Lime cookies are a more usual type of cookie, but still very easy and delicious! The lime in these cookies makes them more zingy, tangy, and just totally different than any other cookie you’ve ever had!
Ingredients
- 2 teaspoons of lime juice+2 tablespoons
- 2 teaspoons of lime zest
- 1/3 cup of milk
- 1/2 cup of softened unsalted butter
- 3/4 cup of white sugar+1/4 cup of sugar
- 1 egg
- 1 3/4 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of baking soda
Recipe
- Take the 2 teaspoons of lime juice and mix it with the milk in a small bowl and let it sit for 5 minutes.
- In a stand mixer or hand mixer, add in the butter and 3/4 cup of the sugar and beat until light and fluffy.
- Add in the egg and beat it, and then add in the milk and zest to combine.
- In a separate bowl, mix the flour, baking soda, and baking powder.
- Gently mix the dry ingredients into the wet, and then spoon the mixture onto parchment-lined baking sheets.
- Bake for 8-10 minutes at 350 F.
- While the cookies bake, combine the extra sugar and lime juice to make a glaze.
- Once the cookies have been cooked and cooled, pour the glaze on and enjoy!
