You Won’t Believe the Secret Ingredient to these Healthy Cupcakes!

When you think cupcakes, healthy is definitely not the first word that would come to your mind, until now! These cupcakes have an awesome healthy kick by using sweet potatoes in the batter. Sweet potatoes are obviously sweet, as the name says, so they fit right in with these spicy and delicious cupcakes. Leave them plain or top them with cream cheese icing and you have a dreamy dessert in no time!

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup melted unsalted butter
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 2 cups all-purpose flour
  • 2 cups cooked, mashed sweet potatoes

Recipe

  1. In a bowl, whisk together all the dry ingredients until they’re well combined.
  2. In a separate bowl, mix together all the rest of the ingredients except for the sweet potato puree.
  3. When those are combined well, gently mix in the dry ingredients into the wet, follow by the sweet potato puree.
  4. Fill cupcake tin with liner and bake at 350 F for 20-25 minutes until a toothpick comes out of the center clean.
  5. Once they’re cooked, pull them out of the oven and allow them to cool completely before icing with your favorite icing!
