Pink cakes are one of the most popular and delicious Dutch desserts. You can prepare them with the simple recipe below.
Ingredients
For the cakes, you need:
1/4 teaspoon salt
1/4 cup almond flour
3/4 cup granulated sugar
3 eggs
1 cup all-purpose flour
2 teaspoons lemon zest
1/2 teaspoon vanilla extract
2/3 cup softened unsalted butter
The ingredients for the icing are:
1 teaspoon lemon juice
1/2 cup raspberries
1- 1 1/4 cups icing sugar
Get 12 fresh raspberries for decoration.
Instructions
Set the oven to 350 F degrees and prepare a muffin pan for 12 muffins.
Mix the almond flour, salt, flour, and lemon zest in a bowl. Get an electric mixer to beat the butter, then include the granulated sugar. Keep on beating for 4 more minutes.
Start adding the eggs, one by one, while also beating. Finish off with the vanilla.
Lower the speed of the mixer, and add the mix of flours. Pour the batter into the muffin pan, it should reach one half of the height.
Place the pan in the oven and bake for 20 to 22 minutes. When the time is up, take it out and wait for 5 minutes before you cover them with icing.
Use a fine mesh sieve and place the raspberries to get the juice out. Mix 2 tablespoons of the juice with the icing sugar and lemon juice. It should look like melted chocolate. Cover the pink cakes with the icing and add raspberries on top.
