This recipe couldn’t be more simple, and you can simplify it further by using whole carrots inside of cutting them up.

If you do want to use whole carrots, make sure they’re all roughly the same size. If not, peel and chop them into strips.

Put them on a parchment-lined baking sheet and drizzle over some olive oil. Sprinkle on salt, pepper, and either chili powder or red chili flakes, whatever you’re more in the mood for.

Put your oven to the highest temperature possible and cook the carrots until they’re soft and start to blacken slightly.

Serve them with a squeeze of lime juice over the top. And if you want a really nice presentation, zest a lime onto the carrots, which will give it an even brighter flavor.
