  • 1 cup of orzo pasta
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of dry white wine
  • 1 cup of seafood stock or chicken broth
  • 1/2 pound of shrimp, peeled and deveined
  • 1/2 pound of scallops
  • 1/2 pound of mussels, cleaned and debearded
  • 1 teaspoon lemon zest
  • Juice of 1 lemon
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

  1. In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook until they start to soften, about 2-3 minutes. Pour in the white wine and seafood stock, bringing the mixture to a simmer. Cook for 5 minutes, allowing the flavors to meld.
  4. Add the shrimp, scallops, and mussels to the skillet. Cover and cook for 5-7 minutes, or until the seafood is cooked through and the mussels have opened. Discard any mussels that do not open.
  5. Stir in the cooked orzo, lemon zest, and lemon juice. Season with salt, pepper, and red pepper flakes if using. Sprinkle with chopped parsley and serve hot.
