Ingredients:

  • 250g dried pasta (such as penne or fusilli)
  • 200g chorizo sausage, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tin of diced tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt
  • Black pepper
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet or frying pan, heat some olive oil over medium heat. Add the sliced chorizo and cook until browned and slightly crispy, about 5 minutes. Remove the chorizo from the pan and set aside.
  3. In the same skillet, add the chopped onion and diced bell pepper. Cook until softened, about 5 minutes. Add the minced garlic to the skillet and cook for another minute, until fragrant.
  4. Return the cooked chorizo to the skillet. Pour in the diced tomatoes, along with their juices. Stir in the dried oregano and smoked paprika. Season with salt and pepper to taste.
  5. Simmer the sauce for 10-15 minutes, allowing the flavors to meld together and the sauce to thicken slightly. Add the cooked pasta to the skillet and toss until it is well coated in the sauce.
  6. Serve your pasta hot, garnished with chopped fresh parsley and grated Parmesan cheese, if desired.
