Ingredients:
- 1 pound boneless chicken breasts
- 1 pound penne
- 1 teaspoon Italian seasoning
- 4 tablespoons butter
- Salt
- Ground black pepper
- 2 cloves garlic
- 3 cups half and half
- 1 cup shredded Mozzarella
- 1/2 cup grated Parmesan
- 1/4 cup chopped parsley
- 4 tablespoons all-purpose flour
- 2 tablespoons extra virgin olive oil
Instructions:
- Cook the penne according to the package’s instructions in a large pot until al dente. Drain when complete.
- Preheat oven to 350°.
- Pour oil into a large skillet and boil over medium heat. Season both sides of the chicken with salt, pepper, and Italian seasoning. Put the chicken in the skillet and cook for about 8 minutes per side, or until cooked through. Allow chicken to cool for 5 minutes before slicing crosswise.
- Return the skillet to the medium heat and throw in butter. Add garlic and cook for 30 seconds. Pour flour and cook for 1 more minute before adding the half-and-half, whisking constantly. Sprinkle Parmesan into the skillet and allow to simmer until sauce thickens before adding more salt and pepper.
- Combine pasta, chicken, and alfredo sauce in a large bowl. Pour into a baking dish and bake for about 15 minutes, until cheese is melted. Garnish with parsley.
