How does the addition of watermelon sound? We think it’s a winning combination, adding the chin-drippingly yumminess of watermelon for summertime sweetness. One of the best things about this salad is that it’s so quick and easy to prepare.
And the good news is that you’ll probably have some juicy watermelon left over so that you can enjoy it alone, in all its perfect pink glory.
Watermelon Caprese
Ingredients
1-pint cherry tomatoes, halved or whole
2 cups watermelon, diced to 3/4-inch cubes
8 ounces bocconcini (mozzarella balls), cut in half
10 large, fresh basil leaves,cut into thin strips
1 teaspoon salt
1 tablespoon balsamic vinegar, or to taste
2 tablespoons extra-virgin olive oil, or to taste
Instructions
Place the tomatoes (sliced or whole, or a mixture), watermelon, cheese, and basil into a large bowl.
Sprinkle with salt. Drizzle with the vinegar and oil. Toss gently to ensure that all ingredients are coated with the salt, vinegar, and oil. Taste for seasoning, and add extra salt if necessary. Voila!
