One-pot meals are the perfect solution for busy weeknights when you want to cook something tasty and filling but don’t have the energy to deal with a lot of dishes. Ingredients:

  • 1 tbsp olive oil
  • 4 boneless, skinless chicken thighs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1/2 cup frozen peas
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
  2. Add the onion to the same skillet and cook until softened, about 3-4 minutes. Add the garlic and cook for an additional minute.
  3. Add the rice to the skillet and stir to coat with the onion and garlic. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer, covered, for 18-20 minutes or until the rice is tender and the liquid has been absorbed.
  4. Stir in the frozen peas and return the chicken to the skillet. Cover and cook for an additional 5-7 minutes, until the chicken is cooked through and the peas are heated through. Season with salt and pepper to taste.
