Chocolate Chip Muffins

These muffins are so easy to make, and incredibly tasty. They’re perfect when you fancy a simple sweet treat that can be whipped up in no time. They’re also great for popping in packed lunches as they travel well. Once cooked, these can be stored in an airtight container for up to one week. 

Ingredients:

(Makes 12 muffins)

  • 2 cups plain flour
  • 1 teaspoon baking powder
  • ½ cup caster sugar
  • 2 tablespoons butter
  • 2 eggs
  • 1 cup chocolate chips

Instructions:

  1. Preheat oven to 340℉
  2. Place some muffin cases into a muffin tray
  3. Add the flour, baking powder, sugar, and butter to a large mixing bowl and mix until smooth
  4. Crack the eggs into the bowl and whisk them in
  5. Add the chocolate chips to the bowl and stir them through until evenly spread throughout 
  6. Use a large spoon to transfer some of the mixture into each muffin case, making sure that there is roughly the same amount in each case
  7. Place the muffin tray in the oven for 15-20 minutes, until the muffins have risen
  8. Check they’re cooked all the way through by sticking a knife in the ones in the center and seeing if it comes out clean, accounting for melted chocolate
  9. Once cooked, place the muffins on a cooling rack and leave for 10-15 minutes before enjoying
