Lime Cookies are Refreshing and Perfect for Any Picnic

Lime cookies are a more usual type of cookie, but still very easy and delicious! The lime in these cookies makes them more zingy, tangy, and just totally different than any other cookie you’ve ever had!

Ingredients

  • 2 teaspoons of lime juice+2 tablespoons
  • 2 teaspoons of lime zest
  • 1/3 cup of milk
  • 1/2 cup of softened unsalted butter
  • 3/4 cup of white sugar+1/4 cup of sugar
  • 1 egg
  • 1 3/4 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda

Love these delicious summer Porch cookies! 🍈 Ingredients: Cookies: • 1 1/2 cups all-purpose flour • 1/2 tsp baking soda • 1/2 tsp salt • 1/2 cup butter, room temperature • 1/4 cup granulated sugar • 1/4 cup brown sugar • 1 egg • 1/2 tsp vanilla • zest and juice of 1 lime (about 1 tsp zest and 3 Tbsp lime juice) • 1 cup white chocolate/vanilla chips Glaze: • 1 cup powdered sugar • 1 tsp lime zest • 1 1/2 to 3 Tbsp lime juice, depending on desired consistency Instructions 1. Preheat oven to 375 degrees Fahrenheit. 2. In a bowl, combine the flour, baking soda, and salt; set aside. 3. In a large bowl cream together the butter and sugars. Beat in the egg, vanilla, lime zest, and lime juice until smooth. 4. Slowly add flour mixture until combined. Fold in white chocolate/vanilla chips. 5. Drop rounded spoonfuls onto a parchment or silicone mat lined baking sheet. Bake for 8 to 9 minutes or until golden brown around edges. Do not over-bake. Cookies will be plump. Cool for several minutes on cookie sheets before transferring to a rack to cool completely. 6. Prepare glaze by combing powdered sugar and lime zest in a bowl. Add lime juice until desired consistency. I only did 1½ Tbsp for a thick glaze. Spoon glaze over the top of the cookies and allow to set at room temperature until dry. Store in an airtight container. Recipe

  1. Take the 2 teaspoons of lime juice and mix it with the milk in a small bowl and let it sit for 5 minutes.
  2. In a stand mixer or hand mixer, add in the butter and 3/4 cup of the sugar and beat until light and fluffy.
  3. Add in the egg and beat it, and then add in the milk and zest to combine.
  4. In a separate bowl, mix the flour, baking soda, and baking powder.
  5. Gently mix the dry ingredients into the wet, and then spoon the mixture onto parchment-lined baking sheets.
  6. Bake for 8-10 minutes at 350 F.
  7. While the cookies bake, combine the extra sugar and lime juice to make a glaze.
  8. Once the cookies have been cooked and cooled, pour the glaze on and enjoy!
