Ingredients

  • 1 cup unsweetened almond milk
  • 1 tablespoon apple cider vinegar
  • 2 cups all purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup canola oil
  • 2/3 cup unsweetened applesauce
  • 1 tablespoon vanilla extract
  • 1 cup boiling water

Directions

Preheat your oven to 350 degrees. Grease and line two 9-inch cake pans. Combine unsweetened almond milk and vinegar, setting aside to curdle.

In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add oil, applesauce, vanilla, and the curdled almond milk/vinegar combination. Mix on medium speed until well combined.
