Amazingly Sweet Kabocha Pie Is This Week’s Best Recipe

If you are a fan of pies, you will go crazy over this kabocha pie. It’s so delicious, you won’t even believe it.

Ingredients

The ingredients for the filling are:
1 cup sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 medium kabocha squash
1 1/2 tablespoons brandy
2 eggs
10 oz cream cheese
3/4 teaspoon freshly ground nutmeg

For the crust you need:
3/4 teaspoon ground cinnamon
2 oz walnuts
3/4 teaspoon salt
1/2 cup light brown sugar
1/4 cup melted unsalted butter
3/4 cup graham cracker crumbs
grated zest of 1 lime
1/8 teaspoon ground ginger

To top off the kabocha pie you can also get ginger butterscotch sauce and creme fraiche.

Instructions

You can start by preparing the pie filling. You will need to steam the squash for an hour, half an hour on each side.

In the meantime, set the oven on 325 F degrees. Bake the walnuts for 15 minutes in the oven and lower the temperature to 300 F degrees.

In a blender mix several spoons of the brown sugar with the walnuts. Start blending until you get large pieces.

Use a bowl to mix the spices, graham cracker crumbs, nuts, the rest of the brown sugar, salt, and lime zest. Include the butter as well and mix everything together.

You can grab the pie plate and start applying the mixture with pressure to the bottom. Leave it in the oven for 12 minutes.

Once the squash cools down you can use the flesh to get the necessary 2 1/2 cups. Combine the spices, cream cheese, salt, sugar in a blender. Add the squash and blend again. Include the eggs, one at a time, and the brandy as well.

Cover the pie crust with the filling. Bake for an hour. Finish off with the toppings.
