Ingredients:
- 1 cup of orzo pasta
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 cup of cherry tomatoes, halved
- 1/2 cup of dry white wine
- 1 cup of seafood stock or chicken broth
- 1/2 pound of shrimp, peeled and deveined
- 1/2 pound of scallops
- 1/2 pound of mussels, cleaned and debearded
- 1 teaspoon lemon zest
- Juice of 1 lemon
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions:
- In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook until they start to soften, about 2-3 minutes. Pour in the white wine and seafood stock, bringing the mixture to a simmer. Cook for 5 minutes, allowing the flavors to meld.
- Add the shrimp, scallops, and mussels to the skillet. Cover and cook for 5-7 minutes, or until the seafood is cooked through and the mussels have opened. Discard any mussels that do not open.
- Stir in the cooked orzo, lemon zest, and lemon juice. Season with salt, pepper, and red pepper flakes if using. Sprinkle with chopped parsley and serve hot.
