What is Bitter Melon?

If you’ve ever watched the TV show Chopped or been to an Asian supermarket, you might have come across a bitter melon. A bitter melon looks like a wrinkly cucumber or zucchini because it’s actually in the gourd family. Though it is pretty bitter as the name suggests, it’s really healthy and can be a great counterpoint to balance out meals that have more sweet elements to it.

Though bitter melon might look scary, it’s really easy to work with. All you have to do is cut it lengthwise and scoop out the seeds. Though the seeds are edible, it takes a little of the bitterness out of it if they are removed. Then, cut them up into half-moons or chop them into dice and saute them for just 5 minutes or a little less so they are partially cooked through. If you want to cut the cooking time down, even more, blanch them for 2-3 minutes first and then drain and cook them.

Again, dishes that are more inherently sweet will really benefit from the addition of bitter melon. Sweet vegetables like sweet potatoes or butternut squash work great with bitter melon. Also, bitter melon tastes amazing in stir-fries, especially if you put some brown sugar in your sauce.
