Dorayaki, the Japanese Pancakes, Will Be Your Favorite Dessert This Fall

Dorayaki is a traditional Japanese dessert that’s made with two pancakes sandwiched with a sweet filling, often azuki red beans, custard, or chestnut cream. Ingredients

  • 2-3 eggs, depending on the size 
  • 2/3 cup sugar
  • 1/2 teaspoon baking soda
  • 3 tablespoons water or milk
  • 1 cup all-purpose flour
  • vegetable oil
  • 3/4 pound sweet azuki bean paste

Instructions

  1. Whisk the eggs and sugar together in a bowl.
  2. Dissolve baking soda in water (or milk), then add to the egg mixture.
  3. Gradually add flour and mix until you form a smooth batter.
  4. Heat a skillet and oil it lightly with vegetable oil.
  5. Make small pancakes, no bigger than 3-4 inches in diameter. 
  6. When bubbles appear on the surface, turn the pancakes over to bake the other side.
  7. When the pancakes are cool, spread azuki bean paste on half of them, then use the other halves to make sandwiches.
  8. Enjoy with your favorite tea!
