Be Creative With This Chopped Salad with Mint and Grapes

Try this chopped salad as a side dish. The tasty recipe features cooked chicken, grape tomatoes, and red wine vinegar. You will do lots of chopping to get this recipe done, but this nutrient-rich and tasty salad makes it worth the stress.

Ingredients

  • 1 pint of grape tomatoes, halved
  • 1 heart of romaine, roughly chopped
  • 1 medium of seedless cucumber, peeled and sliced into 1/2-inch dice
  • 1 cup of corn kernels
  • 1 small red onion, sliced into 1/4-inch dice
  • 1/2 cup of halved green grapes
  • 1 cup of diced cooked chicken
  • 3 ounces of feta cheese, crumbled
  • 3 tablespoons of extra-virgin olive oil
  • 2 tablespoons of finely chopped basil
  • 2 tablespoons of finely chopped mint
  • 1 tablespoon of fresh lime juice Salt
  • 2 tablespoons of red wine vinegar
  • Freshly ground pepper

Method

  1. Chop the ingredients into small cubes and set aside.
  2. Get a large bowl for all the ingredients. Toss them together and season with the freshly ground pepper and salt. Serve immediately.
