Baklava is such a delicious Mediterranean and Middle Eastern treat, but making it from scratch can be really hard. Instead, opt for these baklava cookies and you can have the best of both worlds!

Ingredients:

  • 1/4 cup of unsalted butter
  • 1/3 cup of powdered sugar
  • Three tablespoons of honey
  • 3/4 cup of chopped walnuts
  • 1/2 teaspoon of cinnamon
  • One package of sugar cookie dough or homemade sugar cookie dough

Instructions:

  1. Over low heat, melt the butter in a small pot.
  2. Once the butter has melted completely, add in the powdered sugar as well as the honey and stir it all together to combine. Once the mixture starts to boil slightly, turn off the heat.
  3. Pour in the chopped walnuts and cinnamon and mix everything well and quickly before the mixture hardens.
  4. Leave the nuts for 30-45 minutes to set.
  5. Cut the cookie dough, either homemade or store-bought, into 24 pieces.
  6. Roll each piece into a ball and put them onto parchment-lined baking sheets.
  7. Bake at 350 F for 9 minutes, and then take them out of the oven. Spoon a bit of the nut mixture in the center of each cookie, and then bake for an additional 2-3 minutes to incorporate the filling.
  8. Cool on a wire rack and enjoy!

FRIENDS! They’re here! The *BEST* Vegan Chocolate Chip Cookies — the cookies that won @ervc.fit’s heart 😂⁣ ⁣ I remember almost exactly 2 years ago I made a batch of cookies using the basic knowledge I had and veganized it to see how it would turn out and they ended up looking okay so I gave them to him. He’s been asking for them ever since but I never wrote down the recipe sooooo for his birthday I spent 3 days!!! Over 9 batches!! Trying to remake them and finally the 10th batch was the one 😭!! Thick, chewy and perfectly crisp edges with puddles and studs of chocolate. ⁣ ⁣ Along the way I picked up on some tips and tricks to baking the perfect batch of vegan chocolate chip cookies and have shared all of it on the blog from baking times, temperatures, the height of the cookie dough and the colour of your cookie sheets. Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 1 1/4 teaspoon of kosher salt
  • 3/4 teaspoon of baking soda
  • 3/4 cup of unsalted butter
  • 1 cup of packed dark brown sugar
  • 1/4 cup of white sugar
  • 1 egg plus 2 egg yolks
  • 2 teaspoons of vanilla extract
  • 6 oz of chopped bittersweet chocolate

Instructions:

  1. Take half a cup of butter and melt it over low heat, stirring often, until it turns a light brown color. Transfer that into a bowl, cut up the rest of the butter, and add that in as well.
  2. While the butter is melting, whisk together in a medium-sized bowl the flour, salt, and baking soda.
  3. Once the butter is melted, add in the brown and white sugar and whisk.
  4. Crack in the eggs and egg yolks and whisk for another 30 seconds, add in the vanilla, and whisk again.
  5. Pour in the dry ingredients and stir with a rubber spatula until it’s well combined, then add in the chocolate.
  6. If the dough still looks too runny, leave it at room temperature for 15-20 minutes.
  7. Then, take an ice cream scooper and scoop them out onto parchment-lined baking sheets. The dough should be able to hold its shapes even though it’s softer than normal dough.
  8. Bake at 375 F for 8-10 minutes, rotating the trays halfway through.
  9. Cool on baking sheets and enjoy!

Toffee on its own is a real treat, and once you put it into a cookie, it really changes the game. These cookies are very easy to make and they come out perfect every time.

Ingredients

  • 1 cup of unsalted butter
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 3/4 teaspoon of salt
  • 1 cup of packed brown sugar
  • 1/3 cup of white sugar
  • 2 room temperature eggs
  • 2 teaspoons of vanilla extract
  • 3 oz of toffee bars
  • 1 1/2 cups of chocolate wafers

Instructions

  1. Over medium heat, stir and cook the butter until it foams, followed by browning, about 6 minutes or so. Put it into a big bowl.
  2. In another big bowl, combine the flour, baking soda, and salt.
  3. To the butter, add the sugars with an electric hand or stand mixer on medium. Beat for 1 minute.
  4. Put the eggs and vanilla in the mixer and put the speed up to medium-high for 1-2 minutes. Put the speed down to low, add in the dry ingredients, and mix in the toffee and wafers in by hand.
  5. Let it sit on the counter for 30 minutes, then use a scooper and space the cookies about 2-3 inches apart on a parchment-lined baking sheet.
  6. Bake at 375 F for 9-11 minutes, cool for 10 on the sheet, and transfer to cool fully on a wire rack.

This is probably our favorite idea: pack your cookies in a baking pan and give someone a two-fold gift. Once they eat the cookies, they will be left with a pan to make more delicious treats! You can also include your favorite recipe as a third part of the gift. Fill the pan with cookies, wrap it in cellophane, and tie it with a ribbon and you’re done.

Viennese whirls are a classic sandwich cookie that are both beautiful, and so delicious. They also look really impressive since they are piped out instead of just scooped, so if you want to make cookies that star of your dessert, this is the recipe to use.

Ingredients 

  • 9oz+3 1/2 oz of softened unsalted butter
  • 1/3 cup+7 oz of powdered sugar
  • 1 cup of all-purpose flour
  • 1 oz of corn starch 
  • 1/2 teaspoon of vanilla extract
  • 8 oz of raspberry jam, homemade or store-bought

Recipe

  1. Line 3 sheet pan with parchment paper, and use a 2-inch cookie cutter to draw 8 circles on each. This will help you with piping later. 
  2. Beat 1/3 cup of powdered sugar and 9 oz of butter together until very pale and fluffy. Sift in the flour and cornstarch and continue to mix until well incorporated.
  3. Put the dough into a piping bag with a star tip, and pipe the cookies onto the sheets. 
  4. Bake for 13-15 minutes at 375 F until only slightly golden. 
  5. While the cookies bake, whisk the rest of the powdered sugar and butter together with vanilla extract to make the butter cream. 
  6. Let the cookies cool before assembling with the buttercream and a layer of jam, sandwich with another cookie, and you’re done!

Lavender is such a wonderful aroma to have in your home, but it’s also very delicious! Make these floral cookies and you’ll see for yourself how delightful lavender really is.

Ingredients

  • 2 teaspoons of dried lavender
  • 3/4 pound of room temperature unsalted butter
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 17.5 oz of all-purpose flour
  • 1/2 teaspoon of salt

Recipe

  1. First, grind up the lavender with a spice grinder or in a mortar and pestle.
  2. Then, put the butter, sugar, and lavender into the bowl of a stand mixer and mix it on medium speed with the paddle attachment until well combined.
  3. Add in the vanilla and beat just for a few seconds, and then pour in the flour and mix only until it’s just incorporated and formed a ball.
  4. Take the dough out of the bowl, roll it out on a floured surface so it’s about 1/2 inch thick, and use a cookie cutter or just a cup to stamp out the cookies.
  5. Put the cookies onto a parchment-lined baking sheet and chill in the fridge for 1-2 hours.
  6. Bake the cookies at 350 F for 20-25 minutes or until they’re a darker pale but not golden, and then cool the cookies on a cooling rack and enjoy!

Love these delicious summer Porch cookies! 🍈 Ingredients: Cookies: • 1 1/2 cups all-purpose flour • 1/2 tsp baking soda • 1/2 tsp salt • 1/2 cup butter, room temperature • 1/4 cup granulated sugar • 1/4 cup brown sugar • 1 egg • 1/2 tsp vanilla • zest and juice of 1 lime (about 1 tsp zest and 3 Tbsp lime juice) • 1 cup white chocolate/vanilla chips Glaze: • 1 cup powdered sugar • 1 tsp lime zest • 1 1/2 to 3 Tbsp lime juice, depending on desired consistency Instructions 1. Preheat oven to 375 degrees Fahrenheit. 2. In a bowl, combine the flour, baking soda, and salt; set aside. 3. In a large bowl cream together the butter and sugars. Beat in the egg, vanilla, lime zest, and lime juice until smooth. 4. Slowly add flour mixture until combined. Fold in white chocolate/vanilla chips. 5. Drop rounded spoonfuls onto a parchment or silicone mat lined baking sheet. Bake for 8 to 9 minutes or until golden brown around edges. Do not over-bake. Cookies will be plump. Cool for several minutes on cookie sheets before transferring to a rack to cool completely. 6. Prepare glaze by combing powdered sugar and lime zest in a bowl. Add lime juice until desired consistency. I only did 1½ Tbsp for a thick glaze. Spoon glaze over the top of the cookies and allow to set at room temperature until dry. Store in an airtight container.   2. In a stand mixer or hand mixer, add in the butter and 3/4 cup of the sugar and beat until light and fluffy.

Florentine cookies are really delicate and delicious cookies that look so good when they come out of the oven. Most are also covered in chocolate, but it’s a little hard to get it just right unless you’re an advanced baker, but these Florentine cookies might be on the simple side, but they’re still incredibly yummy!

Ingredients

  • 5 oz of almonds without the skins on
  • 3 tablespoons of all-purpose flour
  • Zest of 1 orange
  • 1/4 teaspoon of salt
  • 3/4 cup of sugar
  • 2 tablespoons of light corn syrup
  • 2 tablespoons of heavy cream
  • 5 tablespoons of unsalted butter
  • 1/2 teaspoon of vanilla extract

Recipe

  1. Put the almonds into a food processor until they’re just ground up.
  2. Dump out the almonds and mix them with the flour, zest, and salt.
  3. In a small pot, add in the sugar, cream, butter, and corn syrup.
  4. Cook over medium heat until the sugar is dissolved and the mixture starts to bubble. Cook for 1 minute more, and then turn off the heat.
  5. Add in the vanilla, stir, and pour the mixture into the dry ingredients.
  6. Stir until everything is just combined, and then set aside to cool for 30 minutes.

This has got to be one of the best cookie recipes we’ve ever tasted, and they’re made of Nutella. What could be more delicious?

Well, there’s even better news. These cookies only take 3 ingredients. That means it’s really easy to whip up a batch that’ll have your friends begging for the recipe.

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup Nutella
  • 1 large egg

Method:

  • Heat the oven to 350 degrees Fahrenheit.
  • Line a large baking sheet with parchment or a silicone mat.
  • Place all the ingredients in the bowl of an electric mixer and mix together thoroughly.
  • Measure 2 tablespoons of mixture and roll into a ball. Repeat with the remaining dough.
  • Place the balls on the baking sheet. Flatten a little with your fingers or the bottom of a glass. You could even press down with a fork.
  • Bake for about 7 minutes until they are cooked around the edges and still slightly soft in the center. Allow the cookies to sit on the baking sheet for 5 minutes. Then place on a baking rack to cool.
  • You will probably have to bake these cookies in batches.

What’s better than a classic shortbread cookie in winter?

This simple and delicious cookie is a sweet, rich treat that originated in Scotland. Now, it’s known for being a traditional holiday season (or winter) cookie that is enjoyed by many.

Fortunately, these cookies are not only tasty, but also extremely simple to make. Here’s how to make a batch (makes 20-25).

Ingredients

  • 115 g butter
  • 60 g sugar
  • 1 teaspoon vanilla extract
  • 125 g flour

First, preheat the oven to 350 degrees F (175 degrees C).

Next, melt the 60 g of butter, either in a saucepan or in the microwave.

Combine the melted butter, all of the sugar, and the vanilla extract in a bowl. Use a mixer to whip these ingredients together.

The next step is to gradually add the flour to the mixture, stirring as you go. When the flour is all added, the mixture should have a normal doughy consistency. If it’s too wet, add more flour. If it’s too dry, add more melted butter.

Finally, arrange half-dollar sized circles of dough on top of parchment paper on a pan.

Bake for 10-15 minutes, or until golden brown. The cookies can be decorated with frosting or sprinkles if desired.

  3. Pour in the chopped walnuts and cinnamon and mix everything well and quickly before the mixture hardens.
  4. Leave the nuts for 30-45 minutes to set.
  5. Cut the cookie dough, either homemade or store-bought, into 24 pieces.
  6. Roll each piece into a ball and put them onto parchment-lined baking sheets.
  7. Bake at 350 F for 9 minutes, and then take them out of the oven. Spoon a bit of the nut mixture in the center of each cookie, and then bake for an additional 2-3 minutes to incorporate the filling.
  8. Cool on a wire rack and enjoy!

The *BEST* Vegan Chocolate Chip Cookies — the cookies that won @ervc.fit’s heart 😂⁣ ⁣ I remember almost exactly 2 years ago I made a batch of cookies using the basic knowledge I had and veganized it to see how it would turn out and they ended up looking okay so I gave them to him. He’s been asking for them ever since but I never wrote down the recipe sooooo for his birthday I spent 3 days!!! Over 9 batches!! Trying to remake them and finally the 10th batch was the one 😭!! Thick, chewy and perfectly crisp edges with puddles and studs of chocolate. ⁣ ⁣ Along the way I picked up on some tips and tricks to baking the perfect batch of vegan chocolate chip cookies and have shared all of it on the blog from baking times, temperatures, the height of the cookie dough and the colour of your cookie sheets. Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 1 1/4 teaspoon of kosher salt
  • 3/4 teaspoon of baking soda
  • 3/4 cup of unsalted butter
  • 1 cup of packed dark brown sugar
  • 1/4 cup of white sugar
  • 1 egg plus 2 egg yolks
  • 2 teaspoons of vanilla extract
  • 6 oz of chopped bittersweet chocolate

Instructions:

  1. Take half a cup of butter and melt it over low heat, stirring often, until it turns a light brown color. Transfer that into a bowl, cut up the rest of the butter, and add that in as well.
  2. While the butter is melting, whisk together in a medium-sized bowl the flour, salt, and baking soda.
  3. Once the butter is melted, add in the brown and white sugar and whisk.
  4. Crack in the eggs and egg yolks and whisk for another 30 seconds, add in the vanilla, and whisk again.
  5. Pour in the dry ingredients and stir with a rubber spatula until it’s well combined, then add in the chocolate.
  6. If the dough still looks too runny, leave it at room temperature for 15-20 minutes.
  7. Then, take an ice cream scooper and scoop them out onto parchment-lined baking sheets. The dough should be able to hold its shapes even though it’s softer than normal dough.
  8. Bake at 375 F for 8-10 minutes, rotating the trays halfway through.
  9. Cool on baking sheets and enjoy!

Toffee on its own is a real treat, and once you put it into a cookie, it really changes the game. These cookies are very easy to make and they come out perfect every time.

Ingredients

  • 1 cup of unsalted butter
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 3/4 teaspoon of salt
  • 1 cup of packed brown sugar
  • 1/3 cup of white sugar
  • 2 room temperature eggs
  • 2 teaspoons of vanilla extract
  • 3 oz of toffee bars
  • 1 1/2 cups of chocolate wafers

Instructions

  1. Over medium heat, stir and cook the butter until it foams, followed by browning, about 6 minutes or so. Put it into a big bowl.
  2. In another big bowl, combine the flour, baking soda, and salt.
  3. To the butter, add the sugars with an electric hand or stand mixer on medium. Beat for 1 minute.
  4. Put the eggs and vanilla in the mixer and put the speed up to medium-high for 1-2 minutes. Put the speed down to low, add in the dry ingredients, and mix in the toffee and wafers in by hand.
  5. Let it sit on the counter for 30 minutes, then use a scooper and space the cookies about 2-3 inches apart on a parchment-lined baking sheet.
  6. Bake at 375 F for 9-11 minutes, cool for 10 on the sheet, and transfer to cool fully on a wire rack.

Viennese whirls are a classic sandwich cookie that are both beautiful, and so delicious. They also look really impressive since they are piped out instead of just scooped, so if you want to make cookies that star of your dessert, this is the recipe to use.

Ingredients 

  • 9oz+3 1/2 oz of softened unsalted butter
  • 1/3 cup+7 oz of powdered sugar
  • 1 cup of all-purpose flour
  • 1 oz of corn starch 
  • 1/2 teaspoon of vanilla extract
  • 8 oz of raspberry jam, homemade or store-bought

Recipe

  1. Line 3 sheet pan with parchment paper, and use a 2-inch cookie cutter to draw 8 circles on each. This will help you with piping later. 
  2. Beat 1/3 cup of powdered sugar and 9 oz of butter together until very pale and fluffy. Sift in the flour and cornstarch and continue to mix until well incorporated.
  3. Put the dough into a piping bag with a star tip, and pipe the cookies onto the sheets. 
  4. Bake for 13-15 minutes at 375 F until only slightly golden. 
  5. While the cookies bake, whisk the rest of the powdered sugar and butter together with vanilla extract to make the butter cream. 
  6. Let the cookies cool before assembling with the buttercream and a layer of jam, sandwich with another cookie, and you’re done!

Lavender is such a wonderful aroma to have in your home, but it’s also very delicious! Make these floral cookies and you’ll see for yourself how delightful lavender really is.

Ingredients

  • 2 teaspoons of dried lavender
  • 3/4 pound of room temperature unsalted butter
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 17.5 oz of all-purpose flour
  • 1/2 teaspoon of salt

Recipe

  1. First, grind up the lavender with a spice grinder or in a mortar and pestle.
  2. Then, put the butter, sugar, and lavender into the bowl of a stand mixer and mix it on medium speed with the paddle attachment until well combined.
  3. Add in the vanilla and beat just for a few seconds, and then pour in the flour and mix only until it’s just incorporated and formed a ball.
  4. Take the dough out of the bowl, roll it out on a floured surface so it’s about 1/2 inch thick, and use a cookie cutter or just a cup to stamp out the cookies.
  5. Put the cookies onto a parchment-lined baking sheet and chill in the fridge for 1-2 hours.
  6. Bake the cookies at 350 F for 20-25 minutes or until they’re a darker pale but not golden, and then cool the cookies on a cooling rack and enjoy!

Love these delicious summer Porch cookies! 🍈 Ingredients: Cookies: • 1 1/2 cups all-purpose flour • 1/2 tsp baking soda • 1/2 tsp salt • 1/2 cup butter, room temperature • 1/4 cup granulated sugar • 1/4 cup brown sugar • 1 egg • 1/2 tsp vanilla • zest and juice of 1 lime (about 1 tsp zest and 3 Tbsp lime juice) • 1 cup white chocolate/vanilla chips Glaze: • 1 cup powdered sugar • 1 tsp lime zest • 1 1/2 to 3 Tbsp lime juice, depending on desired consistency Instructions 1. Preheat oven to 375 degrees Fahrenheit. 2. In a bowl, combine the flour, baking soda, and salt; set aside. 3. In a large bowl cream together the butter and sugars. Beat in the egg, vanilla, lime zest, and lime juice until smooth. 4. Slowly add flour mixture until combined. Fold in white chocolate/vanilla chips. 5. Drop rounded spoonfuls onto a parchment or silicone mat lined baking sheet. Bake for 8 to 9 minutes or until golden brown around edges. Do not over-bake. Cookies will be plump. Cool for several minutes on cookie sheets before transferring to a rack to cool completely. 6. Prepare glaze by combing powdered sugar and lime zest in a bowl. Add lime juice until desired consistency. I only did 1½ Tbsp for a thick glaze. Spoon glaze over the top of the cookies and allow to set at room temperature until dry. Store in an airtight container. Recipe

  1. Take the 2 teaspoons of lime juice and mix it with the milk in a small bowl and let it sit for 5 minutes.
  2. In a stand mixer or hand mixer, add in the butter and 3/4 cup of the sugar and beat until light and fluffy.
  3. Add in the egg and beat it, and then add in the milk and zest to combine.
  4. In a separate bowl, mix the flour, baking soda, and baking powder.
  5. Gently mix the dry ingredients into the wet, and then spoon the mixture onto parchment-lined baking sheets.
  6. Bake for 8-10 minutes at 350 F.
  7. While the cookies bake, combine the extra sugar and lime juice to make a glaze.
  8. Once the cookies have been cooked and cooled, pour the glaze on and enjoy!

Florentine cookies are really delicate and delicious cookies that look so good when they come out of the oven. Most are also covered in chocolate, but it’s a little hard to get it just right unless you’re an advanced baker, but these Florentine cookies might be on the simple side, but they’re still incredibly yummy!

Ingredients

  • 5 oz of almonds without the skins on
  • 3 tablespoons of all-purpose flour
  • Zest of 1 orange
  • 1/4 teaspoon of salt
  • 3/4 cup of sugar
  • 2 tablespoons of light corn syrup
  • 2 tablespoons of heavy cream
  • 5 tablespoons of unsalted butter
  • 1/2 teaspoon of vanilla extract

Recipe

  1. Put the almonds into a food processor until they’re just ground up.
  2. Dump out the almonds and mix them with the flour, zest, and salt.
  3. In a small pot, add in the sugar, cream, butter, and corn syrup.
  4. Cook over medium heat until the sugar is dissolved and the mixture starts to bubble. Cook for 1 minute more, and then turn off the heat.
  5. Add in the vanilla, stir, and pour the mixture into the dry ingredients.
  6. Stir until everything is just combined, and then set aside to cool for 30 minutes.
  7. Spoon the mixture onto parchment-lined baking sheets once it’s cooled, and bake each tray for 10 minutes at 350 F, rotating once during the process.
  8. Cool on baking sheet for 5 minutes, and then cool fully on a rack.

This has got to be one of the best cookie recipes we’ve ever tasted, and they’re made of Nutella. What could be more delicious?

Well, there’s even better news. These cookies only take 3 ingredients. That means it’s really easy to whip up a batch that’ll have your friends begging for the recipe.

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup Nutella
  • 1 large egg

Method:

  • Heat the oven to 350 degrees Fahrenheit.
  • Line a large baking sheet with parchment or a silicone mat.
  • Place all the ingredients in the bowl of an electric mixer and mix together thoroughly.
  • Measure 2 tablespoons of mixture and roll into a ball. Repeat with the remaining dough.
  • Place the balls on the baking sheet. Flatten a little with your fingers or the bottom of a glass. You could even press down with a fork.
  • Bake for about 7 minutes until they are cooked around the edges and still slightly soft in the center. Allow the cookies to sit on the baking sheet for 5 minutes. Then place on a baking rack to cool.
  • You will probably have to bake these cookies in batches.

What’s better than a classic shortbread cookie in winter?

This simple and delicious cookie is a sweet, rich treat that originated in Scotland. Now, it’s known for being a traditional holiday season (or winter) cookie that is enjoyed by many.

Fortunately, these cookies are not only tasty, but also extremely simple to make. Here’s how to make a batch (makes 20-25).

Ingredients

  • 115 g butter
  • 60 g sugar
  • 1 teaspoon vanilla extract
  • 125 g flour

First, preheat the oven to 350 degrees F (175 degrees C).

Next, melt the 60 g of butter, either in a saucepan or in the microwave.

Combine the melted butter, all of the sugar, and the vanilla extract in a bowl. Use a mixer to whip these ingredients together.

The next step is to gradually add the flour to the mixture, stirring as you go. When the flour is all added, the mixture should have a normal doughy consistency. If it’s too wet, add more flour. If it’s too dry, add more melted butter.

Finally, arrange half-dollar sized circles of dough on top of parchment paper on a pan.

Bake for 10-15 minutes, or until golden brown. The cookies can be decorated with frosting or sprinkles if desired.
