You have probably heard about the many benefits of quinoa, but have you tried it for breakfast yet? Quinoa is a great way to start the day because it will provide you with a hefty serving of protein, vitamins, and fiber. One way to have it is in the form of porridge, with pumpkin and lots of spice. Leftovers can be kept in the refrigerator for up to six days. Here’s how to make pumpkin quinoa porridge.

Ingredients:

  • 1 1/2 cups uncooked quinoa (rinsed)
  • 12 ounces almond milk
  • 8 ounces of water
  • Coconut oil as needed (for rice cooker option)
  • 1 cup to 1 1/2 cups pumpkin puree (a few tbsp for topping as well)
  • 1/3 cup additional coconut milk
  • 1/3 cup unsweetened shredded coconut
  • 1 teaspoon cinnamon (and some for topping)
  • 1/2 teaspoon pumpkin spice (optional)
  • pinch of ground ginger (optional)
  • 4 + 1 tablespoon maple syrup or honey (adjust to taste)
  • Toppings of choice: chopped nuts, gluten-free oats or granola, etc

Instructions:

  1. In a medium pot, bring water and milk to a light boil then add quinoa and cover on low to medium-low.
  2. About halfway through cooking (8 or 9 minutes) stir in your pumpkin puree. Cover again and wait till it’s cooked and the quinoa is fluffy (about another 8-10 minutes or so).
  3. Turn off the heat and keep the pumpkin quinoa on the burner. Stir in the liquid coconut milk or canned coconut milk and spices. Mix thoroughly
  4. Stir in shredded coconut and maple syrup.
  5. Spoon into bowls and top with 1 tablespoon of additional pumpkin and more coconut milk for extra creaminess if you’d like. You can also sprinkle with additional cinnamon and toppings of your choice.

Pumpkin doesn’t have to be one of those foods you only eat during the fall. It’s also a great winter comfort food and this creamy pumpkin pasta is what you perfect for breakfast, lunch, or dinner.

Ingredients:

  • 1 lb penne pasta
  • 1 15-oz can pumpkin puree
  • 1/4 teaspoon nutmeg
  • 3 garlic cloves
  • 1/2 teaspoon chili powder
  • 1/4 cup greek yogurt
  • 2 tablespoons olive oil
  • freshly ground black pepper
  • 1 1/2 cups vegetable broth
  • 1/2 cup shredded parmesan cheese
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Fill a pot with water and salt and wait for it to start boiling. Once it does you can include the pasta and wait for it to be done.
  2. When the pasta is done, discard the water and leave the pasta in the pot.
  3. Get a skillet and heat the olive oil. Mince the garlic and add it to the oil. Let it cook for 1 to 2 minutes.
  4. Pour the broth and pumpkin puree to the mix. Add the nutmeg, chili powder, kosher salt, black pepper, and red pepper flakes. Mix all the ingredients very well together.
  5. Cover the pot and wait for it to start simmering. Let it cook for 10 to 15 minutes.
  6. When the pumpkin sauce becomes thick, add 1/2 cup of the sauce in a bowl and mix it with the greek yogurt.
  7. Transfer the mix back to the pan and pour in the parmesan cheese.
  8. Serve the pumpkin pasta right away, topped with parmesan cheese.

Over the past few months we’ve been doing a lot of baking and banana bread has been on heavy rotation. But it’s time to try a new bread—pumpkin bread. Pumpkin bread is perfect for this time of year and it’s a great way to enjoy the seasonal squash. This pumpkin bread is super moist and fluffy and here’s how to make it.

Ingredients:

  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, lightly beaten
  • 1 can (15 ounces) solid-packed pumpkin
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 cup water

Instructions:

  1. Preheat the oven to 350 F.
  2. In a large bowl, combine sugar, oil, and eggs. Add pumpkin and mix well.
  3. Combine the flour, baking soda, salt, cinnamon, nutmeg, baking powder, cloves, and allspice in another bowl.
  4. Combine the flour mixture with the pumpkin mixture and mix. Then add the water and mix.
  5. Pour into two greased 9×5-inch loaf pans and place the bread into the oven.
  6. Bake until a toothpick can be inserted into the center of the loaf and it comes out clean, around 60-65 minutes.

The way you serve food is so important and if you are as obsessed with pumpkins as the rest of the world, we have the best appetizer for you. This pumpkin-shaped cheese ball is the cutest thing ever and goes great with any kind of side that you like.

Ingredients:

  • 1 cup shredded sharp cheddar cheese
  • 1 1.1-oz package fiesta ranch dip mix
  • 2 finely chopped green onions
  • 2 8-oz packages cream cheese, at room temperature
  • 3/4 cup finely crushed cheddar chips
  • 1/2 of bell pepper, chopped small
  • yarn

Instructions:

  • Get a large bowl and fill it with cream cheese, ranch dip mix, cheddar cheese, green onions, and bell pepper.
  • Mix all the ingredients together.
  • Make a ball out of the mixture and cover it in plastic wrap.
  • Put the cheese ball in the fridge at leave it there for 2 hours.
  • While you’re waiting, crush the chips with the help of a rolling pin.
  • Take out the ball and cover it with the crushed chips. Use the step of the bell pepper as a stem for the pumpkin cheese ball.
  • You will need the yarn to create the look of a pumpkin. Simply press it on several spots and you’ll get the shape that you need.
  • Serve it with your favorite sides.

It’s fall, which means that pumpkin-flavored drinks and desserts are taking over. From the pumpkin spice latte that you order at your local coffee shop to the pumpkin pie that’s served on Thanksgiving tables, pumpkin is definitely a heavyweight in these months of the year.

Looking for a new twist on a pumpkin-flavored drink? Check out this tasty pumpkin coffee cocktail that’s sure to please!

Ingredients:

  • 6 parts strong brewed coffee
  • 2 parts Fulton’s Harvest pumpkin pie cream liqueur (or similar)
  • 1 part half and half
  • Brown sugar, to taste
  • Grated nutmeg, to taste
  • Ground cinnamon, to taste

Instructions:

  1. Start off by brewing six ounces of strong coffee. You’ll use this as the backbone of the drink.
  2. Once you’ve done this, add it into a glass mug. Then, go ahead and add the pumpkin pie cream liqueur and the half and half and stir thoroughly.
  3. Now, you’ll want to stir the brown sugar into the drink. Depending on how sweet you want this drink to be, you can use either a little or a lot.
  4. A nice foam should have formed on top of the drink. Sprinkle grated nutmeg and ground cinnamon to give it a beautiful garnish.

You have probably heard about the many benefits of quinoa, but have you tried it for breakfast yet? Quinoa is a great way to start the day because it will provide you with a hefty serving of protein, vitamins, and fiber. One way to have it is in the form of porridge, with pumpkin and lots of spice. Leftovers can be kept in the refrigerator for up to six days. Here’s how to make pumpkin quinoa porridge.

Ingredients:

  • 1 1/2 cups uncooked quinoa (rinsed)
  • 12 ounces almond milk
  • 8 ounces of water
  • Coconut oil as needed (for rice cooker option)
  • 1 cup to 1 1/2 cups pumpkin puree (a few tbsp for topping as well)
  • 1/3 cup additional coconut milk
  • 1/3 cup unsweetened shredded coconut
  • 1 teaspoon cinnamon (and some for topping)
  • 1/2 teaspoon pumpkin spice (optional)
  • pinch of ground ginger (optional)
  • 4 + 1 tablespoon maple syrup or honey (adjust to taste)
  • Toppings of choice: chopped nuts, gluten-free oats or granola, etc

Instructions:

  1. In a medium pot, bring water and milk to a light boil then add quinoa and cover on low to medium-low.
  2. About halfway through cooking (8 or 9 minutes) stir in your pumpkin puree. Cover again and wait till it’s cooked and the quinoa is fluffy (about another 8-10 minutes or so).
  3. Turn off the heat and keep the pumpkin quinoa on the burner. Stir in the liquid coconut milk or canned coconut milk and spices. Mix thoroughly
  4. Stir in shredded coconut and maple syrup.
  5. Spoon into bowls and top with 1 tablespoon of additional pumpkin and more coconut milk for extra creaminess if you’d like. You can also sprinkle with additional cinnamon and toppings of your choice.

Pumpkin doesn’t have to be one of those foods you only eat during the fall. It’s also a great winter comfort food and this creamy pumpkin pasta is what you perfect for breakfast, lunch, or dinner.

Ingredients:

  • 1 lb penne pasta
  • 1 15-oz can pumpkin puree
  • 1/4 teaspoon nutmeg
  • 3 garlic cloves
  • 1/2 teaspoon chili powder
  • 1/4 cup greek yogurt
  • 2 tablespoons olive oil
  • freshly ground black pepper
  • 1 1/2 cups vegetable broth
  • 1/2 cup shredded parmesan cheese
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. Fill a pot with water and salt and wait for it to start boiling. Once it does you can include the pasta and wait for it to be done.
  2. When the pasta is done, discard the water and leave the pasta in the pot.
  3. Get a skillet and heat the olive oil. Mince the garlic and add it to the oil. Let it cook for 1 to 2 minutes.
  4. Pour the broth and pumpkin puree to the mix. Add the nutmeg, chili powder, kosher salt, black pepper, and red pepper flakes. Mix all the ingredients very well together.
  5. Cover the pot and wait for it to start simmering. Let it cook for 10 to 15 minutes.
  6. When the pumpkin sauce becomes thick, add 1/2 cup of the sauce in a bowl and mix it with the greek yogurt.
  7. Transfer the mix back to the pan and pour in the parmesan cheese.
  8. Serve the pumpkin pasta right away, topped with parmesan cheese.

Over the past few months we’ve been doing a lot of baking and banana bread has been on heavy rotation. But it’s time to try a new bread—pumpkin bread. Pumpkin bread is perfect for this time of year and it’s a great way to enjoy the seasonal squash. This pumpkin bread is super moist and fluffy and here’s how to make it.

Ingredients:

  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, lightly beaten
  • 1 can (15 ounces) solid-packed pumpkin
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 cup water

Instructions:

  1. Preheat the oven to 350 F.
  2. In a large bowl, combine sugar, oil, and eggs. Add pumpkin and mix well.
  3. Combine the flour, baking soda, salt, cinnamon, nutmeg, baking powder, cloves, and allspice in another bowl.
  4. Combine the flour mixture with the pumpkin mixture and mix. Then add the water and mix.
  5. Pour into two greased 9×5-inch loaf pans and place the bread into the oven.
  6. Bake until a toothpick can be inserted into the center of the loaf and it comes out clean, around 60-65 minutes.

The way you serve food is so important and if you are as obsessed with pumpkins as the rest of the world, we have the best appetizer for you. This pumpkin-shaped cheese ball is the cutest thing ever and goes great with any kind of side that you like.

Ingredients:

  • 1 cup shredded sharp cheddar cheese
  • 1 1.1-oz package fiesta ranch dip mix
  • 2 finely chopped green onions
  • 2 8-oz packages cream cheese, at room temperature
  • 3/4 cup finely crushed cheddar chips
  • 1/2 of bell pepper, chopped small
  • yarn

Instructions:

  • Get a large bowl and fill it with cream cheese, ranch dip mix, cheddar cheese, green onions, and bell pepper.
  • Mix all the ingredients together.
  • Make a ball out of the mixture and cover it in plastic wrap.
  • Put the cheese ball in the fridge at leave it there for 2 hours.
  • While you’re waiting, crush the chips with the help of a rolling pin.
  • Take out the ball and cover it with the crushed chips. Use the step of the bell pepper as a stem for the pumpkin cheese ball.
  • You will need the yarn to create the look of a pumpkin. Simply press it on several spots and you’ll get the shape that you need.
  • Serve it with your favorite sides.

Ingredients:

  • 6 parts strong brewed coffee
  • 2 parts Fulton’s Harvest pumpkin pie cream liqueur (or similar)
  • 1 part half and half
  • Brown sugar, to taste
  • Grated nutmeg, to taste
  • Ground cinnamon, to taste

Instructions:

  1. Start off by brewing six ounces of strong coffee. You’ll use this as the backbone of the drink.
  2. Once you’ve done this, add it into a glass mug. Then, go ahead and add the pumpkin pie cream liqueur and the half and half and stir thoroughly.
  3. Now, you’ll want to stir the brown sugar into the drink. Depending on how sweet you want this drink to be, you can use either a little or a lot.
  4. A nice foam should have formed on top of the drink. Sprinkle grated nutmeg and ground cinnamon to give it a beautiful garnish.
