The Warmest Potato Soup Recipe For Winter

As for the ingredient list you will need 4 cups of chopped potatoes, cubed, 1 cup chopped celery, 1 cup chopped carrot, 2 cups of chopped onion, 1 tablespoon of minced garlic, 1 teaspoon chopped fresh rosemary, 1/4 teaspoon crushed red pepper flakes, 3 tablespoon flour, 3 tablespoons butter or olive oil, 1 bay leaf, 1/4 cup cream, 4 cups of stock or broth, salt and black pepper. Instead of cream, you can also use yogurt or sour cream. For serving feel free to add cheese, bacon, chives and more.

Instructions:

Use a large pot to melt the butter. Once it’s melted add the carrots, onions, and celery. Cook them for around 5 minutes until the veggies are soft. Include the red pepper flakes, garlic, 1/2 teaspoon salt, rosemary, 1/4 teaspoon black pepper, and stir very well for half a minute.

Add the flour while also stirring continuously for about a minute. You will get a light brown color. This is the moment when you need to include 2 cups of stock, whisk, and add the remaining stock.

Increase the heat of the oven so that the liquid will boil. Once it boils, lower the heat so that the potato soup simmers.

Add the bay leaf, potato squares and cook it for 20 minutes. Lower the heat again, and stir the dairy product of your choice and the cheese.

Season with salt and pepper.

To finish off take out the bay leaf.
