Bring The Taste Of India Home With Lamb Biryani

Indian dishes are so tasty that we all keep going back to Indian restaurants. You don’t have to spend too much money now that you can make lamb biryani at home. This recipe is meant for 4 servings and is perfect for a Sunday lunch.

DUM MAST MAST! LETS TALK BIRYANI! Sipping away on my Yorkshire loose leaf tea, this morning I thoroughly enjoyed listening to my most favourite Qawalli singer, the legendary Nasrat Farah Ali Khan. In fact when the track 'dum mast qalander' came on I was yearning to cook a one pot rice dish of dum biryani! Not sure how I linked the two but I did! Originating from Persia; a fragrant rice dish brought to #India by the Mughal Empire. And oh do I love that period! There are so many varieties of biryani mastered by #Muslims across the globe from: Hyderabadi biryani, dum biryani, Sindhi biryani, an Afghani dumpakt biryani and more! All made with so many different kinds of flavours from lamb to mutton, chicken to beef and off course the classic Bengali fish biryani as well as the vegetable biryani. We really are all spoilt for choice! Today I attempted to make my own biryani using my own spices. I normally love the Laziza and Shan packets. As well as so many special ingredients, what makes biryani special to me is tender mutton meat, lots of green chillis and lots of fried onions in ghee to garnish. And the fragrant that leaves the kitchen smelling blissful is second to none…! After the passing of yesterday's red sun and dusty red sky, today we are left with a stunning sunshine glorifying London in all its beauty. Ingredients

The ingredient list includes:
1 pound boneless lamb
2 cloves minced garlic
1 3/4 teaspoons salt
1/2 cup plain yogurt
1/4 teaspoon turmeric
1/8 teaspoon cayenne
3 tablespoons butter
1/2 teaspoon ground cumin
1 onion
5 cloves
1/4 teaspoon ground cardamom
2 3/4 cups water
1 cinnamon stick
1/3 cup raisins
1/4 teaspoon freshly ground black pepper
1/3 cup chopped cashews
1 1/2 cups basmati rice

Instructions:

Before you start, cut the lamb and onion into small pieces.

Start cooking the lamb biryani by mixing the cayenne, black pepper, garlic, yogurt, cumin, 1/2 teaspoon salt in a bowl. You can add the lamb and mix again.

Cook the onions with butter for 3 minutes. When they become soft and light brown include the turmeric, rice, cardamom, cinnamon, cloves and 1 1/4 teaspoons salt. Cook them for 1 minute while also mixing.

Then, pour the bowl with lamb in the pan together with the raisins and water. Wait for the lamb biryani to start simmering.

Once it does, cover it and cook for 20 minutes. Place it on the side, wait for 5 minutes and add the cashews.
