Easy Chicken Fajitas

Chicken Fajitas makes for the perfect midweek family meal, as it’s quick to prepare and everyone can create their own. High in protein and full of veg, this tasty meal is super healthy. People of all ages will love the spices and warmth this simple yet delicious meal brings. 

Ingredients (Serves 4)

  • 4 chicken breasts
  • 2 bell peppers, any color
  • 1 large zucchini
  • 1 large red onion
  • 4 cloves garlic
  • 1 tablespoon dried cumin
  • 1 tablespoon dried smoked paprika
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • ½ cup salsa 
  • 4 tortilla wraps
  • ½ cup shredded cheese 

Instructions

  1. Chop the peppers, zucchini, onion, and garlic.
  2. Chop the chicken breasts into smaller chunks.
  3. In a large pan heat some oil and add the chicken.
  4. Fry for 5 minutes and then add the onion, pepper, zucchini, and all the dried spices, herbs, and seasoning.
  5. After about 10 minutes, add the garlic.
  6. Fry for another 5 minutes, and then add the salsa.
  7. Stir throughout and then leave to simmer for about 10 minutes, stirring occasionally.
  8. Pan-fry each wrap for a few minutes, and then place a quarter of the fajita mix into the wrap.
  9. Sprinkle some cheese over, and add sour cream and guacamole if desired.
