This Easy Green Shakshuka Makes for a Hearty Breakfast

Are you looking for a satisfying breakfast to get your morning off to a good start while providing you with all the nutrients you need? Then, look no further than a wholesome green shakshuka. Here’s your guide to creating this scrumptious yet straightforward dish.

Ingredients:

  • Salt
  • Freshly ground black pepper
  • Olive oil
  • 1 avocado
  • 4 ounces feta
  • 8 large eggs
  • 2 cups salsa verde
  • 1 teaspoon garlic powder
  • 1 tablespoon coriander
  • 1 14-ounce can of artichokes

Instructions:

  1. Place a large pan on a medium-high heat. Drain the artichokes before adding them to the pan, along with the spinach, some olive oil and salt according to taste. Allow to cook for 1 minute before adding salsa verde and garlic powder.
  2. Once the pan starts to simmer, throw in the coriander and add the eggs, making sure to sprinkle salt on each one. Cook for around six to eight minutes, until the whites are almost set but the yolks remain runny.
  3. As the eggs cook, chop up the avocado and crumble the feta. Once the eggs are done, add the avocado and feta to the mix and cook for another minute. Your green shakshuka is now ready to serve.
