  • 4 tablespoons unsalted butter
  • 1/4 cup of all-purpose flour
  • 2 cups of milk (whole or 2% recommended)
  • 2 cups of shredded cheddar cheese
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/4 cup of grated Parmesan cheese
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside. In a large pot of salted boiling water, blanch the cauliflower florets for 3-4 minutes, or until slightly tender. Drain well and transfer to the prepared baking dish.
  2. In a separate saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook the roux for 1-2 minutes, stirring constantly, until golden brown and fragrant. Gradually whisk in the milk, stirring constantly to prevent lumps from forming. Cook the sauce until thickened, about 5-7 minutes.
  3. Remove the saucepan from the heat and stir in the shredded cheddar cheese, Dijon mustard, garlic powder, salt, and pepper until the cheese is melted and the sauce is smooth. Pour the cheese sauce evenly over the cauliflower in the baking dish, making sure to coat all the florets.

Cauliflower is a filling and nutritious vegetable, and one that can handle being roasted with a variety of herbs and seasonings. Check out this simple recipe for harissa roasted cauliflower, which is tasty, flavorsome and healthy.

Ingredients (to serve 2):

  • 1 head of cauliflower
  • 2 teaspoons of harissa paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of white wine vinegar
  • Black pepper

For the tahini dressing:

  • 2 tablespoons of tahini
  • 2 tablespoons of warm water
  • 1 tablespoon of olive oil
  • Juice of 1 lemon

Instructions:

  1. Heat the oven to 350 degrees F.
  2. Slice the cauliflower into pieces about 1 inch thick.

Who doesn’t appreciate a nice warm bowl of soup on a cold winter day? Cookie and Kate posted this delicious cauliflower soup recipe and the best part is it doesn’t have any cream in it. It’s also gluten-free and you can easily make it dairy-free as well.

Ingredients:

  • 1 large head cauliflower (about 2 pounds) cut into bite-size pieces
  • 3 tablespoons extra-virgin olive oil, divided
  • Fine sea salt
  • 1 medium red onion, chopped
  • 2 cloves garlic, pressed or minced
  • 4 cups (32 ounces) vegetable broth
  • 2 tablespoons unsalted butter (you can use margarine for a dairy substitute)
  • 1 tablespoon fresh lemon juice, or more if needed
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons finely chopped fresh flat-leaf parsley, chives and/or green onions (for garnish)

Instructions:

  1. Preheat the oven to 425 F and line a large baking sheet with parchment paper.
  2. Toss the cauliflower with 2 tablespoons of olive oil on the baking sheet. Arrange the cauliflower in one layer and sprinkle it will salt. Bake until the cauliflower is tender and browning on the edges, for about 25 to 35 minutes, tossing halfway.
  3. When the cauliflower is almost done, in a soup pot or Dutch oven warm 1 tablespoon of olive oil over medium heat until it starts simmering. Add the onion and 1/4 teaspoon salt. Stir occasionally until the onion is softened and translucent, for about 5 to 7 minutes.
  4. Add the garlic and cook stirring until it’s fragrant, about 30 seconds, and then add the broth.
  5. Put four cauliflower florets aside for garnish and transfer the rest of the cauliflower into the put. Increase the heat to medium-high and bring the soup to a simmer. Stir it occasionally for about 20 minutes.
  6. When the soup is complete, remove it from the heat and let it cool. Transfer it to a blender.
  7. Add butter or margarine until it’s smooth. Add lemon juice and nutmeg and blend it. Add more salt or lemon juice to taste and blend it again.
  8. Top the bowls of soup with 1 roasted cauliflower floret, a sprinkle of chopped parsley, and green onion/chives.

Cauliflower has transformed itself from another boring veggie to staple superfood in the last few years, and we’ve discovered countless new ways to consume it. The latest we’re going crazy for? Delicious Buffalo cauliflower wings!

Lindsay Grimes Freedman, the author behind cookbook Cauliflower Power, shared the recipe for this tasty dish on her food blog The Toasted Pine Nut and combined two of our favorite things into one.

If Buffalo wings happen to be your No. 1 comfort food, but you’re looking for a way to replace chicken with something a little bit healthier but equally tasty, you couldn’t possibly ask for a better ingredient than cauliflower.

Ingredients:

Wings:

  • 1 head of cauliflower
  • 1 cup red hot wings sauce
  • 1/2 t. sea salt
  • 1/2 t. garlic powder

Blue Cheese Sauce:

  • 4 oz. blue cheese crumbles
  • 1/4 cup whole milk

Instructions:

Wings:

  1. Preheat oven to 400F.
  2. Cut cauliflower into medium-sized florets and place them in a large bowl.
  3. Pour the hot sauce, sea salt, and garlic powder into the bowl.
  4. Toss the cauliflower with a rubber spatula to thoroughly coat the florets.
  5. Place the coated cauliflower on a lined baking pan.
  6. Bake for 30 minutes, or until tender when pierced with a fork.
  7. After 30 minutes, turn the broiler to high and broil for 3 minutes, or until the tops begin to brown and crisp.

Blue Cheese Sauce:

  1. Place 2/3 of the blue cheese crumbles and milk in a microwave-safe bowl.
  2. Microwave for about 1 minute, until melted.
  3. Stir in the remaining blue cheese crumbles and serve with the cauliflower wings for dipping.

Cauliflower popcorn is one of the coolest, healthiest appetizers you can make in less than 60 minutes. It’s sure to be a crowd-pleaser!

Ingredients:

  • 1 cauliflower, trimmed and cut into small pieces
  • 2 tablespoons milk
  • 2 sprigs thyme leaves
  • 1/2 teaspoon dried oregano
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 rounded teaspoon smoked paprika
  • 3 1/2 oz fresh breadcrumbs
  • salt
  • 1 oz finely grated parmesan
  • freshly ground black pepper

Instructions:

  1. Fill a pan with water. Add a little salt and wait for the water to boil.
  2. Once its does, include the cauliflower and cook it for 2 minutes.
  3. Discard the water and place it on a tray with paper. Let the cauliflower steam dry for around 20 minutes.
  4. Set the oven to 375 F degrees.
  5. Combine the milk and egg together in a bowl.
  6. Use a second bowl to mix the parmesan, thyme, breadcrumbs, dried oregano, garlic powder, smoked paprika, salt, and pepper.
  7. Dip the cauliflower pieces first into the milk mixture very well.
  8. Next, dip the pieces into the second bowl with the breadcrumbs.
  9. When the cauliflower is covered with both mixtures you can place the pieces on a baking tray and leave the tray in the oven for 20 minutes.

Cauliflower risotto with mushrooms sounds like the perfect dinner choice, right? Combined with a glass of white wine it’s a meal we could all use at the end of a tiring week.

Ingredients:

  • 4 cups cauliflower, grated or finely chopped
  • 1/2 cup green peas
  • 1 cup sliced mushrooms
  • 1/2 cup parmesan
  • 2 minced cloves garlic
  • 1 cup grated zucchini
  • 1/4 cup dry white wine
  • 1/2 teaspoon kosher salt
  • 1/2 cup milk
  • zest of 1 lemon
  • 1/2 cup vegetable broth
  • 1/2 cup diced yellow onions
  • 1/4 cup chopped Italian parsley
  • 2 tablespoons olive oil
  • 1/4 tablespoon freshly ground black pepper
  • 1/4 cup thinly sliced basil leaves
  • 1/2 cup chopped asparagus

Instructions:

  • Heat 1 tablespoon olive oil in a saute pan. Cook the mushrooms for 3 minutes, then put them on a plate.
  • Next, cook the garlic and onion together with 1 tablespoon olive oil for 2 to 3 minutes.
  • Include the cauliflower to the mix and continue cooking for 1 to 2 minutes.
  • Use the white wine to deglaze the pan until the wine is gone.
  • Cook the zucchini, peas, and asparagus together. Include the milk and broth as well.
  • Cook for 6 to 8 more minutes and the mix should become thick.
  • Take the pan away from the heat and add the cheese, 1/4 teaspoon black pepper, and 1/2 teaspoon salt.
  • Pour in the lemon zest and mushrooms. Mix the cauliflower risotto and serve it with basil, parsley, and extra cheese.

Making cauliflower cheese has never been easier. Try this 50-minute recipe and you won’t be sorry. It’s the most delicious thing you’ve had.

Ingredients

The ingredients you need are:
2 oz butter
1 pinch salt
1 medium cauliflower
1 teaspoon mustard powder
2 oz all-purpose flour
2 oz cheddar cheese
2 cups milk
freshly ground pepper

Instructions

Set the oven to 395 F degrees.

Prepare the cauliflower by removing the green leaves and do a cross with the knife on the bottom of the stem.

Fill a pan with water and when it starts to boil, steam the cauliflower for 10 minutes. Once it becomes soft, you can set it aside.

  • Salt and pepper, to taste
  • 1/4 cup of grated Parmesan cheese
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside. In a large pot of salted boiling water, blanch the cauliflower florets for 3-4 minutes, or until slightly tender. Drain well and transfer to the prepared baking dish.
  2. In a separate saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook the roux for 1-2 minutes, stirring constantly, until golden brown and fragrant. Gradually whisk in the milk, stirring constantly to prevent lumps from forming. Cook the sauce until thickened, about 5-7 minutes.
  3. Remove the saucepan from the heat and stir in the shredded cheddar cheese, Dijon mustard, garlic powder, salt, and pepper until the cheese is melted and the sauce is smooth. Pour the cheese sauce evenly over the cauliflower in the baking dish, making sure to coat all the florets.
  4. Sprinkle the grated Parmesan cheese over the top of the cauliflower cheese mixture. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown on top.

Cauliflower is a filling and nutritious vegetable, and one that can handle being roasted with a variety of herbs and seasonings. Check out this simple recipe for harissa roasted cauliflower, which is tasty, flavorsome and healthy.

Ingredients (to serve 2):

  • 1 head of cauliflower
  • 2 teaspoons of harissa paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of white wine vinegar
  • Black pepper

For the tahini dressing:

  • 2 tablespoons of tahini

Instructions:

  2. Slice the cauliflower into pieces about 1 inch thick.

Who doesn’t appreciate a nice warm bowl of soup on a cold winter day? Cookie and Kate posted this delicious cauliflower soup recipe and the best part is it doesn’t have any cream in it. It’s also gluten-free and you can easily make it dairy-free as well.

Ingredients:

  • 1 large head cauliflower (about 2 pounds) cut into bite-size pieces
  • 3 tablespoons extra-virgin olive oil, divided
  • Fine sea salt
  • 1 medium red onion, chopped
  • 2 cloves garlic, pressed or minced
  • 4 cups (32 ounces) vegetable broth
  • 2 tablespoons unsalted butter (you can use margarine for a dairy substitute)
  • 1 tablespoon fresh lemon juice, or more if needed
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons finely chopped fresh flat-leaf parsley, chives and/or green onions (for garnish)

Instructions:

  1. Preheat the oven to 425 F and line a large baking sheet with parchment paper.
  2. Toss the cauliflower with 2 tablespoons of olive oil on the baking sheet. Arrange the cauliflower in one layer and sprinkle it will salt. Bake until the cauliflower is tender and browning on the edges, for about 25 to 35 minutes, tossing halfway.
  3. When the cauliflower is almost done, in a soup pot or Dutch oven warm 1 tablespoon of olive oil over medium heat until it starts simmering. Add the onion and 1/4 teaspoon salt. Stir occasionally until the onion is softened and translucent, for about 5 to 7 minutes.
  4. Add the garlic and cook stirring until it’s fragrant, about 30 seconds, and then add the broth.
  5. Put four cauliflower florets aside for garnish and transfer the rest of the cauliflower into the put. Increase the heat to medium-high and bring the soup to a simmer. Stir it occasionally for about 20 minutes.
  6. When the soup is complete, remove it from the heat and let it cool. Transfer it to a blender.
  7. Add butter or margarine until it’s smooth. Add lemon juice and nutmeg and blend it. Add more salt or lemon juice to taste and blend it again.
  8. Top the bowls of soup with 1 roasted cauliflower floret, a sprinkle of chopped parsley, and green onion/chives.

Cauliflower has transformed itself from another boring veggie to staple superfood in the last few years, and we’ve discovered countless new ways to consume it. The latest we’re going crazy for? Delicious Buffalo cauliflower wings!

Lindsay Grimes Freedman, the author behind cookbook Cauliflower Power, shared the recipe for this tasty dish on her food blog The Toasted Pine Nut and combined two of our favorite things into one.

If Buffalo wings happen to be your No. 1 comfort food, but you’re looking for a way to replace chicken with something a little bit healthier but equally tasty, you couldn’t possibly ask for a better ingredient than cauliflower.

Ingredients:

Wings:

  • 1 head of cauliflower
  • 1 cup red hot wings sauce
  • 1/2 t. sea salt
  • 1/2 t. garlic powder

Blue Cheese Sauce:

  • 4 oz. blue cheese crumbles
  • 1/4 cup whole milk

Instructions:

Wings:

  1. Preheat oven to 400F.
  2. Cut cauliflower into medium-sized florets and place them in a large bowl.
  3. Pour the hot sauce, sea salt, and garlic powder into the bowl.
  4. Toss the cauliflower with a rubber spatula to thoroughly coat the florets.
  5. Place the coated cauliflower on a lined baking pan.
  6. Bake for 30 minutes, or until tender when pierced with a fork.
  7. After 30 minutes, turn the broiler to high and broil for 3 minutes, or until the tops begin to brown and crisp.

Blue Cheese Sauce:

  1. Place 2/3 of the blue cheese crumbles and milk in a microwave-safe bowl.
  2. Microwave for about 1 minute, until melted.
  3. Stir in the remaining blue cheese crumbles and serve with the cauliflower wings for dipping.

Cauliflower popcorn is one of the coolest, healthiest appetizers you can make in less than 60 minutes. It’s sure to be a crowd-pleaser!

Ingredients:

  • 1 cauliflower, trimmed and cut into small pieces
  • 2 tablespoons milk
  • 2 sprigs thyme leaves
  • 1/2 teaspoon dried oregano
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 rounded teaspoon smoked paprika
  • 3 1/2 oz fresh breadcrumbs
  • salt
  • 1 oz finely grated parmesan
  • freshly ground black pepper

Instructions:

  1. Fill a pan with water. Add a little salt and wait for the water to boil.
  2. Once its does, include the cauliflower and cook it for 2 minutes.
  3. Discard the water and place it on a tray with paper. Let the cauliflower steam dry for around 20 minutes.
  4. Set the oven to 375 F degrees.
  5. Combine the milk and egg together in a bowl.
  6. Use a second bowl to mix the parmesan, thyme, breadcrumbs, dried oregano, garlic powder, smoked paprika, salt, and pepper.
  7. Dip the cauliflower pieces first into the milk mixture very well.
  8. Next, dip the pieces into the second bowl with the breadcrumbs.
  9. When the cauliflower is covered with both mixtures you can place the pieces on a baking tray and leave the tray in the oven for 20 minutes.

Cauliflower risotto with mushrooms sounds like the perfect dinner choice, right? Combined with a glass of white wine it’s a meal we could all use at the end of a tiring week.

Ingredients:

  • 4 cups cauliflower, grated or finely chopped
  • 1/2 cup green peas
  • 1 cup sliced mushrooms
  • 1/2 cup parmesan
  • 2 minced cloves garlic
  • 1 cup grated zucchini
  • 1/4 cup dry white wine
  • 1/2 teaspoon kosher salt
  • 1/2 cup milk
  • zest of 1 lemon
  • 1/2 cup vegetable broth
  • 1/2 cup diced yellow onions
  • 1/4 cup chopped Italian parsley
  • 2 tablespoons olive oil
  • 1/4 tablespoon freshly ground black pepper
  • 1/4 cup thinly sliced basil leaves
  • 1/2 cup chopped asparagus

Instructions:

  • Heat 1 tablespoon olive oil in a saute pan. Cook the mushrooms for 3 minutes, then put them on a plate.
  • Next, cook the garlic and onion together with 1 tablespoon olive oil for 2 to 3 minutes.
  • Include the cauliflower to the mix and continue cooking for 1 to 2 minutes.
  • Use the white wine to deglaze the pan until the wine is gone.
  • Cook the zucchini, peas, and asparagus together. Include the milk and broth as well.
  • Cook for 6 to 8 more minutes and the mix should become thick.
  • Take the pan away from the heat and add the cheese, 1/4 teaspoon black pepper, and 1/2 teaspoon salt.
  • Pour in the lemon zest and mushrooms. Mix the cauliflower risotto and serve it with basil, parsley, and extra cheese.

Making cauliflower cheese has never been easier. Try this 50-minute recipe and you won’t be sorry. It’s the most delicious thing you’ve had.

Ingredients

The ingredients you need are:
2 oz butter
1 pinch salt
1 medium cauliflower
1 teaspoon mustard powder
2 oz all-purpose flour
2 oz cheddar cheese
2 cups milk
freshly ground pepper

Instructions

Set the oven to 395 F degrees.

Prepare the cauliflower by removing the green leaves and do a cross with the knife on the bottom of the stem.

Fill a pan with water and when it starts to boil, steam the cauliflower for 10 minutes. Once it becomes soft, you can set it aside.
