Ingredients:
- 1 tbsp olive oil
- 4 boneless, skinless chicken thighs
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 1/2 cups chicken broth
- 1/2 cup frozen peas
- Salt and pepper, to taste
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
- Add the onion to the same skillet and cook until softened, about 3-4 minutes. Add the garlic and cook for an additional minute.
- Add the rice to the skillet and stir to coat with the onion and garlic. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer, covered, for 18-20 minutes or until the rice is tender and the liquid has been absorbed.
