Florentine cookies are really delicate and delicious cookies that look so good when they come out of the oven. Most are also covered in chocolate, but it’s a little hard to get it just right unless you’re an advanced baker, but these Florentine cookies might be on the simple side, but they’re still incredibly yummy!
Ingredients
- 5 oz of almonds without the skins on
- 3 tablespoons of all-purpose flour
- Zest of 1 orange
- 1/4 teaspoon of salt
- 3/4 cup of sugar
- 2 tablespoons of light corn syrup
- 2 tablespoons of heavy cream
- 5 tablespoons of unsalted butter
- 1/2 teaspoon of vanilla extract
Recipe
- Put the almonds into a food processor until they’re just ground up.
- Dump out the almonds and mix them with the flour, zest, and salt.
- In a small pot, add in the sugar, cream, butter, and corn syrup.
- Cook over medium heat until the sugar is dissolved and the mixture starts to bubble. Cook for 1 minute more, and then turn off the heat.
- Add in the vanilla, stir, and pour the mixture into the dry ingredients.
- Stir until everything is just combined, and then set aside to cool for 30 minutes.
- Spoon the mixture onto parchment-lined baking sheets once it’s cooled, and bake each tray for 10 minutes at 350 F, rotating once during the process.
- Cool on baking sheet for 5 minutes, and then cool fully on a rack.
