Easy, Cheesy Sausage and Egg Bake

Although this bake is perfect for breakfast, you can try it for any meal of the day because it can be made up to 12 hours in advance.

Combining the delicious flavors of pork sausage, mushrooms, tomatoes, eggs, and cheese, this bake is luckily also healthy, provided you drain off as much of the fat from the sausage as possible.

Ingredients

1 lb bulk pork sausage, cooked and thoroughly drained

4 oz sliced fresh mushrooms

8 green onions, sliced

2 medium tomatoes, seeded and chopped

2 cups mozzarella cheese, shredded

1 ¼ cups Original Bisquick™ mix

1 cup milk

1 ½ teaspoons salt

½ teaspoon dried oregano

½ teaspoon freshly ground black pepper

12 eggs

Method

Heat oven to 350° Fahrenheit. Grease a 13 x 9 x 2-inch rectangular baking dish. Place layers of sausage, mushrooms, onions, tomatoes, and cheese in the dish. Stir together the rest of the ingredients and pour over the cheese.

Bake uncovered for 30 to 35 minutes or until golden brown and the mixture has set.

This bake is delicious both hot and cold. Simply cut into squares and serve alone, or with wilted spinach.
