- Start by grating up 1 large zucchini with a box grater on top of a clean dishcloth. This will make the next step a lot easier.
- Once the zucchini has been grated, take it to the sink and squeeze out as much of the water as possible. You can also use cheesecloth for this process.
- After you’ve extracted as much water from the zucchini as possible, leave it to the side.
- In a medium-size bowl, crack in two eggs and beat them. Add the zucchini into the egg bowl, along with about 3 tablespoons worth of any type of onion, whether that’s red, green, or even chives. For extra color and flavor, you can add in half a diced red bell pepper.
- In a separate bowl, add in 1/4 teaspoon of baking powder, 1/4 teaspoon of garlic powder, 1/2 teaspoon of oregano, 1/2 teaspoon of salt, and 3/4 cup of all-purpose flour.
- Combine dry into the wet until a medium-thick batter forms, adding more flour if necessary.
- Heat up vegetable oil in a skillet, scoop out the pancakes and fry on each side for 3-4 minutes until golden brown.
- Dab with paper towels to remove excess oil and enjoy!
