Zucchini Pancakes are a Fun Twist on Lunch

Zucchini pancakes are a beloved dish, especially in some Eastern European and even Turkish homes. This dish is super yummy and comforting, so try it today!

Recipe

  1. Start by grating up 1 large zucchini with a box grater on top of a clean dishcloth. This will make the next step a lot easier.
  2. Once the zucchini has been grated, take it to the sink and squeeze out as much of the water as possible. You can also use cheesecloth for this process.
  3. After you’ve extracted as much water from the zucchini as possible, leave it to the side.
  4. In a medium-size bowl, crack in two eggs and beat them. Add the zucchini into the egg bowl, along with about 3 tablespoons worth of any type of onion, whether that’s red, green, or even chives. For extra color and flavor, you can add in half a diced red bell pepper.
  5. In a separate bowl, add in 1/4 teaspoon of baking powder, 1/4 teaspoon of garlic powder, 1/2 teaspoon of oregano, 1/2 teaspoon of salt, and 3/4 cup of all-purpose flour.
  6. Combine dry into the wet until a medium-thick batter forms, adding more flour if necessary.
  7. Heat up vegetable oil in a skillet, scoop out the pancakes and fry on each side for 3-4 minutes until golden brown.
  8. Dab with paper towels to remove excess oil and enjoy!
