This Edamame Falafel is So Simple and Healthy!

Falafel is that Middle Eastern staple food that no one can resist. Although it’s traditionally made with chickpeas and fried, this falafel is made with edamame and they are baked! This falafel is perfect for sandwiches, salads, or even made mini and used for appetizers at a party.

Ingredients

For this falafel, you will need:
2 cloves of garlic
2 scallions
1/2 cup of parsley
3 cups of shelled edamame
3 tablespoons of flour
1 teaspoon of coriander and cumin each
1/4 teaspoon of baking powder
1 teaspoon of salt
2 tablespoons of fresh lemon juice

Recipe

  1. To start, preheat your oven to 400 F and grease a baking sheet.
  2. Add to a food processor the garlic, scallions, and parsley and start processing so they can be chopped up small before the other ingredients go in.
  3. Once the ingredients are much smaller, add in the rest of the ingredients and turn on the food processor.
  4. Blend everything together until it forms a fairly smooth mixture.
  5. Take a small ice cream scoop or just use your hands to make small balls and put them on the sheet.
  6. Drizzle over a bit of olive oil, bake them on a high rack in the oven for 15 minutes, flip them and cook for another 10, and then crank up the oven to the broiler setting just for a minute or two to really get them crispy.
