Healthy and Tasty Date and Almond Cookies

Cookies are one of the most popular choices for a sweet treat. This recipe uses dates to add some delicious sweetness and a natural caramel flavor which means you don’t need to use as much sugar. Adding almonds brings a lovely crunchy texture and delicate flavor, so you end up with some super tasty cookies that are also healthy. This recipe makes 10 cookies, and they can be stored in an air-tight container for one week. 

Ingredients:

  • 2 cups plain flour
  • 1 teaspoon baking powder
  • ½ cup demerara sugar
  • ¼ cup salted butter
  • 1 cup of pitted dates
  • 1 cup of halved almonds
  • 2 eggs 
  • A pinch of sea salt

Instructions:

  1. Preheat your oven to 350℉.
  2. Sift the flour and the baking powder into a large mixing bowl. 
  3. Add the sugar and then add the butter and beat into the mixture. 
  4. Crack the eggs into the bowl and whisk into the mixture.
  5. Add the dates and the almonds and stir through. 
  6. Place some baking paper on an oven tray.
  7. Divide the mixture into 10 balls and place on the baking tray.
  8. Sprinkle some sea salt on top of each one and then place in the oven for 15 minutes. 
  9. Leave to cool on a wire rack for 10 minutes before enjoying.
