Replacing it with low-fat, plant-based varieties isn’t always the best alternative, because they don’t melt so well.

Cheese comes in many shapes and sizes, and the list of tasty varieties is pretty much endless. If you’re not sure which one to use when topping your casserole, Parmesan is your safest bet. Cheeses that melt well, such as shredded Swiss, cheddar, or mozzarella, are also an option, and mixing them up together is a great idea.
