Asparagus for Breakfast is a Yummy Treat!

Asparagus is a really luxurious item that can sometimes be pricey but is always worth it. The best time to get asparagus is when it’s on sale at your local grocery store, so keep your eyes peeled! This asparagus and egg dish is super satisfying, delicious, and is just the start to the day that you need!

Recipe

  1. Start preheating the oven to 425 F while you prepare the asparagus.
  2. Break one of the asparagus to see where you should trim the rest. Toss them in a bowl with olive oil, lemon juice, salt, and pepper, and lay them flat on a baking sheet with enough room so they don’t just steam.
  3. Bake the asparagus in the oven for 12-15 minutes until they are soft and have a little char on them.
  4. While the asparagus roasts, fry up a couple of eggs. If you want to be healthier, you can use a hard or soft boiled egg, or a poached egg in place of it.
  5. Plate the asparagus first and then lay the eggs either on top or to the side of them. Finish them with shaved parmesan cheese or pecorino romano and a bit of extra pepper and you have an amazing breakfast!
