This soup is very simple to make but is sure to impress. Its brilliant green color is indicative of how many delicious vegetables are in it, and it’s fresh, savory flavor will leave you wanting more. Thanks to the peas and edamame, this soups packs a generous portion of protein and makes for a perfect well-rounded lunch.

Ingredients:

(Serves 4)

  • 1 broccoli head
  • 1 sweetheart cabbage head
  • 3 cups of frozen peas
  • 2 cups of frozen edamame beans 
  • 2 large leeks 
  • 3 cloves garlic 
  • 4 scallions 
  • 1 cup of fresh basil leaves
  • 1 cup of fresh parsley
  • 4 cups of veg stock
  • Salt and pepper, to taste

Instructions:

  1. Chop the broccoli into small pieces and finely slice the cabbage, leeks, garlic, and scallions.
  2. Heat some oil in a large pot and add the broccoli, leeks, and cabbage.
  3. Fry for 10 minutes and then add the garlic, scallions, salt, and pepper.
  4. Continue to fry for a further 10 minutes.
  5. Add the frozen peas, edamame, and veg stock and increase the heat.
  6. Leave it to simmer for 5 minutes stirring regularly.
  7. Meanwhile, tear the basil leaves and parsley up.
  8. After the 5 minutes is up, add the basil and parsley to the pot.
  9. Leave to simmer for a further 5-10 minutes.
  10. Remove from the heat and blitz with a stick blender until smooth.
  11. Return to the heat for another 5-10 minutes, stirring frequently.
  12. Serve hot with crusty bread.

Ingredients:

For the soup:

  • 1/2 chopped large onion
  • 4 minced garlic cloves
  • 1 15-oz can kidney beans, rinsed and drained

  • 1 chopped red bell pepper
  • 1 cup mild salsa
  • 5 cups reduced-sodium chicken broth
  • 1 15-oz can black beans, rinsed and drained

  • 1 10-oz can mild enchilada sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika

To add:

  • 1 cup freshly grated pepper jack cheese
  • 1 cup freshly grated sharp cheddar cheese

  • shredded cheese

Instructions:

  1. Turn on the stove on medium heat. Prepare a large pot or a Dutch oven.

Parsnips are an amazing root vegetable that don’t get enough attention! Luckily in this soup, they are the star and you will be happy they are!

Ingredients:

  • 1 pound of parsnips
  • 1 pound of carrots
  • 28 oz of broth
  • 3 cups of water
  • 1 cup of chopped leeks
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat up a little bit of olive oil in a heavy-bottomed pot over medium heat.
  2. Add in the leeks once the oil is hot. If you don’t mind making this non-vegan, you can also add in some butter for flavor.
  3. Cook the leeks until they’re soft.
  4. While they cook, chop up the parsnips and carrots into rounds that are roughly the same size. This will allow them to cook at the same rate.
  5. Add in the carrots and parsnips into the pot, along with all the liquids, and bring to a boil.
  6. Bring the pot down to a simmer and cook for 45 minutes or until the vegetables are fork-tender.
  7. Blend the soup with a stand or hand blender until smooth.
  8. Taste the soup to check for seasonings, and add as much pepper and salt as necessary.
  9. Serve right away or keep in the freezer for the perfect winter lunch!

  • 3/4 cup cooked small pasta such as orzo
  • lemon wedges
  • red pepper flakes

Instructions:

  • Combine the breadcrumbs, ground meat, 1/4 cup parmesan cheese, 1 egg, 1/4 cup Pecorino Romano cheese, salt, pepper, and oregano together.
  • Mix all the ingredients and divide the meat into 20 to 30 balls.

Ingredients:

  • 4 minced garlic cloves
  • 1 teaspoon pepper
  • 12 oz beer
  • 6 oz sliced bacon
  • 4 links bratwurst cut into 1-inch pieces
  • 1/4 cup chopped fresh parsley
  • 1 1/2 pounds peeled and diced russet potatoes
  • 1 chopped large onion
  • 1 tablespoon fresh thyme
  • 4 cups low-sodium chicken stock

Instructions:

Set the stove to medium-high and place a pot over it. Cook the bacon to be crisp. Place it on a plate on the side.

Start cooking the bratwurst in the same pot for a few minutes until it’s lightly brown.

When it’s done remove the fat from the pot. Cook the onion for 3 minutes. Pour the beer and turn up the heat to high. Use a wooden spoon to clean the pot.

This soup is very simple to make but is sure to impress. Its brilliant green color is indicative of how many delicious vegetables are in it, and it’s fresh, savory flavor will leave you wanting more. Thanks to the peas and edamame, this soups packs a generous portion of protein and makes for a perfect well-rounded lunch.

Ingredients:

(Serves 4)

  • 1 broccoli head
  • 1 sweetheart cabbage head
  • 3 cups of frozen peas
  • 2 cups of frozen edamame beans 
  • 2 large leeks 
  • 3 cloves garlic 
  • 4 scallions 
  • 1 cup of fresh basil leaves
  • 1 cup of fresh parsley
  • 4 cups of veg stock
  • Salt and pepper, to taste

Instructions:

  1. Chop the broccoli into small pieces and finely slice the cabbage, leeks, garlic, and scallions.
  2. Heat some oil in a large pot and add the broccoli, leeks, and cabbage.
  3. Fry for 10 minutes and then add the garlic, scallions, salt, and pepper.
  4. Continue to fry for a further 10 minutes.
  5. Add the frozen peas, edamame, and veg stock and increase the heat.
  6. Leave it to simmer for 5 minutes stirring regularly.
  7. Meanwhile, tear the basil leaves and parsley up.
  8. After the 5 minutes is up, add the basil and parsley to the pot.
  9. Leave to simmer for a further 5-10 minutes.
  10. Remove from the heat and blitz with a stick blender until smooth.
  11. Return to the heat for another 5-10 minutes, stirring frequently.
  12. Serve hot with crusty bread.

Ingredients:

  • 4 cups chicken or vegetable broth
  • 1 cup dried brown lentils
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 2 tablespoons tomato paste
  • 2 teaspoons chilli powder
  • 1 yellow onion
  • 2 medium carrots
  • 3 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper

Instructions:

  1. Warm a large pot of oil over medium heat. Put onions and carrots into the pot and cook until softened, stirring for about 8 to 10 minutes. Add garlic and stir for another minute.
  2. Add tomato paste and stir for around 1 to 2 minutes until it appears brick red. Then, add the paprika, chili powder, cumin, pepper, and salt, stirring the mixture for another 30 seconds.
  3. Add broth and lentils to the mix and stir, bringing the mixture to a boil before reducing the heat to low. Allow the soup to simmer for around 35 to 40 minutes until thickened. Then allow to cool slightly before serving. Sprinkle parsley for decoration.

For the Meatballs:

  • 1 egg, beaten
  • 1/2 cup rice

  • 1/2 minced carrot

For the Albondigas Soup:

  • 3 stalks celery, cut into chunks
  • 1 teaspoon oregano
  • 6 cups chicken broth
  • 1 16-oz can diced tomatoes

  • 1 sliced large zucchini
  • salt
  • 1/2 teaspoon ground cumin
  • pepper
  • 1/2 cup cilantro

Instructions:

  1. Mix all the ingredients for the meatballs together. When you’re done, create the meatballs and place them on a plate.
  2. Next, get a large pot and fill it with the celery, chicken broth, cumin, tomatoes, tomato liquid, cilantro, onion, and oregano.
  3. Wait for the soup to start boiling, then let it simmer for 10 minutes.

Ingredients:

For the soup:

  • 1/2 chopped large onion

  • 1 15-oz can kidney beans, rinsed and drained

  • 1 chopped red bell pepper
  • 1 cup mild salsa
  • 5 cups reduced-sodium chicken broth
  • 1 15-oz can black beans, rinsed and drained

  • 1 10-oz can mild enchilada sauce

  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika

To add:

  • 1 cup freshly grated pepper jack cheese
  • 1 cup freshly grated sharp cheddar cheese

Instructions:

  1. Turn on the stove on medium heat. Prepare a large pot or a Dutch oven.
  2. Cook the meat until it gets a brown color together with the onion, and remove the extra liquid. Add the garlic, red bell pepper, and the spices. Let it cook for 3 more minutes.

Parsnips are an amazing root vegetable that don’t get enough attention! Luckily in this soup, they are the star and you will be happy they are!

Ingredients:

  • 1 pound of parsnips
  • 1 pound of carrots
  • 28 oz of broth
  • 3 cups of water
  • 1 cup of chopped leeks
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat up a little bit of olive oil in a heavy-bottomed pot over medium heat.
  2. Add in the leeks once the oil is hot. If you don’t mind making this non-vegan, you can also add in some butter for flavor.
  3. Cook the leeks until they’re soft.
  4. While they cook, chop up the parsnips and carrots into rounds that are roughly the same size. This will allow them to cook at the same rate.
  5. Add in the carrots and parsnips into the pot, along with all the liquids, and bring to a boil.
  6. Bring the pot down to a simmer and cook for 45 minutes or until the vegetables are fork-tender.
  7. Blend the soup with a stand or hand blender until smooth.
  8. Taste the soup to check for seasonings, and add as much pepper and salt as necessary.
  9. Serve right away or keep in the freezer for the perfect winter lunch!

Ingredients:

  • 3 large eggs
  • 1/2 cup grated parmesan cheese
  • 12 oz ground meat
  • 3 tablespoons olive oil
  • 1 bunch greens such as escarole, cut into pieces

  • 1/2 cup dry breadcrumbs
  • 4 minced cloves garlic
  • 8 cups low-sodium chicken broth
  • 1/2 cup grated Pecorino Romano cheese
  • 1 diced medium yellow onion
  • 1 tablespoon chopped fresh oregano leaves
  • 3/4 cup cooked small pasta such as orzo
  • lemon wedges
  • red pepper flakes

Instructions:

  • Combine the breadcrumbs, ground meat, 1/4 cup parmesan cheese, 1 egg, 1/4 cup Pecorino Romano cheese, salt, pepper, and oregano together.
  • Mix all the ingredients and divide the meat into 20 to 30 balls.

Ingredients:

  • 4 minced garlic cloves
  • 1 teaspoon pepper
  • 12 oz beer
  • 6 oz sliced bacon
  • 4 links bratwurst cut into 1-inch pieces
  • 1/4 cup chopped fresh parsley
  • 1 1/2 pounds peeled and diced russet potatoes
  • 1 chopped large onion
  • 1 tablespoon fresh thyme
  • 4 cups low-sodium chicken stock

Instructions:

Set the stove to medium-high and place a pot over it. Cook the bacon to be crisp. Place it on a plate on the side.

Start cooking the bratwurst in the same pot for a few minutes until it’s lightly brown.

When it’s done remove the fat from the pot. Cook the onion for 3 minutes. Pour the beer and turn up the heat to high. Use a wooden spoon to clean the pot.

Cook for 3 more minutes, then lower the heat. Include the garlic, bacon, stock, potatoes, thyme, pepper.

Let it boil, then lower it to simmer. Cover the pot and cook for 20 to 30 minutes. The potatoes should be very soft.

Mash the potatoes in a blender and pour them back in the pot. Cook for 5 extra minutes. You can now pour the bratwurst soup in bowls. Add parsley on top.
