How to Cook Chinese BBQ Pork Jerky

In China, pork jerky, known as bak kwa, has become a wildly popular snack during the Lunar New Year. Still, even if you don’t celebrate this occasion, pork jerky can prove to be a delicious snack that lights up any occasion. Here is your guide to cooking up a scrumptious Chinese BBQ Pork Jerky.

Ingredients:

  • 1 pound ground pork
  • 1 teaspoon salt
  • 1 teaspoon sesame oil
  • 1 teaspoon fish sauce
  • 1 tablespoon Shaoxing wine
  • 1/2 cup granulated sugar
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • 2 tablespoons honey

Instructions:

  1. Aside from the honey and water, combine the rest of the ingredients in the bowl of a stand mixer. Paddle the meat on medium for about 1 minute, until it appears to be a paste. You can also mix it by hand until you achieve the same result.
  2. Place the meat in a bowl and cover it with plastic wrap with holes poked in it. Allow to marinate in the fridge overnight.
  3. Preheat your oven to 250°F. In a baking tray, spread the meat until it forms a rectangular layer. Bake for 1 hour and 15 minutes.
  4. Remove from the oven and drain any liquid before transferring to a cutting board.
  5. Flip the jerky and return to the oven to bake the other side.
  6. Place the jerky on the cutting board and cut into squares.
  7. Make a glaze by whisking the honey and water together. Baste the glaze over the jerky and cook it in the oven for 3-4 minutes. Flip it over and cook the other side.
