Green Tea Fans Won’t Be Able to Resist These Tasty Muffins

Are you a huge fan of muffins who also enjoys drinking a warm cup of green tea every once in a while? If you’ve ever thought of mixing these two tasty treats into one, this recipe for delicious matcha muffins does just that!

Teen food blogger Lenny shared this fun idea with 100,000 followers on her Instagram page vegamelon and we had to try it right away. Matcha comes with a long list of health benefits, so why not consume it in a muffin form?

Ingredients:

  • 1-1/2 cup whole wheat flour or sub with GF flour
  • 1/3 cup sugar / dry sweetener
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp matcha powder
  • 1/4 cup nut/seed butter
  • 1/4 cup applesauce
  • 1 tsp apple cider vinegar
  • 3/4 cup plant-based milk

Instructions:

  1. Preheat oven to 350°F/180°C.
  2. Whisk together flour, sugar, baking powder, baking soda, and matcha powder in a large bowl. In a separate bowl, combine the remaining (wet) ingredients.
  3. Pour the dry mixture into the wet mixture. Whisk batter just until combined, making sure not to overmix.
  4. Pour/scoop the batter into a lined muffin tin up to 3/4 full.
  5. Bake for 20-25 minutes until golden, or when an inserted toothpick comes out clean. Enjoy!
