Cauliflower is a filling and nutritious vegetable, and one that can handle being roasted with a variety of herbs and seasonings. Check out this simple recipe for harissa roasted cauliflower, which is tasty, flavorsome and healthy.
Ingredients (to serve 2):
- 1 head of cauliflower
- 2 teaspoons of harissa paste
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of ground cumin
- 1/2 teaspoon of white wine vinegar
- Black pepper
For the tahini dressing:
- 2 tablespoons of tahini
- 2 tablespoons of warm water
- 1 tablespoon of olive oil
- Juice of 1 lemon
Instructions:
- Heat the oven to 350 degrees F.
- Slice the cauliflower into pieces about 1 inch thick.
- Mix the harissa paste with the vinegar, oil, salt and ground cumin.
- Coat the cauliflower pieces in the harissa dressing, sprinkle with black pepper and roast for at least half an hour.
- To make the tahini dressing, blend all of the ingredients until you have a smooth, uniform consistency. Drizzle over the roasted cauliflower.
