Fennel and citrus salads have been gaining massive popularity lately, and it’s no surprise seeing as this is a very delicious and healthy trend! This salad is super bright and everyone will enjoy it.
Ingredients
- 2 grapefruits
- 2 oranges
- 1/2 lemon
- 2 bulbs of fennel
- 2 tablespoons of olive oil
- 1 tablespoon of honey
- 4-6 stalks of mint
- 1/2 teaspoon of ground coriander
- Salt and pepper to taste
Recipe
- First, start by cutting the fennel in half, coring them each, and then using a mandoline, slice them as thinly as you can. If you don’t have a mandoline, use a really sharp knife to get the thinnest slices possible.
- Then, using a paring knife, cut off the skin of the oranges and grapefruits so the fruits are completely exposed.
- Then, cut them into medium-thickness rounds, and leave them to the side.
- In a small bowl, juice the lemon, and mix in the honey and olive oil. Season with salt and pepper to your taste.
- On a platter, arrange the fennel and the citrus in any way you like, either randomly, or with the fennel on the bottom and the citrus on top.
- Then, sprinkle over the ground coriander, pour over the dressing, and garnish with the mint leaves.
