin. Do this process into a bowl.
  2. Once you’ve done this, use either a toaster or a small frying pan with a little bit of olive oil in it to toast your two bread slices.
  3. When the bread is toasted, rub the garlic cloves on the sliced bread to give it a little bit of garlic essence.
  4. After this, you’ll want to take the tomato from the bowl and spread it generously and thickly onto the garlicky toast.

  4. Pour the mixture into a lined baking sheet, smoothing the mixture into all four corners.
  5. Sprinkle some extra peanuts and honeycomb over the top, if you’d like, and set in the fridge for at least two hours, or until it’s set.
  6. Cut into as many pieces as you’d like. It’s pretty sweet and dense, so we’d recommend smaller pieces.

What’s your favorite way to enjoy eggs? Whether you like them hard-boiled, over-easy, or scrambled, this popular food is a favorite at breakfast time and during the rest of the day in most places. One of our favorite ways to eat eggs is scrambled with cheese. Want to learn how to make these perfectly with little effort? Here’s how:

Ingredients:

  • 4 eggs
  • 1 tablespoon milk
  • ¼ cup shredded cheddar cheese
  • Olive oil
  • Salt
  • Black pepper

Instructions:

  1. Start off with a frying pan and a little bit of olive oil. Place the pan on medium heat on the stove.
  2. Next, you’ll want to break the eggs into the pan and whisk them together thoroughly, being sure to fully mix the egg whites with the yolks.
  3. After you’ve done this, add the milk to the blended eggs and whisk together thoroughly. The milk will add an extra creaminess to the texture of the scrambled eggs!
  4. Finally, add the cheese, stir together, and wait for the eggs to become slightly fluffy. Move and mix the eggs to be sure that they don’t burn and that they are cooked evenly.
  5. Take the scrambled eggs out, place them on a plate, and add salt and black pepper to taste. Enjoy!

Dried fruit is one of our favorite on-the-go snack foods. Not only is it incredibly portable and easy to take to work or on a Saturday morning run, but dried fruit is also healthy, retaining most of the nutritional properties of fresh fruit.

Nearly any type of fruit can be dried, meaning that you can choose to make whichever dried fruit you like the most. And contrary to popular belief, you don’t need a hot, sunny day or a commercial food dehydrator in order to make it!

Here is your guide to making dried fruit at home using only a conventional oven.

Instructions:

  1. Start off by preheating your oven to a very low temperature, around 170 or 175 degrees. 
  2. Next, you’ll want to slice the fruit that you want to try, assuming that it comes from a larger fruit like a peach or an apple. If it’s a berry or a small fruit like blueberries or grapes, you can leave it whole.
  3. Arrange the slices or fruits on a baking sheet, without allowing them to touch each other. Place the sheet in the oven and leave your oven’s door open, ever so slightly.
  4. Flip the fruit every 30 minutes, and monitor its drying process. This can take anywhere between 3 to 8 hours depending on how thick the slices are and how much water is contained in the fruit.
  5. Once finished, allow the fruit to “rest” overnight before packaging or eating it. Enjoy!

  • One can (5 oz) tuna
  • 1 tablespoon mayonnaise
  • 1 dill pickle slice
  • 2 teaspoons dill pickle juice

Instructions

Start off by draining your can of tuna and placing it into a medium-sized bowl. After you’ve done that, go ahead and add the mayonnaise and stir the two ingredients together thoroughly.

Next, take a dill pickle slice and cut it into very small pieces, about 0.5 by 0.5 inches. Add these to the mayonnaise and tuna mixture.

The next step is to take two teaspoons of the dill pickle juice from the inside of your jar of pickles and add it.

Finally, finely chop half of a small white onion and add it into the bowl with the rest of the ingredients. Stir thoroughly, being sure to blend everything together evenly.

Your tuna salad is now ready. Enjoy!

  • 1 large bundle curly green, purple or Tuscan kale
  • 2 tablespoons extra virgin olive oil

  • Seasonings of your choice (1 tbsp grated Parmesan cheese, 1 tsp chili powder, 1 tsp cumin, 1 tsp curry powder, or 1 tsp fresh lemon zest)

Instructions:

  1. Preheat oven to 225 degreed F (107 C). 
  2. Rinse the kale thoroughly and dry it well. Rip off the stems and tear the kale into pieces.
  3. Add the kale to a large mixing bowl. Drizzle the olive oil and add the seasonings. Mix well using your hands to ensure all of the kale is coated.
  4. Spread the kale over a baking sheet making sure they are not overlapping.
  5. Bake for about 20 minutes or until kale is crispy and slightly golden.
  6. Remove from the oven and let cool.

Pan Tumaca, a classic Spanish breakfast dish that is served in homes and cafeterias throughout the country, is easy to prepare, savory, and delicious. Let’s learn how to make it!

Ingredients:

  • 2 slices of fresh bread
  • 1 tomato
  • 1.5 teaspoons olive oil
  • 1 garlic clove
  • Salt, to taste

Instructions:

  1. Start off by preparing the tomato which will be the base of this tasty toast. Wash it, cut it in half, and then use a grater to liquefy and separate the body of the tomato from its skin. Do this process into a bowl.
  2. Once you’ve done this, use either a toaster or a small frying pan with a little bit of olive oil in it to toast your two bread slices.
  3. When the bread is toasted, rub the garlic cloves on the sliced bread to give it a little bit of garlic essence.
  4. After this, you’ll want to take the tomato from the bowl and spread it generously and thickly onto the garlicky toast.
  5. Finish it off by adding ¾ of a tablespoon of olive oil to each piece of toast and adding a pinch of salt, to taste. Enjoy!
