Gremolata is a Healthier Topping for Any Dish

Gremolata is a popular Italian topping that is really your best go-to topping for any dish. It only has three ingredients and will bring so much flavor and brightness that you can put it on anything and you’ll feel like you’re healthy.

Ingredients

The three ingredients involved for this condiment is lemon rind, fresh raw garlic, and parsley. The reason why you want to use the freshest garlic you can because if it starts getting old, it gets more pungent and harder to eat raw.

Instructions

  1. Start by chopping up one small bunch of parsley as finely as you want. If you want a more rustic look and taste, don’t chop it so finely. If you want it for a refined dish, chop it finely.
  2. Put the parsley in a bowl and grate into it the rind of 2 lemons using a microplane. If you can get organic lemons that would be ideal since they use no pesticides.
  3. Use the microplane again to grate into the bowl 1 clove of garlic and mix everything together.
  4. This will make about 1/3 cup of gremolata and will stay in the fridge for up to one week.
  5. Serve on fish, potatoes, or the classic Italian Milanese braised veal shank.
